Sweet rolls are an ordinary but beautiful dessert that will appeal to all connoisseurs of savory food without exception. In fact, this dish is a fantasy on the theme of traditional Japanese rolls. Keeping the classic cylindrical shape of the rolls, we wrap the filling in chocolate pancakes instead of nori, and use sweet cream cheese or curd mass and juicy fruits in the salty interior. In a couple of minutes we will have a beautiful, unusual and indescribably delicious dessert. Shall we begin?!

Prepare the ingredients according to the list.

Beat the chicken egg for a couple of minutes so that the white and yolk mix well.

Add milk, sugar, 1 pinch of salt and 2-3 tbsp. cocoa. Stir everything thoroughly until the mixture is homogeneous and the sugar and cocoa are dissolved.

In portions of 1 tbsp. Add sifted wheat flour to the mixture of watery ingredients. Stir everything well. When adding flour, be guided by the thickness of the consistency, when the flour dissolves completely and you get a uniformly liquid “pancake” dough - the mixture is ready. I add about 5-6 tbsp. flour. Place the finished dough in the refrigerator for 15-20 minutes.

Heat a frying pan and grease the bottom with a thin layer of vegetable oil. Pour in a portion of the prepared dough. Tilt the pan, spread the dough into a thin layer and fry the resulting pancake on both sides until cooked. Repeat the function with the remaining dough.

Place the finished pancakes on a plate and brush with butter. In a frying pan Ø 28 cm I usually get 6 not very thin pancakes.

For the inside, mix cream cheese or curd mass with sweet powder. If desired, add vanilla sugar or other spices to taste.

Prepare the fruit for the insides. Peel the apples, remove the seeds and cut the apples into small pieces. Also peel and cut the orange into small pieces. In order not to peel each segment of the orange from the partitions, after peeling the orange, use a sharp knife to cut out the pulp between the partitions (for more details, see the video version of the recipe).

The composition and amount of fruit inside can be adjusted to your own taste. I love the way orange and sweet, juicy apple varieties are mixed into chocolate pancakes. I most often prepare a summer dessert with strawberries.

Spread the prepared pancakes with cream cheese or curd mixture. Add pieces of fruit, slightly moving away from the far edge of the pancake.

Roll the pancake into a roll or fold it, lightly knead it, and shape the pancake using a beech mat. Cover the prepared rolls with cling film and place in the refrigerator for 2-3 hours to cool.

Cut the chilled sweet pancake rolls into portions, decorate according to your own taste and mood, and then serve.

I’ve been eyeing recipes for chocolate pancakes with cottage cheese and sweet pancake rolls for a long time, and finally I decided to make something in honor of Maslenitsa. And because the experience was quite successful, I decided to share it with you.

There are several options for making chocolate pancakes, in some recipes they add only cocoa, in others cocoa and dark bitter chocolate, because there was no chocolate on hand, I decided to make pancakes with cocoa. I immediately want to see that you shouldn’t add more than 2 tbsp to the dough. l. cocoa, otherwise it will be quite bitter. It is best to add one or maximum 2 tbsp. l. cocoa.

When preparing chocolate pancakes, you must adhere to the main tips for making ordinary thin pancakes with milk.

Now I wanted to make not an ordinary cottage cheese filling with eggs, but a creamy filling made from cottage cheese and lemon. In order for the cottage cheese to come out tender and airy, you need to beat it with a submersible blender, and for this it is best to add a little milk or yogurt to the cottage cheese. But the watery ingredients must be added to the filling little by little so that it does not come out too watery.

In order for the pancakes to come out the softest, juiciest and at the same time keep their shape perfectly, it is best to place them in the refrigerator for some time (1-2 hours). If you want to make sweet rolls from them, then resting in the refrigerator is required.

In order to form sweet rolls, you will need a rolling mat. The mat must be wrapped in cling film, put a pancake on it and give it the desired shape (round, oval, square, rectangular, triangular...). The formed roll must be cut into equal pieces with a very sharp knife and decorated to your own taste.

for dough: Milk 500 ml. Testicles 4 pcs. (2 eggs + 2 yolks, but you can also have 4 whole ones) Butter 50 g. Cocoa 2 tbsp. l. Sugar 2 tbsp. l. Salt 0.5 tsp. Wheat flour 1.5 tbsp. (glass size 240 ml.). Cognac or rum 1 tbsp. l.

for the inside: Cottage cheese 400-600 g. Sugar 2-3 tbsp. l. Lemon 1 pc. (zest + juice of half a lemon). Butter at room temperature 20 g. Milk or yogurt 20-50 ml. Vanillin 1 pinch. Instead of vanillin, you can use vanilla essence, vanilla stick, vanilla sugar.

Canned peaches 1 can (400 g)

Preparation time: 15 minutes. Production time: 1 hour.

Pancake rolls with chocolate sauce

Ingredients for Pancake Rolls with Chocolate Sauce:

For pancakes

  • Rice flour (you can use wheat flour. I made it with both ordinary flour and rice flour. The taste will differ slightly) - 200 g
  • Potato starch - 20 g
  • Milk – 500 ml
  • Chicken egg - 2 pcs
  • Butter - 30 g
  • Salt (pinch)

For Nachika

  • Cottage cheese – 200 g
  • Sour cream - 3 tbsp. l.
  • Condensed milk - 3 tbsp. l.
  • Banana – 2 pcs.

For the sauce

  • Sugar - 2 tbsp. l.
  • Cocoa powder - 2 tbsp. l.
  • Sour cream - 2 tbsp. l.
  • Butter - 30 g

Recipe for pancake rolls with chocolate sauce:

1. Knead the pancake dough.
2. First, mix all the dry ingredients.
Flour, potato starch and salt. 3. Then pour in 500 ml of milk, melted butter and two chicken eggs.
4. Beat everything well with a whisk or mixer until smooth.
5. Pour a little vegetable oil into the frying pan, carefully pour in the dough and fry like regular pancakes on both sides.
6. Make the filling.
7. Mix 200g of cottage cheese, sour cream and condensed milk in a plate.
Mix everything well. 8. Spread the pancakes with the resulting curd consistency.
9. Cut the bananas and place them on the edge of the pancake closest to you.
10. Carefully roll it into a tube and cut it into rolls with a knife.

12. Take a small ladle and put it on medium heat.
13. Place 30g of butter, sour cream, cocoa powder and sugar there.
14. Cook, stirring constantly until the sauce becomes watery.
15. Place the rolls on a plate and pour sauce on top.

The dish is ready.

How to make sweet pancake rolls

Ingredients:

  • Milk – 500 ml
  • Wheat flour – 160 g
  • Chicken egg – 3 pcs.
  • Sugar – 3 tbsp.
  • Sour cream – 3 tbsp.
  • Cocoa powder – 3 tbsp.
  • Vegetable oil – 1 tbsp. + for frying
  • Cottage cheese – 300 g
  • Banana – 1 pc.
  • Kiwi – 1 pc.
  • Apple – 1 pc.
  • Baking powder – 1 tsp.

Manufacturing:

Let's start preparing sweet pancake rolls by making the pancakes themselves.

In a deep bowl, mix eggs with 2 tablespoons of sugar.

Beat with a whisk until foam appears. This can be created either with a hand whisk or with a mixer.

Chocolate pancakes with cocoa (and we will bake these specifically) often turn out dry, but there is one trick: to make them soft, you need to add sour cream to the dough. 1 tablespoon of sour cream of any fat content is enough.

Along with sour cream, add 1 tablespoon of vegetable oil without aroma, mix well with a whisk.

Sift flour with baking powder and cocoa into a separate bowl.

Add half the mixture of flour and cocoa to the watery part and mix thoroughly with a whisk. The result will be a smooth and fairly compacted mass.

Now you can pour in warm milk and mix well again.

Add the rest of the flour and cocoa consistency, mix and achieve a homogeneous dough structure without lumps.

The dough needs to stand for 10 to 20 minutes so that the flour absorbs the liquid well. Check the dough for thickness. It should be like regular pancake batter, only chocolate-colored. If the dough is very liquid, add 1 tablespoon of flour; if, on the contrary, it is dense, then dilute with milk.

Heat the frying pan well, grease it with vegetable oil and spread the dough over the pan with a ladle. Do not pour too much batter, otherwise the finished pancakes will be very thick.

Because the pancakes are chocolate, it is quite difficult to determine the degree of their readiness; be careful that they do not burn or turn black. The pancakes bake quickly - a little less than 1 minute on each side.

Place the finished pancakes in a stack on top of each other.

Prepare the curd filling: mix cottage cheese of any fat content, pureed through a sieve, a tablespoon of sugar (you can use sweet powder) and 2 tablespoons of sour cream.

Cut fruits into thin strips - banana, apple and kiwi.

Spread a thin layer of curd filling over the chocolate pancake (approximately 2-3 mm).

Place strips of fruit on top of curd filling.

Roll the pancake into a tight tube.

Trim the edges without the inside with a knife and cut the pancake tube into rolls of similar size.

Place the sweet rolls on a plate and garnish with melted chocolate and mint.

You can make sweet pancake rolls from ordinary light pancakes, but the cut of the rolls will be less contrasting than with chocolate pancakes.
