Krucheniki - a delicious dish of Ukrainian cuisine

Krucheniki is a unique meat dish of Ukrainian cuisine. The name of this dish comes most quickly from the word “twist”, because it is a piece of meat beaten into a narrow pancake, into the middle of which minced meat or other {filling} is tightly twisted. You will learn how to prepare torsion cakes with various entrails from recipes with photos that we have selected especially for you.

Pork krucheniki

This dish will easily become the main course of any banquet. Despite the fact that they are prepared from different meats, the winner is pork krucheniki.

  • 500 g pork loin;
  • 150 g cheese;
  • 2 onions;
  • 1 carrot;
  • 100 ml cream;
  • a bunch of dill and parsley;
  • salt, freshly ground dark pepper;
  • breadcrumbs;
  • Oleina without aroma.

  1. Cut the loin into pieces as for chops and lightly beat them. Pepper and add salt on both sides.
  2. Chop one onion and fry it in a small amount of fat. Cool and add coarsely grated cheese and finely chopped herbs. Mix well.
  3. Place the prepared cheese-vegetable mixture into the chop and form a tight roll. We fasten it with a toothpick or culinary thread.
  4. Roll any roll in breadcrumbs and fry in a preheated Olein until golden brown.
  5. Chop the remaining vegetables. Fry until golden, then add cream to it. Mix well.
  6. Place the meat rolls into the prepared frying pan, cover with a lid and simmer for half an hour over low heat.

Krucheniki with mushrooms

The recipe for pork tortillas can be varied due to the abundance of entrails, of which quite a lot have been invented at the moment. Mushrooms are often consumed because they add satiety to the food.

List of products for 500 g of meat:

  • 200 g champignons;
  • 2 onions;
  • salt, spices to taste;
  • 50 g butter;
  • 100 ml cream;
  • oil for frying.

  1. Finely chop the mushrooms. Pour them into a frying pan with melted butter and fragrant spices. Fry briefly, stirring. Chop the onion and add to them. Fry until done.
  2. We cut the meat and beat it as expected. Sprinkle with spices and salt. Wrap the mushrooms inside and secure with thread.
  3. Fry the krucheniki with mushrooms and place in a heat-resistant bowl.
  4. Fill them with cream and keep in the oven for a quarter of an hour at 180 degrees.

Krucheniki with sauerkraut

The dish prepared in this way is also called Volyn krucheniki. The unique inside gives them an extraordinary taste.

Quantity of goods required for ½ kg of pork carbonate:

  • 300 g sauerkraut;
  • 1 onion;
  • 100 g sour cream;
  • salt, spices as desired;
  • breadcrumbs;
  • Oleina without aroma.

  1. Chop the onion finely and fry in oil until golden brown. Add squeezed sauerkraut to it. Mix everything, add some salt and simmer for about 10 minutes.
  2. We divide the fillet into pieces, beat each one and wrap the slightly cooled cabbage in it.
  3. We dip any roll in sour cream, roll it in breading and cook it on a hot Olein.
  4. Place the fried rolls in a deep saucepan, add the remaining sour cream and the fat in which they were fried. Simmer here and there for 15 minutes at low temperature.

Chicken fillet fingers with prunes

The chicken fillet dish is very tender, and prunes add a piquant flavor to this dish.

Products needed for 300 g of chicken pulp:

  • 150 g pitted prunes;
  • 100 ml mayonnaise;
  • 50 ml cream;
  • 30 ml soy sauce;
  • 1 onion.
  1. Soak the prunes for a little while in warm water, then dry.
  2. We divide the fillet into pieces that are not very large in size. We don't beat it very thinly.
  3. We dilute mayonnaise with soy sauce. Place the chops and onion cut into half rings into the purchased marinade and let them brew.
  4. Place one cream into the marinated meat and roll it up. Fix the prune fingers with a toothpick and place them in a baking dish.
  5. Pour the remaining marinade with onions on top, pour in cream and put in the oven to cook at 180 for no longer than 35 minutes.

Rolls with lard and garlic

Depending on the choice of interior, the taste of the food changes. If you put this option in the middle, you will get slightly spicy and very juicy meat.

Amount of ingredients for one second kilogram of chicken fillet:

  • 150 g Russian cheese;
  • a few cloves of garlic;
  • 150 g lard;
  • 50 g spread;
  • 100 g sour cream;
  • Oleina;
  • salt, freshly ground pepper.

Description of cooking step by step:

  1. We divide the fillet into small pieces and beat it lightly. Sprinkle with salt and pepper. Place them in a bowl and grease with sour cream. Let it sit for at least half an hour.
  2. Cut the lard into small cubes. Three large cheeses. Chop the garlic very finely. Mix everything with salt and ground black pepper.
  3. Place the prepared minced meat in the middle of the chop, twist it and chop it with a toothpick. Fry in a small amount of fat until golden brown.
  4. Rub the mold with the spread. We put chicken torso in it. Pour in cream, cover with foil and put in the oven for 30 minutes at 180 degrees.

Veal rolls

The recipe for veal tortillas is quite simple to make. Thanks to the rice, they turn out to be very filling, and the additional stewing in the broth makes them tender and juicy.

Set of goods for 400 g of slices:

  • 100 ml broth;
  • 100 ml sour cream;
  • 100 g rice;
  • 1 onion;
  • 1 boiled egg;
  • little greenery;
  • flour;
  • seasonings, salt;
  • vegetable oil.

  1. Boil the rice until done. Finely chop the onion and fry until golden. Place the cereal, chopped herbs and egg into the pan. Mix well, adding pepper and salt to taste.
  2. We divide the veal into pieces and beat it. Place the minced meat in the middle and twist, securing with thread.
  3. Heat the oil and fry any roll, which we put in a saucepan.
  4. Mix the broth with sour cream, heat it up a little and pour it into the saucepan with the meat. Cover with a lid, bring to a boil and reduce the temperature until it bubbles slightly. Let's simmer for 40 minutes.

Krucheniki puff pastry with bacon

Despite the fact that in the classic version this is a meat dish, there is still one type of preparation of such a dish, but from dough. To make them, we will use ready-made puff pastry, having previously defrosted it.

We will also need:

  • bacon – 150-200 g;
  • onion – 1 pc.;
  • garlic - a couple of cloves;
  • sweet chili sauce - a few teaspoons;
  • grated cheese – approximately 100 g;
  • 1 yolk for greasing;
  • sesame seeds for sprinkling.

  1. Cut the bacon (can be replaced with ham) into very small cubes. Chop the onion and garlic as finely as possible. Fry everything in a small amount of oil until golden. Remove to a plate and let cool slightly.
  2. Roll out two layers of dough. Grease the first layer with sauce and crush with grated cheese. Then spread the cooled filling over it. Cover the top with a second layer. Cut them into strips approximately 3 centimeters wide. Then we twist each strip, forming spirals, and place it on a sheet covered with baking paper.
  3. Lubricate with loose yolk and crush with sesame seeds. Bake puff pastries at 170 degrees until cooked.

Despite the ease of production, meat tortillas will perfectly complement your menu. Having tried them at least once, you will cook them quite often, as you and your family will certainly like them.

Krucheniki – the best recipes for Ukrainian dishes

To prepare krucheniki, you need to wrap the filling in a meat steak. The inside itself can be anything: mushrooms, prunes, cheese, carrots.

Ukrainian cuisine has long been known for its hearty and savory meat dishes. One of these dishes is krucheniki. The name “krucheniki” most likely comes from the word “twist”. And not by chance, since to prepare krucheniki, you need to wrap the filling in a meat steak. The inside can be anything: mushrooms, prunes, cheese, carrots.

Krucheniki with horns:

Ingredients: meat for chops – 600–700 g, champignons 500 g, onion 1 pc., hard cheese – 60 g, garlic 3-4 cloves, sour cream 21% 150 g, flour 1 tsp, butter 73% – 20 g, vegetable oil – 2-3 tbsp. l., salt, pepper - to taste, herbs.

Production: make meatballs - cut steaks no more than 1.5 cm wide. Beat the meat on both sides and season with salt and pepper. For the inside, you need to cut the onions and champignons into small pieces. First fry the onions in a frying pan in butter, then add the mushrooms and fry until the water has completely evaporated. Sprinkle generously with chopped garlic and herbs. Leave to cool. Mix grated cheese with cooled mushrooms. Salt and pepper. Place the filling on any piece of the cue ball. Wrap it in a roll and secure it with a toothpick or thread so that the twist holds its shape during frying. Fry until golden brown. After frying, the krucheniki with mushrooms should be simmered in broth for 30 minutes. 10 minutes before readiness, mix flour and sour cream and add to the broth with krucheniki. Simmer for the remaining time. Serve with a side dish and sour cream sauce.

Krucheniki with prunes:

Ingredients: pork - 500 g, prunes - 200 g, cheese - 200 g, salt, pepper - to taste.

Making: preparing pork balls. Cut the prunes into small pieces and grate the cheese. Place prunes and cheese on the cue ball. Roll up the roll and secure the edges with toothpicks. Then we put the tortillas in a saucepan, fill them with broth and put them in the oven for 30–35 minutes. Can be served as a separate dish or with a side dish.

Beef tortillas in a slow cooker:

Ingredients: beef – 1 kg, carrots – 2 pcs., onions – 1 pc., beans in their juice – 200 g, sour cream – 0.5 cups, vegetable oil – 3 tbsp. l., salt, pepper - to taste.

Preparation: Fry onions and carrots in 1 tbsp. l vegetable oil in a slow cooker at 160 degrees for 10 minutes. Mash the beans (without juice) in a bowl. Add fried onions and carrots, salt and mix. Cut the meat into portions, beat on both sides. Place the filling on the balls and wrap the rolls. Secure with toothpicks or thread. Fry the rolls in vegetable oil until golden brown. Mix sour cream and water, salt and pepper. Then pour this mixture over the krucheniki and let them cook in the same mode for 30–35 minutes. Serve hot.

Krucheniki with minced meat:

Ingredients: pork or beef (for chops) – 600 g, minced meat (pork or beef) – 300 g, onion – 1 pc., carrots – 1 pc., garlic – 2-3 cloves, egg – 1 pc. (tiny ), ketchup – 1 tbsp. l., milk - 2 tbsp. l., salt, ground pepper, parsley - to taste. For spreading: thick sour cream – 2 tbsp. l., ketchup – 2 tbsp. l. Additionally: onions – 1 pc. (large), carrots – 1 pc., tomatoes – 3 pcs. average size.

Preparation: prepare the minced meat: finely chop the onion, grate the carrots on a large grater, fry until transparent, cool, add to the minced meat. Add chopped garlic, egg, ketchup, milk, chopped herbs, salt and pepper. Mix the minced meat well and beat it lightly. Cut the meat as for chops, 1-1.5 cm wide, beat well on both sides, lightly salt and pepper. Place a layer of minced meat on each chop, leaving free edges. Roll up the roll and fold the edges to cover the minced meat. Lightly press the roll in your hand to form a patty. Mix sour cream and ketchup, grease any roll with this mixture on all sides, place in a saucepan or bowl (try to keep the seam down), close with a lid and put in the refrigerator for an hour. We take the dishes for baking. Finely chop the onion, grate the carrots and tomatoes on a large grater. First add carrots and onions, then tomatoes. Then lay out the torsions and cover with a lid. Bake for one hour at a temperature of 160-170 degrees. This is the 1st manufacturing option. You can also do this: roll any kruchenik in flour and leave for 2-3 minutes so that little flour is absorbed. Then beat two eggs with salt and pepper, dip any kruchenik, let the excess consistency drip off and fry on all sides in a frying pan in vegetable oil over low heat until golden brown and at the end of cooking, simmer for 5 minutes under the lid.

Chicken fillet tortillas:

Ingredients: chicken meat (loin) - 500 g, potatoes - 500 g, lard or bacon - about 100-150 g, hard cheese - 150 g, butter, not salted - about 50 g, sour cream, salt, flavored herbs, spices and seasonings - to taste.

Manufacturing: manufacturing should begin with processing the chicken, specifically washing it, blotting it dry and removing films and skin. Next, the meat should be cut into thin slices and lightly beaten, salt and season with pepper and other favorite spices. The next step will be to make the insides for the twisters; for this you need to finely chop the lard (bacon) and herbs, and grate the cheese. Mix the crushed ingredients and add sour cream and soft butter. Lubricate the battered and salted meat with the acquired consistency and form rolls. You can fix the shape of the rolls either with culinary thread or wooden toothpicks.

Then cut the peeled potatoes into slices. Next, on the prepared pieces of foil (the size of the foil should be comfortable in order to completely wrap the torsion), place a circle of potatoes, on top of the meatloaf, and wrap it with foil. Place the twisted tortillas on a baking sheet and bake in the oven for 40-45 minutes at a temperature of 175-180 degrees. When serving, you can sprinkle the dish with chopped herbs.

Volyn krucheniki:

Ingredients: pork - 0.5 kg, onions - 1 pc., sauerkraut - 250-300 g, sour cream - 50-70 g, sunflower oil for frying, breadcrumbs, salt, spices, herbs to taste.

Production: first you need to wash and clean the meat, then cut into thin slices and lightly beat. Season the chopped meat with salt and rub with your favorite spices and pepper. For the inside, fry the finely chopped onion in hot vegetable oil until golden brown, then add the cabbage, well squeezed out of the brine, and simmer together with the onion for another 10-15 minutes. Let the insides cool.

We put the cooled filling on the meat and form rolls; in order to maintain their shape during production, the rolls need to be wrapped with culinary thread. Dip the rolls in sour cream and bread them in breadcrumbs. In a perfectly heated frying pan with vegetable oil, fry the breaded krucheniki, then cover with a lid and continue to simmer for another 20 minutes over moderate heat.

Pork krucheniki “The most delicious”

There are a huge number of recipes for torsion. I would like to share my family recipe with you. The secret of our insides is not mushrooms or prunes. This is smoked lard. Indescribably tasty, juicy and nothing excessive! But there are also a few more secrets. Would you like to find out?

Ingredients for “Pork Krucheniki “The Most Savory””:

  • Pork (balyk) – 900 g
  • Lard (smoked) - 110 g
  • Soy sauce (TM Kikkoman) - 2 tbsp. l.
  • Water - 2 tbsp. l.
  • Dill - 10 g
  • Garlic - 5 teeth.
  • Onion - 1 pc.
  • Allspice
  • Dark pepper (ground)
  • Salt
  • Vegetable oil - 3 tbsp. l.

Production time: 120 minutes

Recipe for “The Most Savory Pork Krucheniki”:

Pork balyk is perfect for spinners. You can also use the neck, but it will turn out a little fattier.

Cut the meat into thin pieces across the grain, thickness up to 0.5-1 cm. I got 13 pieces. Any piece must be beaten well so that the meat is very thin. Cut any broken piece in half. Krucheniki are especially tasty when they are small! A large torso made from a thick piece of meat loses its beauty.

Now mix the soy sauce with water. Lubricate any cut piece of meat with soy sauce using a brush, sprinkle with ground black pepper.

Fold in a stack. Like this.

While the meat is marinating (about 15 minutes), you can work on the inside. Cut the smoked lard into small cubes, chop the dill and squeeze out the garlic. Mix everything and pepper to taste.

Place the filling on one edge of the meat piece, wrap it in a roll, starting from the side where the inside is, and secure it with a toothpick.

Heat a frying pan with vegetable oil well. Fry the tortillas on both sides over high heat until golden brown, place in a saucepan.

Pour boiling water over the fried krucheniki, add onion (cut into cubes in advance and lightly fry), aromatic pepper, and salt. Simmer for 15-20 minutes. You can serve!
