Nina and Ulyana Tarasova “And we have cookies!”

Experiments on banana - preparing mousses

Banana mousse is a delicious and unique delicacy that cannot be tasted in many cafes or restaurants. But, at the same time, every housewife can prepare it at home using ordinary kitchen utensils. This delicacy comes out porous, airy and tender.

Banana mousse, the recipe and photo of which we will provide to your attention, will be a good decoration for a gala table, which will make all the guests ecstatic. Also, this delicacy, due to the fact that its recipe is quite simple, can be created on an ordinary day, thereby delighting your household with a delicious treat.

Having tried and devoted a little time to cooking, your banana mousse will turn out appetizing and tender, and its appearance will be the same as in the photo. Intrigued? Then read the recipe carefully and let's go!

Traditional mousse with banana

This is an ordinary mousse without any additives, which retains the pronounced taste of banana. It requires the following ingredients:

  • 2 bananas;
  • 150 g cream 25% fat;
  • 1 teaspoon lemon juice;
  • 1 tablespoon honey;
  • 2 egg whites;
  • 0.5 teaspoon vanilla sugar.

To make the banana mousse truly juicy and sweet, the recipe calls for the use of good, yellowish, ripe bananas. The riper the banana, the tastier it will be. We peel them, and then cut them into pieces and put them in a bowl. Add lemon juice, vanilla sugar and honey to the bananas.

We carefully beat everything with a blender so that it becomes a homogeneous mass, without any lumps. After this, we need to pour cream into our mass, and then beat the mass again. As for the extreme ones, the recipe allows for the use of the richest cream, for example, the traditional 33% fat content. With them, the banana mousse will turn out even more tender, tastier and, most importantly, tastier, and will be as beautiful as in the photo.

So, we set the banana-cream mixture whipped in a blender aside and begin beating the eggs. Carefully separate the yolks from the whites. Our whites must be unstained, without shell particles or inclusions of yolks. Naturally, we beat them. We do this using a mixer, because you will have to beat it with a whisk for a very long time and vigorously. We beat our egg whites until they form a fluffy foam, or rather, stable, snow-white and shiny peaks.

After this step, we are faced with a difficult but very important task: we need to mix the banana mass with proteins. It is the proteins that will give our mousse its fluffiness, so it is necessary to combine it very, very carefully. We put the whites on top, not all at once, but dividing them in half, thus mixing them in two batches. Mix carefully, from top to bottom. As a result, you should get a homogeneous mass of pleasant color, as in the photo. You see, the recipe is very simple, because at this point the banana mousse is actually ready. All we have to do is put it into beautiful bowls or glasses and put it in the refrigerator for about 20 minutes. When we take out our banana mousse, you can decorate it with nuts on top, place a slice of some fruit on the wall of the bowl, or sprinkle with grated chocolate. The recipe does not limit you in this matter.

Banana-orange dessert

This recipe is special in that we use orange juice in it, and our banana mousse comes out with notes of orange, which gives it an unforgettable taste. For this sweetness we will need:

  • 3 bananas;
  • 1 glass of orange juice, or better yet, fresh juice;
  • 2 packs of orange jelly;
  • 300 ml of concentrated sterilized milk;
  • Half a glass of sugar.

And this recipe foresees the beginning of production with operations on bananas. We clean them, then cut them into circles and put them in a saucepan. Then pour orange juice into them and also add sugar. then put our saucepan on low heat. Bring the mixture to a boil and, stirring, boil the bananas until they become mushy. Cook our gruel, counting from the moment it boils, for about 7 minutes. and then turn off the fire.

Then we take the jelly. If you have one that doesn’t need to be soaked, immediately put it in banana porridge. If it is one that needs to be soaked, add about 6 tablespoons of water to it, wait until it swells, and then dissolve over the fire, without allowing it to boil. Then add to the banana pulp.

We need to cool the concentrated milk and then beat it well with a mixer. This milk has the wonderful property of whipping into a nice fluffy foam. When the milk has whipped, carefully add it to the banana mixture and stir carefully. If you haven’t found such milk, the recipe calls for using cream instead, which also needs to be whipped.

After this, put the mousse into bowls or cups and put them in the refrigerator. Let it stand there all night (that is, in the dark) . You see, preparing such a pleasure as in the photo is absolutely simple, and every housewife will certainly make banana mousse.

Banana mousse. Step-by-step recipe with photos

banana mousse for a long time, and finally got around to it. To say it's delicious is an understatement. If you like various types of jelly and bananas, you will definitely like this dessert. Having bought a bunch of bananas the other day, I started thinking about how to make something tasty out of them and remembered banana mousse. I started finding a suitable recipe on the Internet.

It turns out that there are a lot of banana mousse recipes on the Internet. Among them, the most popular recipes are: curd-banana mousse, chocolate-banana mousse, strawberry-banana mousse, creamy banana mousse, banana mousse with proteins, with gelatin.

Because I was preparing it for the first time, I decided to test it by preparing the usual traditional banana mousse with gelatin based on sour cream, without adding any additional ingredients.

The banana mousse came out as a mixture, as I expected, thick, elastic like jelly, but at the same time the most airy, with air bubbles. This banana mousse can be prepared as a separate dessert or used for a no-bake cake.

First, I suggest you look at my version of how to prepare banana mousse step by step with photos , and later the rest of the banana mousse recipes that I found on the Internet.

  • Gelatin - 25 gr.,
  • Water - 50-70 ml.,
  • Sour cream 20% fat - a glass,
  • Sugar - 4 tbsp. spoons,
  • Vanillin - half a bag,
  • Bananas - 2 pcs.,
  • Lemon juice - 1 teaspoon,
  • For decoration: chocolate and mint

Banana mousse - recipe

Making banana mousse begins with preparing gelatin. Place instant gelatin in a small bowl.

Fill it with hot water at a temperature of 80-90C. Stir. Usually gelatin will dissolve immediately. Let it cool to a temperature of 35-40C.

Meanwhile, prepare the remaining banana mousse ingredients. Place the required amount of sour cream in a bowl or bucket (I used sour cream).

Using an immersion blender, but preferably a mixer, stir the sour cream with sugar and vanilla.

Peel the bananas. Cut them into circles.

Add to whipped sour cream. Add freshly squeezed lemon juice or lemon extract. In addition to the fact that the banana mousse will acquire sourness, it will become the lightest color due to the fact that the acid will prevent oxidation and darkening of the bananas.

If at the first step of making mousse you could use a mixer or a blender, now, in order to transform all the ingredients into a homogeneous mass, we will need an immersion blender. Using an immersion blender, blend the bananas with sour cream until a homogeneous mixture is obtained.

The banana mousse base is ready. Pour in the cooled gelatin.

Beat all the ingredients again.

The banana mousse is ready, but it needs to cool and set.

Pour it into bowls, small glasses, and bowls. Place in the refrigerator. Once its surface becomes dense, we can consider it ready. To make the banana mousse even more appetizing, before serving, decorate it with grated chocolate, fondant or glaze, nuts, mint leaves, and banana slices. Bon appetit. I will be glad if you like this banana mousse recipe and need it.
