I just made very tasty pies with blueberries, the pies turn out tender, they just melt in your mouth. Blueberries can be replaced with another berry, I also like cherries, if I don’t have fresh ones, I take canned ones. If you have a lot of pies, you can divide all the proportions into 2 parts. Or freeze some of the finished pies; my kids take them to school later, the pies taste like the freshest.
We will need it for the test:
1 kg.
good flour, 130 gr.
sugar 1 tbsp.
spoon of salt 42 gr.
new yeast (or 16 g dry) 500 ml.
a little warm milk, 150 gr.
soft plums butter, 2 eggs
From this amount of dough I got 28 pies.
For the inside: Berry to taste, I have blueberries

spoons of flour 1.5 tbsp. tablespoons potato starch
And 1 egg for lubrication
Sift flour into a large bowl. Dissolve yeast in milk, add sugar, stir. Add eggs and beat well with a mixer. Pour this liquid into the flour, add salt and add soft butter, knead into a soft, elastic dough, cover and leave it in a warm space until its volume doubles, this may take 2 hours.
Separate the egg from the yolk, we will need the white to grease the edges of the pies, and add a little milk and a pinch of salt and sugar to the yolk and beat well.
Mix sugar with flour and starch.
When the dough has risen, knead it slightly and divide it

Brush the edges with egg white
and it’s best to seal the edges with a pigtail (the pigtail is almost invisible later, but the pies don’t unravel).
Place the pies on a baking sheet lined with baking paper, brush with yolk and place in a warm space for 20 minutes.
Preheat the oven at 200° (with fan at 170°) and bake the pies for 20 minutes, until golden brown. Cool on a wire rack.

Let's prepare all the ingredients for making yeast pies with blueberries in the oven. Melt the butter in the microwave and let it cool to room temperature. Sift the wheat flour twice through a fine sieve.
Dissolve sweet sand in warm kefir (not higher than 40 degrees) and add dry yeast. Mix and leave for 15 minutes until a foamy “cap” appears on the surface.
After breaking the chicken eggs into the watery base, add the prepared butter and a tablespoon of vegetable oil. Mix thoroughly. At this step, you can also add vanilla sugar (1 tsp) or vanillin on the tip of a knife.
Add the wheat flour little by little, mixing well each time. Its quantity will depend on the gluten, therefore it may differ little from what is indicated in the list. Taking into account that everyone's flour is different, we focus on the mixture.
Knead an elastic dough that does not stick to your hands. Round it and place it in a deep bowl, greased with a thin layer of vegetable oil. Cover the bowl with a towel and leave in a warm, draft-free place for 1.5 hours.
Over time, the dough will noticeably grow and increase in size, becoming softer and more flexible.
Punch it down and divide it into 10 equal parts, approximately 85-90 grams each; for accuracy it is better to use a kitchen scale. Form balls from the dough, cover them with a towel and leave them on the desktop for 5-10 minutes.
Let's take care of the inside: fill the blueberries with cool water and rinse them carefully, removing various debris and spoiled berries. Then we put the excellent specimens in a sieve to drain off excess liquid.
Roll out the “rested” koloboks into a flat cake. Place a tablespoon of berries and sweet sand in the center. The amount of sugar can be adjusted independently.
We pinch the edges so that the inside is inside, forming a beautiful pie. In this way we will prepare all the preparations.
Place the pies in a heat-resistant form at a small distance from each other, seam side down. Cover with a towel and leave for 20 minutes, and in the meantime preheat the oven to 180 degrees.
Brush the surface of the pies with beaten egg and bake.
The approximate time for making pies from yeast dough with blueberries in the oven is 30-35 minutes, depending on the personal properties of your technique. The baked goods must have a golden crust.
Because some of the blueberry juice will leak out during baking in any case, the finished pies must be immediately transferred to an iron rack so that they do not stick to the caramel formed on the baking sheet/mold.

Ingredients
• 1 spoon with a mountain of starch.

2. Roll out the dough to a thickness of three mm. We cut into 10-15 cm squares, depending on the desired size of the pies.

6. Lubricate with the egg that remains after processing the edges.

Recipe 3: Fried blueberry pies (fried)
A variant of a frisky and light dough for fried blueberry pies. It doesn’t ask for a warm rest, and you can enjoy the fragrant products within half an hour.
Ingredients
• 550 grams of flour;
Blueberries and sugar for the inside. You can take blueberry jam or thick jam.
Manufacturing
1. Add prescription soda to a warm drink.
2. Beat the egg with salt and combine with the previous mixture.
3. Add flour and butter and the dough is ready. Knead thoroughly, put it in a bag and keep it on the table for a quarter of an hour.
4. For now, you can sort out the berries and add sugar. Or mash the jam and pour in jam.
5. We make pies, but do not roll out the dough thickly.
6. Before heating the product, lightly flatten it.
7. Fry on both sides until golden brown. Cool before serving.
Recipe 4: Yeast pies with blueberries on kefir
Another version of kefir dough for blueberry pies, but this time the recipe contains dry yeast. A regular small sachet is used.
Ingredients
• 70 grams of butter;
• 60 grams of sugar;
• sugar in the filling.

1. Dissolve a small packet of yeast in the recipe water, let it sit for a while so that the grains swell.
2. Add sugar, throw in eggs, leave one yolk for greasing the pies. Stir.
3. Add an incomplete teaspoon of salt and pour in the drink.
4. Melt the butter and also pour it into the future dough.
5. Mix everything together with flour, cover and let rise twice. After the first rise, the mass must be slightly kneaded.
6. Combine blueberries with sugar. There is no need to mash the berries.
7. Make the pies, let them rise on the sheet and put them in the oven. Before baking, grease the top with the previously set aside yolk. For better fluidity, add a little milk or water to it.
Recipe 5: Puff pastries with blueberries and cottage cheese
A wonderful interior option for puff pastry pies. It is important not to use watery and weak cottage cheese; it must have medium thickness, but not be dry.
Ingredients
• an incomplete glass of blueberries;
• 300 g of cottage cheese;
• 120 g sugar;
• 1 packet of vanilla;
• 2 tablespoons butter.

1. Grind the cottage cheese through a sieve, or beat it with a food processor.
2. Add sugar and melted butter, add vanilla and mix everything again.
3. Add the dried blueberries at the very end, stir gently and try not to mash the berries.
4. Unroll the dough layer on a flour-powdered table and roll it with a rolling pin. Divide into squares with sides 10 cm.
5. Place the filling on one-half of the pies.
6. Grease the empty squares with egg, turn them over and cover the dough with the inside, pinch the edges.

To make these pies, the dough is prepared with yeast using water. It is excellent because it is suitable for various entrails: sweet and salty. You can knead, divide into several parts and prepare a number of types of pies.
Ingredients
• 1.5 tablespoons of yeast;
• 0.5 cups sour cream;
• 0.5 cups of any kind of butter (melted margarine can be used);

Manufacturing
1. Heat the water. Make it a little warmer than body temperature. Start the yeast, sugar, throw in a glass of flour. Stir and let sit for fifteen minutes to activate the yeast.
2. Add salt, add any oil and add flour. Knead soft dough. Let's rest. It is better to approach the mass twice and only after that start making pies.
3. Divide the finished dough into pieces, roll out the flatbreads and lay out the blueberries, sprinkle with sugar.
4. We pinch the edges using the usual method, forming a traditional closed pie.
5. Deep fry in a frying pan. Remove excess oil from the finished pies with cardboard towels.
Recipe 7: Blueberry and Apple Pies
A variant of fragrant pies that are made from any kind of yeast dough. You can use a store-bought product or prepare it according to the recipes above.
Ingredients
• 1 cup blueberries;
• 150 grams of sugar;
• 30 grams of butter.

1. Cut the apples into pieces. They should be slightly larger than blueberries.
2. Heat the oil in a frying pan, add the apples, fry a little, and evaporate the juice. Let's turn up the heat. Let cool.

5. We make pies of any size and shape. By the way, with this interior you can prepare semi-closed products with a flirty looking filling.

Blueberry Pies - Helpful Tips and Tricks
• Instead of the freshest insides of blueberries, jams, preserves, and marmalade are often used. But such products are very sweet, and you can’t put too much into the product. The solution is to dilute it with fruit. Apples, pears, cherries, and petioles are perfect for this purpose. Blueberries mix well with pumpkin.
• The pie will shine with a wonderful gloss if before baking it is brushed with a mixture of yolk, a spoonful of milk and a pinch of sugar. Everything needs to be thoroughly whisked. For an even application it is better to use a brush.
• If the dough has dried out on top and a dry crust has formed, there is no need to rush to make something out of it. It is better to sprinkle the pieces with ordinary water, you can use a spray bottle, cover with a towel and let the crust disperse.
• Dough with butter tastes better, but with vegetable fat it does not go stale longer and comes out softer. In the standard, you can mix both types.
• As a matter of principle, do not put a lot of sugar in the dough. Such baked goods will be heavy, quickly burn and will not be baked inside. The standard contains no more than 5 tablespoons of sugar per kilogram of dough. The inside will give extra sweetness.
Recipe: Blueberry Pies – Made with ready-made dough and fresh berries
In theory, such pies can be made from frozen berries, but they just need to be carefully defrosted, otherwise the inside will be liquid and the pies will all leak. But I’ll tell you how I made pies with the freshest blueberries. My grandmother used to bake this way, so I wanted to remember the taste of my youth. This is what happened))
Naturally, if you want to bake more pies, this quantity of goods will not be enough, but this time I didn’t know that it would turn out delicious. and I didn’t take much so as not to spoil it))
I bought a pack of yeast dough “balls” (there are 12 pieces in a pack, but I didn’t have enough inside for everything). I defrosted them and gave them the opportunity to stand and grow a little in size. And then she began to roll out the circles until they were flat.
The filling must be prepared in advance. Dump the blueberries into a deep plate, wash them, and then sprinkle with sweet sand. The more sugar, the sweeter the pies will be. You should not skimp on sugar, otherwise you can get a sour filling.
After the berries are mixed with sand, you need to add flour to give the insides some viscosity.
Next we make the preparation: break the egg into two cups (white and yolk separately), also pour flour and sweet sand onto a plate.
Grease a baking tray with vegetable oil.
Next we begin the sculpting process. Place the filling on the rolled out circle in the center, sprinkle sugar and flour on top of the berries, and grease the naked dough around it with egg white. After this, we pinch the pie together as best we can. I’m not a sculpting master, so they turned out a little clumsy, but tasty))
