On summer days, keeping yourself in impeccable shape is quite easy. Vegetables become available, appetite decreases, and okroshka will help satisfy your hunger. It has a low calorie content, for example, the one prepared with kvass has only 79 kcal, of course, if you do not season it with a huge amount of mayonnaise, while the “kefir” one is a little higher – 84 kcal.
The low-fat drink is a natural diuretic, which is useful for overweight people. It also has immunostimulating properties, helps fight acquired lethargy and perfectly relieves thirst, which is essential on hot days.
Traditional chicken okroshka recipe
Usually such okroshka is prepared at the dacha, where it comes out especially tasty and fragrant, because... greens, radishes, onions and cucumbers are plucked straight from the garden. All that remains is to supplement them with boiled eggs, young potatoes and a piece of meat. If you strictly cook according to a traditional recipe, then you need to season it with kvass, preserving the main “set” of herbs and vegetables.
Will be required:
- 3 potato tubers;
- 10 pieces. radish;
- 250 g chicken (boiled);
- liter of kvass;
- a bunch of dill;
- 4 cucumbers;
- a bunch of green onions;
- 5 eggs;
- pepper and salt to taste.
Manufacturing:
- Bring 2 cups of salted water to a boil, add diced potatoes, after boiling, boil for 5 minutes, remove from the stove, and let cool in the broth.
- Divide the green onions into green and white parts and chop them separately. Pour the snow-white part into a saucepan, add salt, add the yolks, grind to a paste, pour in the cooled potato broth piece by piece, stir.
- Peel the cucumbers, cut into cubes, chop the radishes into thin slices or grate them coarsely, chop the whites, cut the meat into cubes.
- Place the vegetables in a saucepan, add the meat, the greenish part of the onion and egg whites, pour in kvass, salt and pepper, stir, cover with a lid, and put in the refrigerator for 20-30 minutes.
Okroshka “Zaboristaya” with rhubarb and radishes
The great-great-grandmother of today's okroshka was prepared from grated radish, doused with kvass, and only later was it replaced by radishes. This is a low-calorie option, prepared without potatoes and cucumbers. Rhubarb, like horseradish leaves, should only be taken young so that there are no coarse fibers.
Will be required:
- 2 carrots;
- 400 g rhubarb;
- boiled chicken breast;
- 150-200 g radish;
- 2 testicles;
- 3-4 young horseradish leaves;
- liter of kvass;
- a bunch of green onions;
- 3 tbsp. chopped celery greens;

- 2 tsp grated horseradish;

Okroshka is one of those dishes that are popular at any time of the year. It is prepared in winter and spring, when the lack of vitamins is especially felt, and also in summer, escaping from the sweltering heat with a plate of cool okroshka.
Okroshka is good because it can be prepared from virtually any vegetable. Naturally, the main ingredients are potatoes, fresh cucumbers, radishes, onions and green onions, and various greens. But no one will stop you from chopping cabbage, radish or carrots into this cool soup.
In fact, eggs are added to every okroshka. Thanks to them, the taste of okroshka becomes more expressive.
Okroshka is made with kvass, kefir, yogurt, whey, tan, and mayonnaise. In other words, based on those drinks that are more popular in a given area and in a given family.
Vegetable eaters choose to use vegetables. Others certainly put meat products in okroshka. Moreover, it is believed that the richer their assortment, the tastier the okroshka will be. They use sausages, small sausages, sausage, ham, boiled meat - beef or chicken.
If not every housewife can afford to purchase beef (taking into account its cost), then chicken is a meat that is accessible to virtually all segments of the population.
Subtleties of manufacturing
- For okroshka, it is better to take snow-white chicken meat - breast. This part of the chicken carcass is famous for its lack of fat, tendons, and bones. Naturally, it is slightly dry, but if you cut it and mix it with other, more juicy ingredients, this small defect becomes unnoticeable.
- The breast for okroshka must be cooked in advance so that it has time to cool naturally in the broth. If you take the breast out of the broth immediately after boiling and put it on a plate, then, when it cools, it will become covered with a tough crust, its meat will become dry and fibrous. When cooking the breast, add carrots, onions, bay leaves, peppers, and parsley to the broth. This improves the taste of the meat and the broth itself.
- Fans of the most special okroshka can cook it with smoked chicken legs. Naturally, before this it is necessary to remove the skin from it, remove one hundred percent of all fat, and separate the meat from the bone.
- Boiled chicken legs are also suitable for making okroshka. Just like the breast, it is boiled in broth with the addition of roots and herbs, then cooled without removing it from the broth. For okroshka, use meat removed from the drumstick and thigh, without skin and fat.

Okroshka with chicken on tan
- boiled chicken breast – 300 g;
- potatoes boiled in their jackets - 400 g;
- tan - 1 l;
- hard-boiled eggs - 3 pcs.;
- young dill greens - a narrow bunch;
- fresh cucumbers – 200 g;
- green onions - a narrow bunch;
- salt.
- Boil the chicken breast and potatoes in advance. Cool. Cut into small cubes.
- Remove the skin from the cucumbers and cut them using the same method as potatoes.
- Divide the eggs into yolks and whites.
- Finely chop the green onions. Place in a bowl, add the yolk and a pinch of salt. Remember that tan is salty, so you need to use salt very carefully. Grind everything with a pestle or spoon.
- Chop the egg white with a knife or fork.
- Place all ingredients in a saucepan. Fill with tan. Stir. Serve chilled.
Okroshka with chicken on kvass
- smoked chicken leg – 1 pc.;
- boiled potatoes – 300 g;
- fresh firm cucumbers – 200 g;
- reddish radish – 100 g;
- hard-boiled eggs - 3 pcs.;
- green onions and young dill - in a narrow bunch;
- homemade unsweetened kvass – 1 l;
- salt;
- sour cream – 200 g.
- Remove skin and fat from the leg. Separate the meat from the bones.
- Peel the cucumbers. You don’t have to cut the skin off young cucumbers.
- Cut the meat, potatoes and cucumbers into small pieces of similar shape.
- Grate the radishes on a medium grater or finely chop them.
- Chop the eggs using a fork or knife.
- Finely chop the onion and dill.
- Place all ingredients in a saucepan. Fill with kvass. Add salt to taste and stir well.
- Refrigerate. Pour into plates, add sour cream to taste.

- chicken leg – 1 pc.;
- fresh cucumbers – 200 g;
- boiled potatoes – 350 g;
- mayonnaise – 100 g;
- fresh carrots – 30 g;
- young dill - a narrow bunch;
- boiled water – 1-1.5 l;
- green onions - a few feathers;
- eggs – 3 pcs.;
- salt;
- citric acid or table vinegar - to taste.
- Boil the leg, cool. Remove the skin and remove the flesh from the bone. Cut into cubes.
- Grate the cucumbers and carrots on a medium grater.
- Cut the potatoes into strips.
- Chop the eggs with a knife or fork.
- Finely chop the greens.
- Place everything in an enamel pan. Add mayonnaise and stir.
- Dilute with cool boiled water to a suitable thickness. Put salt, add citric acid dissolved in a small amount of water. Pour into plates.

- boiled chicken breast – 300 g;
- fresh carrots – 40 g;
- ham – 100 g;
- dill and parsley - a small bunch;
- fresh cucumbers – 300 g;
- young white cabbage – 50 g;
- drink – 1 l;
- ready mustard – 1 tsp;
- green onions - a few feathers;
- water – 0.5 l (or to taste);
- salt;
- vinegar - to taste.
- Cut the breast fillet and ham into small cubes.
- Chop the cabbage thinly, lightly salt, and knead with your hands until soft. Only white cabbage is suitable, and young, still green.
- Grate the carrots and cucumbers on a medium grater.
- Finely chop the greens and onions.
- Dilute the mustard with a small amount of kefir.
- Place all ingredients in a saucepan, add mustard and salt. Pour the drink. Stir well. Pour in cool water, making the okroshka as thick as you like. Add vinegar, stir. Serve chilled.
Okroshka with chicken on mineral water
- boiled chicken breast – 300 g;
- mineral water, not very carbonated, – 1 l;
- reddish radish – 50 g;
- boiled potatoes – 300-350 g;
- fresh small cucumbers – 150 g;
- hard-boiled eggs - 3 pcs.;
- sour cream – 200 g;
- young greens - a small bunch;
- salt;
- ready mustard – 1 tsp;
- vinegar or citric acid - to taste;
- green onions - a few feathers.
- Cut the cooled boiled skinless breast into small cubes.
- Cut the potatoes and cucumbers into the same cubes. It is better to grate the radishes, then the taste of the okroshka will be most expressive.
- Chop the eggs with a fork.
- Finely chop all the greens.
- Mix mustard with sour cream.
- Place all ingredients in a saucepan, add sour cream and mustard, stir.
- Continuing to stir, pour in the mineral water evenly, making the okroshka the thickness that suits you. Add some salt. Add vinegar or citric acid.
Note to the hostess
All products for okroshka must be one hundred percent chilled, otherwise it will quickly turn sour.
Cut vegetables into similar pieces. This affects not only the appearance of the dish, but also its taste.
If you plan to prepare a lot of okroshka, do not mix all the chopped products with the liquid at once. Let anyone put this typical salad on a plate and dilute it with liquid to a suitable thickness.
Serve the okroshka cool, so immediately after making it, place it in the refrigerator for at least one hour.
