Crumble dough

Crumble dough is a butter-flour crumb that is prepared using butter, sugar and flour. In my opinion, this is one of the most common methods of preparing shortcrust pastry, and even here it is important to follow a few simple rules.

Our goal is to ensure that every grain of butter is covered with dry ingredients. This result can be obtained if you work with chilled products without allowing the butter to melt and absorb flour and sugar. Here are a few rules that will help you succeed in this simple task:

  1. The oil must be cooled in advance. It is best to cut the butter into small cubes and then put it in the refrigerator.
  2. The bowl in which you will knead the dough and the spatula is also best placed in the refrigerator.
  3. If possible, it is best to knead the dough in a food processor or using a fork, spatula or other available tools. If you still need to rub the dough with your hands, for example, the butter is very frozen, then it is better to minimize such interactions. With prolonged contact with the warmth of your hands, the butter will begin to melt.
  4. Knead the dough in cold conditions. If the room is very hot, then the dough must be kneaded very quickly. If you see that the butter is melting and the dough is not ready yet, put the dough in the refrigerator for some time.

The indisputable advantage of sand crumbs is that they can be prepared for future use. Make several portions of dough at a time and place it in the freezer until needed.

Apple insides for crumble

To make crumble, you can use caramelized or fresh apples.

In the current recipe, I have slightly complicated the filling; it consists of grated and chopped apples - the first forms apple puree, and the second separate apple cubes. You can simply cut all the apples into cubes and caramelize them.

Crumble with the freshest apples is no worse in taste. This method is simpler, however, you cannot completely control the final taste of the inside, as is the case with caramelized apples, but the inside of the pie itself will be a little juicier. You need to peel and cut the apples using a method that suits you. Add sugar and cinnamon to taste, as well as a spoonful of flour or starch, this is necessary in order to slightly thicken the finished filling. Mix everything well and spread in an even layer on the bottom of the mold.

Crumble is a beautiful opportunity for bold gut testing. You can use almost any berries and fruits, the main thing is to lightly caramelize them. How about crumble with meat or vegetables? Or maybe mushrooms or cheese? Experiment and please your loved ones.

Top the hot crumble with a scoop of ice cream and enjoy the play of flavors, different textures and an extraordinary combination of hot and cool. Let the dessert cool and you will get a juicy filling, a tender layer of dough and a crispy crust on top.

Apple crumble can be classified as a frisky dessert, the production of which requires a minimum of goods.

Products
Large apples – 5 pcs.
Flour – 150 g
Brown sugar – 150 g
Butter – 150 g + for greasing the pan
Watery honey – 3 tbsp. spoons
Sour cream, yogurt or whipped cream - for serving

How to make apple crumble:

Peel the apples and cut into large cubes.

Place the apples in a mold greased with butter. Drizzle watery honey over apples.

Pour flour into a deep bowl, add brown sugar (ordinary sugar is fine). Mix flour with sugar.

Cut the well-chilled butter into large cubes and place in a bowl with flour and sugar.

Rub flour, sugar and butter with your hands until crumbly.

Pour the crumbs onto the apples and smooth them out.

Bake the apple crumble in the oven at 180 degrees for 30-40 minutes. Baked crispy crumbs come out on top, and soft stewed apples on the bottom.

I propose to prepare a very frisky dessert, which, firstly, is very simple. Secondly, it allows you to play with different ingredients within very wide boundaries. Thirdly, you can prepare something for it in advance and on a special day, 20 minutes before serving, put it in molds (5 minutes), brown it in the oven (10-15 minutes) and voila! I would like to offer to prepare crumble for you!

Making caramel from butter and sugar

Caramelize peeled and chopped apples in it and add lemon juice and cinnamon at the end

Place apples in one large or several small baking dishes and sprinkle with crumble.

Brown in the oven.

For the inside, you can take any fruits and berries in various combinations.
You can bathe them in caramel, or you don’t have to, the hard ones should be kept in it longer.
Simply sprinkle soft plums, peaches, nectarines with little sugar.
It would be great to slightly boil dried fruits in a small amount of water beforehand.

In the mash, you can replace a third of the flour with rolled oats, add lemon, orange zest or grated chocolate.

Or you can simply crumble almond cookies or dried snow-white bread, mixing it with butter and a little sugar.

You can flavor both the filling and the dressing, or even all together. Use cardamom, vanilla, cinnamon, anise, you can add a small pinch of pepper, you can splash in a thimble of rum or cognac. Or liquor.

This is a traditional homemade dessert, playful and light - even preschoolers can handle it.
Winter holidays are the best time to do some kitchen testing together if you're stuck at home.

Apple crumble - a purely British dessert

Apple crumble is a traditional British dessert made with crispy shortbread crumbs and a caramelized apple core. Served with a scoop of ice cream.

The apple crumble recipe is very simple and frisky. First you need to prepare the filling - cut the fruit, and then simmer with sugar so that the caramel entwines every piece. You can add a handful of toasted nuts to make the taste more expressive and exciting. And at the end, sprinkle flour and butter crumbs on top. Bake in ramekins - this is the name given to special heat-resistant forms in which creme brulee or soufflé is usually prepared.

From the indicated amount of ingredients, 4 desserts are obtained in molds with a diameter of 7-8 cm (about 4 cm in height). If using a different size pan, adjust the baking time.

Ingredients

  • apples – 3 pcs. (300 g)
  • lemon juice – 1-2 tsp.
  • cane sugar – 60 g
  • ground cinnamon – 0.5 tsp.
  • sugar – 40 g
  • wheat flour – 90 g
  • butter – 50 g
  • walnuts – 20 g
  • salt – 1 chip.
  • ice cream - for serving

Manufacturing

Peel the apples , cut them in half and remove the core. For this dessert, it is best to choose fruits with dense pulp that will hold their shape inside and will not fall apart during heat treatment. The best varieties are Granny Smith or Semerenko (I used Semerenko and apple-pear). If the apples are very sweet, then adjust the acidity with lemon juice so that the inside is not cloyingly sweet.

Cut into slices, sprinkle with lemon juice.

Next, caramelize the apples . Place brown sugar and ground cinnamon into a dry frying pan. Add the fruit slices, stir, and then place over medium heat. I used Demerara cane sugar, it has a pronounced caramel taste. If there is none, then you can replace brown sugar with regular snow-white sugar.

Stirring constantly (ideally with a silicone spatula), heat the contents of the pan. After about 3-5 minutes, the sugar will melt and mix with the apple juice. The resulting fragrant caramel will entwine any piece. Depending on the variety and juiciness of the apples, the result may vary slightly; you may end up with more or less caramel.

Place the filling in the baking molds so that there is approximately 1 cm of space left to the top (for crumbs).

Dry the walnuts in a dry frying pan - they must be heated so that the flavor opens and intensifies, they become crispy. Then cut the kernels with a knife and place them on top of the apple filling.

Prepare the crumble. Immediately turn on the oven to 180 degrees so that when the crumbs are ready, it is properly heated. Mix sugar, salt and flour in a bowl. Add cool cubed butter.

Rub vigorously with your hands so that any particle of butter is coated on all sides with a flour consistency. Try to work quickly so that the butter does not melt from the heat of your hands.

Spread the crumbs over the filling in the pans. I like it when there is a lot of crumbs - this is the most delicious thing in the crumble, so I spread it to the very top with a slide. If you have a lot of caramel and you are afraid that it will leak onto the baking sheet during baking, place parchment paper under the bottom of the molds - this will save you from having to clean out the oven if there are any drips.

Bake in a preheated oven for 25 minutes at 180-190 degrees. The apple inside in the bottom layer of the dessert will gurgle and slightly raise the cap. If there is a lot of caramel or fruit juice, then it may sizzle and splash, and leak slightly - this is normal.

The crumble is ready when the crumbs become crispy. The top should dry properly and become rosy.

Serve apple crumble with a scoop of ice cream. It tastes best when warm, when the ice cream melts and contrasts with the crispy top. Bon appetit!
