Most often I use easy, tried and tested recipes. For example, I make muffins with mayonnaise. Yes, yes, it turns out that mayonnaise makes wonderful baked goods: it adds fluffiness and a special creamy taste to the products. I offer 2 options for cupcakes, both are very successful, and making them takes very little time.

Recipe for chocolate cupcakes with mayonnaise

Ingredients

Flour 2 stacks
Sugar 1 stack
Testicle 3 pcs.
Mayonnaise 1 stack
Baking powder 1 tsp.
Cocoa 50 g
Vanilla sugar 4 g

Manufacturing sequence

  1. Pour a glass of sugar into a bowl and beat in 3 eggs. Beat with a mixer for 5 minutes.
  2. Add a glass of mayonnaise and continue whisking.
  3. In a separate bowl, mix 2 cups of flour, a teaspoon of baking powder, 50 g of cocoa, 4 g of vanilla sugar.
  4. Add the dry mixture evenly to the total mass, continuing to beat. A homogeneous elastic semi-liquid dough comes out.
  5. Fill the muffin tins, not pouring the batter all the way to the edge. If the molds are iron, then you need to grease them with oil; if they are silicone or paper, you don’t need anything.
  6. Preheat the oven to 180°, bake our cupcakes for 25-30 minutes.

How to decorate chocolate cupcakes

  • Naturally, the cupcakes turn out delicious and wonderful. But you can make them even more spectacular and fragrant if you sprinkle them with sweet powder.
  • Or prepare a completely light chocolate glaze: mix 70 g of sweet powder and cocoa, add 30 g of potato starch and stir it all in 70 g of very cool boiled water. Pour glaze over the cupcakes and add a little condensed milk on top. The gourmands will be in ecstasy.

Recipe for cupcakes with milk and mayonnaise

Ingredients

Sugar 400 g
Flour 600 g
Testicle 5 pieces.

Dried apricots 90 g
Raisin 90 g
Vanilla sugar 10 g
Soda 1 tsp.
Vinegar 1 tbsp. l.
Nuts 1 stack
Salt 1 g
Milk 220 ml

Manufacturing sequence

  1. Beat 5 eggs with a mixer.
  2. Add 400 g of sugar, continuing to beat.
  3. Pour 220 ml of milk and whisk further. Add 2 full tablespoons of mayonnaise.
  4. Now add a teaspoon of soda, a tablespoon of vinegar and 10 g of vanilla sugar. Whisk.
  5. Sift 600 g of flour and add it evenly to the mixture, continuing to beat. Don't forget to add 1 g of salt.
  6. Finely chop the dried apricots, steam the raisins (approximately 90 g each), put them in the dough and mix gently with a spoon. The dough comes out liquid.
  7. Pour the dough into the molds, not to the top.
  8. Sprinkle the top of any cupcake with crushed nuts, about a glass of them will come in handy.
  9. The oven must be preheated to 180°. Bake the cupcakes for 25 minutes.

One day I came across a recipe for muffins that did not contain margarine and I thought: “Shouldn’t I make them?” I just had all the necessary ingredients in the house, and I started baking.

The “Frisky” cupcakes justified their name, because... there was no need to heat and cool the margarine, and this significantly reduces the production time of the product.

The cupcakes turn out delicious, with a specific crust. We are all accustomed to the fact that if we hear cupcakes, we associate them with their tenderness. These muffins also have a delicate structure, but when you bite into it, the crust comes out slightly crispy, which is very interesting.

The taste quality of the product can be judged by how my husband reacts to the smell of the baked goods being prepared. I usually bake muffins and cookies in the morning (before work) because... I get up at 4 o’clock in the morning, which still gives me enough time to prepare a fragrant breakfast.

So, as soon as the first batch was baked and placed on a plate, I heard Slavik asking me to prepare tea for him and to bring along with the tea something that smells so delicious.

Let's start making these amazing cupcakes together.

Initial composition of goods.

As we see, our baked goods have the usual composition: sugar, flour, mayonnaise, egg, soda, vanillin.

1. Prepare food with photos.

We take the eggs out of the refrigerator and rinse them in water to remove contamination. Then we break them into a bowl and beat lightly.

Add a glass of sugar to the beaten eggs and stir for 30 seconds. There is no need to beat too much, because... there is no particular need for this.

Lightly beat sugar and eggs, add mayonnaise to them. In my jar (puck) the weight of mayonnaise is 220 g. I also had to add 30 grams from another jar to get the weight to 250 grams. Mix the mixture until the lumps disappear.

The mayonnaise is mixed with sugar and eggs into a homogeneous mass, now let's add flour.

I add flour in 2 tbsp portions. spoons. I feel so comfortable stirring the dough - no lumps are created.

I sift the flour through a tiny strainer, tapping the edge with my hand. This method is simple and quick - I like it.

On the 3rd strainer, i.e. at 6 tbsp. Add vanillin to a spoon. It seems to me that at this particular moment the vanillin will disperse perfectly in the dough. And then we continue kneading the dough until all the flour is gone.

As a result, we should get a flowing dough, which should resemble thick sour cream.

You can add crushed nuts, raisins or cocoa to this dough. Just pay attention to the amount of flour. It may need to be added to 2 tbsp. Less spoons.

I constantly say that flour must be added in portions, evenly.

Now let's move on to the final step - preparing the soda.

Baking soda should be added to the dough last so as not to disturb the structure of the dough by frequent mixing.

We take a container into which we pour 0.5 teaspoons of soda. Then we will need 1 teaspoon of 9% vinegar, which we pour into the soda. During extinguishing, foam rises, so choose a container that is not very small.

The soda has been extinguished and now you can add it to the dough. Mix everything lightly and leave to rest for 5 minutes.

Soda promotes the formation of bubbles in the dough, which causes holes to form inside the product during baking.

The dough has rested. Prepare the muffin tins and fill each with batter to two-thirds of its height. My molds are small, so it takes 1.5 tbsp of dough. spoon.

If you have silicone molds like mine, then you don’t have to grease them with oil - the dough won’t stick.

If the molds are steel, then they must be greased with margarine or sunflower oil.

Place the filled forms in a preheated oven and bake for 20 minutes at 220 degrees.

Tip: This baking temperature is suitable for those whose electricity network is strictly observed at 220-240 degrees. If the voltage is lower than normal or higher, then you will need to experiment with the temperature. Either add it or, on the contrary, subtract it.

20 minutes have passed, but you may have more (remember the temperature), but as soon as you notice that the cupcakes have begun to brown, pierce them with a toothpick or a match without sulfur. If, when you remove the stick from the dough, it remains dry, it means that the baked goods are ready and it’s time to take it out of the oven.

I usually lay out the finished baked goods on a wooden board, which I cover with a napkin and let them cool. Once the cupcakes have cooled, it’s time to place them in a bowl and serve.

Almost everyone, after hearing that cake dough can be kneaded with mayonnaise, will probably be at a loss. After all, this is a sweet dessert, what is the sauce for? I thought so myself at first, but I dared to experiment. And I didn’t regret it. It turns out that baked goods made with mayonnaise turn out very tender, soft and juicy.

In addition, it is prepared quickly, simply and with the smallest range of simple ingredients - even those who occasionally cook in their own kitchen can cope with the preparation of such baked goods without any problems. If you don’t believe me, try it yourself – I’ll provide the recipe below. And don’t worry, the taste of mayonnaise is not completely noticeable in baked goods.

The process of making a cupcake with mayonnaise is very easy, it just consists of kneading the dough, baking the cake and decorating it.

To make it as clear as possible how to prepare a cupcake with mayonnaise, I have written a step-by-step recipe with photos.

1. Because the dough is kneaded very quickly, first turn on the oven, setting the temperature to 180 degrees so that it has time to warm up.

2. Wash the raisins and dry them with a cardboard towel.

3. Step 3 Ingredients:

  • eggs – 3 pcs;
  • sugar – 200 g.

Mix the eggs with sugar and beat them with a mixer at the highest speed. The mass should increase slightly in volume. The whipping process will take about 5 minutes. The airiness of the baked goods will depend on the whipping properties.

4. Step 4 Ingredients:

  • mayonnaise – 250 g.

Add mayonnaise to the whipped mixture. Beat the mixture with a mixer, adjusting it to a slow speed.

5. Step 5 Ingredients:

  • flour – 200-300 g;
  • baking powder – 1 tsp.

Mix 200 g of flour with baking powder. Add flour evenly to the beaten egg-mayonnaise mixture. We continue to beat the mixture with a mixer at the lowest speed. Stop when the dough becomes thick in the mixture and homogeneous in composition.

6. Step 6 Ingredients:

Add half a tablespoon of flour to the washed and dried raisins and mix. Add it to the dough.

7. My molds are iron. I don't grease them, but put them in paper molds. I fill the molds 2/3 full, since the cupcakes will increase slightly in volume during baking. I filled out 10 pieces. After filling, send the form to a preheated oven.

8. After it’s ready, after about 40-50 minutes, turn off the oven, but we don’t take the baked goods out of it. Cupcakes do not react well to sudden temperature changes - they may settle. After the oven has cooled, take out the baked goods and carefully remove them from the molds.

9. Decorate the finished cupcakes with sweet powder.

How to perfectly decorate and serve a cupcake

Cupcakes look wonderful and appetizing, the top of which is filled with watery chocolate, fondant, chocolate or snow-white glaze, and sweet syrup.

If the pastry is created for a festive table, then you can decorate it with the freshest strawberries or other berries and fruits, including almonds.

Cream and mastic are also suitable for decoration. From mastic you can sculpt beautiful flowers or noteworthy figures aimed at a specific theme.

Tips and tricks for making

  1. If you don’t have baking powder on hand, you can add baking soda to the dough, in the same proportion - one teaspoon. It is better to add soda before adding flour. Baking powder is poured directly into the flour.
  2. Mayonnaise is placed in the dough at room temperature. If it is cool, it will not come together, but remain in pieces.
  3. The mayonnaise cupcake recipe is suitable for baking small cupcakes, one huge one in a round silicone mold or in square (rectangular) glass molds. You can either grease the molds with butter or place parchment paper on the bottom. The iron mold should be greased with oil and sprinkled with flour.
