The interior for liver pancakes can be a good candidate for regular pancakes with meat. This option is quite satisfying, has an unusual taste and is very useful for both adults and children.

How to cook liver: general rules and tips

You can prepare the filling for pancakes from the liver of chicken, pig, or cattle. It is important that the product is not very pale and does not have a nasty aroma - this means that it is not very fresh.

The interior of a chilled liver comes out juicier than that of a frozen one. But if necessary, this problem can be solved by adding onions.

Beef and pork livers have a rather specific bitter taste. In order to get rid of it, the product must be soaked in clean water or milk for 1 hour before production.

Primary preparation involves removing the bile ducts and film. After this, the product is cut into small pieces and boiled.

  • Turkey or beef liver is boiled for 40 minutes completely or 20 minutes if it is cut into pieces.
  • Whole pork - cook for 50 minutes, and sliced - 35 minutes.

1. Traditional recipe

To make it, take:

  • 300 g of any kind of liver;
  • 1 onion;
  • 3 tbsp. l. olive or sunflower oil;
  • salt and pepper to taste.

The usual interior for pancakes from pork, chicken or beef liver is prepared as follows. The liver is washed, cleaned and cut into pieces. The onion is also peeled and chopped.

In a large frying pan, first heat the oil and fry the onions. After it is covered with a golden crust, put the liver in a frying pan and fry it until cooked. This usually takes about 10 minutes.

After this, the frying is cooled to room temperature and scrolled through a meat grinder or passed through a food processor. If you want the texture of the inside to be very tender, grind it through a meat grinder 2-3 times.

Next, the filling needs to be well salted, peppered and mixed. The finished pancakes are greased with the resulting mixture, folded in a comfortable way and fried in butter on both sides.

2. Step-by-step recipe for liver entrails with carrots

  • 500 g liver;
  • 2 large onions;
  • 2 huge carrots;
  • 5 tbsp. l. kefir or low-fat sour cream;
  • salt and pepper to taste;
  • a small bunch of greenery;
  • oil for frying.

Peel the onions and cut into small cubes, grate the carrots on a large grater or finely chop (depending on preference). Mix onions and carrots and fry them in vegetable oil until half cooked. Then add the cleaned, washed, chopped liver to the pan. Fry all ingredients until fully cooked.

After this, the filling must be passed through a meat grinder or crushed in a blender or food processor. You can also add a little kefir or sour cream to it so that it is not too dry. Don’t forget to season the finished mixture well with salt and pepper, and also garnish with herbs.

Fundamentally: it is best to wrap pancakes with liver entrails in rolls, envelopes or tubes.

3. Interior for liver and rice pancakes

To make it you will need:

  • 300 g liver;
  • 1 large onion;
  • 1 medium carrot;
  • 150 g long grain rice;
  • 2 tbsp. l. medium fat sour cream;
  • salt and pepper to taste;
  • oil for frying.

Let the fluffy rice cook, as for a side dish. Peel the onion and cut into cubes, grate the carrots, then mix the ingredients and fry them in vegetable oil until half cooked. Then add the soaked and cooked liver to the frying pan, previously cut into small pieces, and fry until done.

Place the filling in a blender bowl, add sour cream and blend until smooth. Add spices and a little salt to taste. Add the prepared washed rice to the resulting mass and mix everything thoroughly.

The inside is ready. For color, add a lot of fresh, finely chopped herbs; finely chopped walnuts or other nuts will add piquancy.

  • 400 g beef liver (other types can also be used);
  • 2 chicken eggs;
  • 2 onions;
  • 2 carrots;
  • salt and pepper to taste;
  • oil for frying.

Place chicken eggs in water and boil for 10 minutes until hard-boiled. Peel the onion and cut it into cubes. Place in a frying pan and start frying. Peel the carrots and grate them. Add it to the onion after a few minutes. After some more time, put the pieces of liver into the frying pan and fry all the ingredients until fully cooked.

Peel the boiled eggs. Combine all the ingredients together and pass through a meat grinder once. Or grind the liver mass with a blender, and finely chop the eggs separately and crumble them into the resulting mixture. Don’t forget to season the finished mixture with salt and pepper.

5. Interior for chicken liver pancakes with potatoes and onions

To make this dish, you can use any kind of liver, but chicken liver is better. For this you will need to take:

  • 1 carrot (optional);
  • 4 medium sized potatoes;
  • milk and butter to taste;
  • a small bunch of greenery;
  • salt and pepper to taste;
  • oil for frying.

Peel the potatoes, put them in water and boil them, and then prepare a soft puree from them, adding the required amount of milk, butter, and salt. The insides for chicken liver pancakes are prepared as follows. As in previous recipes, first fry the onions and carrots, then add the liver and fry until very cooked. Pass the resulting mixture through a meat grinder or blender, and then mix with mashed potatoes. Liver pancakes - a unique snack

Liver pancakes are representatives of Slavic cuisine, which are a delicious hearty snack with a calorie content of 127 kcal without entrails. You will learn how to cook pancakes from the liver so that it turns out to be an unusually tasty and wonderful dish from a selection of favorite recipes, and to ensure that the result is impeccable, we offer a step-by-step diagram of the cooking process with beautiful photos.

Traditional liver pancakes

Usually this dish is prepared from chicken liver, because it has a mild taste, and liver pancakes from it turn out to be very tender.

To make them you need to take the following products:

  • 700 -800 g chicken liver;
  • 4 medium sized onions;
  • 6 eggs;
  • 100 ml cream;
  • 25 g semolina;
  • 30 g starch;
  • 50 g flour;
  • 1 teaspoon each of salt and ground aromatic pepper;
  • 150 g sunflower oil.

Sequential description of the cooking process:

  1. Grind the liver and onion through a meat grinder. Shake the cream with the eggs and pour into the bowl with the minced meat. We combine the bulk products and add them there. Mix all ingredients until smooth. The dough is ready.
  2. Frying them is easy, but it takes some getting used to. To make it easier to roll the liver pancakes, take a small-diameter dish. Heat the frying pan and lightly grease it with oil (you can do this with a brush). We distribute the dough (about half a ladle) over its entire bottom. Fry the pancake on both sides and place it on a flat surface to cool.
