Hello, dear lovers of delicious homemade food. Bean cutlets are a vegetarian dish. And if you replace the egg with a spoonful of starch, then it’s perfect for Lent. During fasting, it is very important to eat protein foods of plant origin. That’s why I’m currently offering a recipe for bean cutlets. Bean cutlets turn out very tender and tasty. Serve them with stewed vegetables and ketchup or tomato sauce.

Ingredients for Bean Cutlets:

  • Canned beans (or dry beans, previously boiled until tender) - 2 cups.
  • Snow-white onions – 2 pcs.
  • Chicken egg - 1 piece
  • Salt (or to taste) - 1 tsp.
  • Allspice (or to taste) - 1 tsp.
  • Vegetable oil (for frying) - 4 tbsp. l.
  • Breadcrumbs / Breading (for breading) - 4 tbsp. l.

Recipe for “Bean cutlets”:

Soak dry reddish or snow-white beans in cool water overnight (that is, in the dark) .
Boil the beans in water without salt until tender and cool. Cook the beans for 35-40 minutes. You can use canned beans, which should be drained and washed with cool water.
Finely chop the onion. Fry the onion in a mixture of vegetable and ghee until golden brown. Those who are fasting, do not use ghee.

We pass the beans through a meat grinder.

Add salt, pepper, lightly beaten egg, and fried onion to the minced beans.

Sprinkle the cutting surface with breadcrumbs.

To ensure that the cutlets are the same size, it is convenient to use an ice cream scoop.

We form bean cutlets and roll them in breadcrumbs.

Fry the bean cutlets in vegetable oil on both sides until crispy.

This amount of minced meat produces quite a lot of cutlets.

Serve bean cutlets with stewed vegetables and tomato sauce or ketchup.

The version of the dish from Yulia Vysotskaya, unlike other recipes, is made with canned beans. The dish turns out to be quite special due to the pepper.

• half a sweet pepper and the same amount of chili;
• a can of canned white beans;
• clove of garlic;
• salt, dark ground pepper to taste;
• clove of garlic;
• a spoonful of flour;
• half a reddish onion.

Manufacturing process:

1. Finely chop the garlic and onion, place in a frying pan and fry in oil for several minutes.

2. Add any seasonings, flour, knead and make cutlets. Roll them well in breadcrumbs and fry until golden brown. If desired, crackers can be omitted.

Bean and rice cutlets

Required products:

• a glass of rice and the same amount of beans;
• seasonings;
• onion and carrot;
• testicle;
• 30 grams of cheese;
• breadcrumbs.

Manufacturing process:

1. Fill the rice and beans with water and cook until the ingredients become soft.
2. Bring the beans to a puree using any device, or carefully knead them with your hands.
Mix the resulting mass with rice. 3. Grind the carrots, cut the onion into squares and fry the vegetables until golden brown, then add them to the beans and rice.
4. Drive eggs in there, add seasonings, definitely salt and a little ground pepper.
5. Grind the cheese, mix with breadcrumbs and roll the minced meat into the consistency given to us.
It’s better to do all this with wet hands, then nothing will stick. 6. Place the pieces in a frying pan and fry in oil on both sides until beautifully browned.
