Fluffy kefir donuts in 15 minutes; yummy from youth

Fluffy donuts made with kefir in 15 minutes - a yummy treat from youth

Who doesn't have a weakness for donuts?! The crumb is like fluff, a delicious crust, sprinkled with sweet powder... This is an impossible temptation. Unfortunately, I don’t have to cook them and kefir pancakes like fluff, and I don’t cook my beloved cinnamon rolls so often, because I need to save my figure. By the way, I saw a recipe for such a sweet made with kefir - I tried it and remembered that we ate such a yummy dish back in childhood. What’s most exciting is that they are prepared in almost 15 minutes.

The drink is an absolutely universal product, put it in any baked goods and it will turn out with a bang! They cannot be compared with the products sold in establishments. Well, I present to you various options for making donuts using this fermented milk product - with and without yeast, also my grandmother’s recipe.

So, prepare the drink and other usual products and let's start cooking...

Fluffy kefir donuts without yeast (prepared in 15 minutes)

You can make this delicious dish without yeast. This way we will save time and simplify cooking. This will not affect the taste of the donuts in any way. They turn out just as porous and crispy. Therefore, take just 15 minutes and enjoy the delicious pastries.

Ingredients:

  • drink - 400 ml;
  • flour - 400 g;
  • a packet of baking powder (12-15 g);
  • testicle - 2 pcs;
  • sugar - 3 tbsp;
  • vanilla sugar - 1 sachet;
  • salt - 1/3 tsp.

Manufacturing:

1. Pour the drink into a deep bowl (it should not be cool), and beat the eggs into it. Then add sugar, salt, vanilla sugar. Mix this whole mass well.

You can add a little more sugar if you are a gourmand.

2. Sift the flour into a separate bowl and mix it together with the baking powder. Now add this bulk mixture evenly to the kefir mixture.

3. Stir well so that there are no lumps. How do you know when the dough is ready? It should turn out a little thicker than on pancakes.

4. Let's form donuts using 2 spoons, previously soaked in water (so they will turn out porous and airy). And fry them over medium heat so that they have time to fry inside and out. If you fry at the highest temperature, they may not cook from the inside.

5. This is how they look finished!

Puffed kefir donuts made with yeast

Here is another recipe for this sweetness. But this time they are yeast. They take a little longer to prepare and the result is just as beautiful. Keep in mind that yeast dough loves warm ingredients. Therefore, remove the drink and eggs from the refrigerator in advance, and you will have to heat the butter.

Ingredients:

  • 1 liter of kefir;
  • 1 packet of yeast (11 g)
  • 1 testicle;
  • 2 tbsp. Sahara;
  • 1/2 tsp. salt;
  • 2 tbsp. melted butter;
  • 1 kg. flour.

Manufacturing:

1. Whisk together the egg, sugar and salt. Then add the warm drink, yeast and stir.

If you want the donuts to remain soft longer, take the least fatty drink.

2. Add the sifted flour and knead the dough with your hands. After this, add melted butter and knead again. Place the resulting dough in a warm space and cover. Over time, it should double.

3. Place the dough on the table and divide it into pieces - donuts. Then stretch the donut by the edges to form a hole in the center. And leave the resulting products to rest for half an hour.

4. It is not allowed to fry them over low heat, as they will absorb a lot of fat and be greasy. The finished donuts do not need to be stacked on top of each other. You need to let the fat drip off, so place them on a paper towel.

Fried donuts in a frying pan - a regular recipe like grandma's

And here is another frisky recipe for “rings” - delicacies from my youth. Our grandmothers prepared donuts according to this recipe, putting them together with jam or jam. How we adored, as children, to enjoy savory fried...

Ingredients:

  • 250 ml kefir;
  • 1 testicle;
  • sugar to taste;
  • a pinch of salt;
  • 0.5 tsp soda;
  • 3 tbsp vegetable oil;
  • 2.5-3 cups of flour.

2. So, the finished dough does not have to stick to your hands, and you shouldn’t add a lot of flour, but it’s better to add it while rolling. Roll out the dough into a layer 1 cm wide, take a glass and cut out circles. Also make a small notch in the center.

3. Pour oil into the frying pan and let it heat up. Then carefully lower the donuts. Do not fry them at a low temperature, or at a very high one either. Average temperature is just right.

  • eggs – 2 pcs.;
  • wheat flour – 400 g;
  • baking powder – 12 g;
  • vanilla sugar – 12 g;
  • salt to taste;
  • vegetable oil – 200 ml;
  • sweet powder – 70 g.

Manufacturing method:

  1. Pour the drink into a deep bowl and beat in the eggs. Add salt, sugar, vanillin. Mix thoroughly with a mixer (ordinary whisk) until a homogeneous mixture is obtained.
  2. Flour with baking powder, previously sifted through a sieve, place in a bowl with the acquired consistency. Mix quickly. You should get a homogeneous dough without lumps or clots. The mixture will come out like pancake batter – neither thick nor watery.
  3. Heat the oil in a deep, heat-resistant bowl with a thick bottom.

If you don’t have the special syringe needed to shape traditional donuts, you can use two teaspoons.

Scoop the dough with a spoon and drop it into the hot oil, using the second spoon to help form careful balls, which after baking will significantly increase in volume and become fluffy.

  • Place the finished donuts with a slotted spoon on paper towels to remove excess oil. Sprinkle with sweet powder through a strainer. Serve hot. If desired, fill with a pastry syringe. Berry jam, caramel, chocolate sauce are perfect.
  • Frisky kefir donuts are the softest and fluffiest

    What makes this recipe unique is that it takes little time to make the donuts. It will become a true lifesaver if guests suddenly appear on the doorstep or if there is a desire to amuse your loved ones with a delicious dessert for tea. The speed of production is due to the fact that no additional time is required for infusion or rising of the dough: the ingredients are quickly mixed. You can start baking right away.

    Required products:

    • drink of any fat content – 250 ml;
    • high-grade wheat flour – 2.5 tbsp;
    • sugar – 50 g;
    • chicken eggs, large – 1 pc.;
    • baking soda – 5 g;

    How to make donuts with kefir (regular recipe with photos of fluffy baked goods):

    1. Pour the drink and oil into a comfortable deep vessel. Drive in the egg. Add sugar and salt. Mix the mixture by hand (using a mixer) until smooth.
    2. Carefully sift the flour, previously mixed with cinnamon, citric acid and soda, with a sieve. Pour into kefir mixture.

    Sifting the flour will remove random impurities, caked lumps, and saturate the flour with oxygen.

    This will ultimately add even more fluffiness to the donuts. Mix quickly, carefully and painstakingly until you obtain a homogeneous, lively, soft dough.

  • If you have free time, you can create everything as {instructions} instruct: roll out a thick layer of dough on the table, use a round shape with sharpened edges (about 8 cm in diameter), cut out circles from it, and cut out much smaller circles in the center of them. The result of this slow and interesting process is the most truly traditional donuts. If there is no time for aesthetic creativity, then you can use a different, simple method. Place the resulting kefir mass on a previously oiled table. For convenience, your hands should also be lubricated with vegetable fat. Tearing off small pieces the size of a chicken egg from the dough, quickly roll them into round balls.
  • Heat a sufficient amount of vegetable oil in a frying pan, cauldron or saucepan with high sides. The fire should be set to medium. This will ensure a fairly quick, even frying of the donut and will avoid unnecessary burning. Take the dough ball in your hands, press it lightly, pierce a small hole in the center with a huge finger and, slightly stretching it moderately in all directions, carefully lower it into the bubbling oil. When one side of the donuts is covered with a golden crust, you should quickly and carefully turn them over.
  • Remove the fried pastry with a slotted spoon. Transfer to napkins to absorb excess fat from the surface. Sprinkle the top with sweet powder or glaze. The result is very fluffy, delicious donuts; no one will even notice that they are cooked with kefir in just a couple of minutes!

    Kefir donuts in 15 minutes

    Modern reality gives us frisky food, you can buy baked goods on any corner, and sweet donuts have captured the love of almost everyone and almost everyone. But even if street food from fast food is tasty, this does not mean that it is healthy and harmless. You can make kefir donuts in 15 minutes at home. Spend a little of your own precious time, and on your table you will find such delicious, piping hot delicacies that you wouldn’t be afraid to give to a child, and your husband will once again rejoice at his wife’s thriftiness. Spend a little more time on the baking given to us, experiment with glaze, sweet or confectionery toppings, and then there will be a queue for your donuts.

    Kefir donut recipe

    • Drink (preferably not the freshest, the more sour the better) - 1 glass
    • Sugar - - 4 tbsp. spoons
    • Soda - 1 teaspoon
    • Chicken egg - 1 pc.
    • Salt - on the tip of a knife
    • Butter - 50 g (we will add it to the dough)
    • Vegetable oil for frying - 1.5-2 cups
    • Flour - 4 cups
    • Sweet powder for serving
    • Vanilla - 1 teaspoon

    How to make a donut with kefir in 15 minutes

    Break 1 chicken egg and mix with sugar.

    Melted butter (50 g) must cool to room temperature.

    Add warm drink. Remove the drink from the refrigerator in advance so that it is at room temperature.

    The flour must be sifted in advance to make the kefir donuts more fluffy. Remember that you definitely need to add soda.

    Knead a soft, flexible dough using kefir.

    The dough is ready for making donuts. Now we will need a rolling surface and a rolling pin.

    Cut off a small lump of dough and roll it into a sausage.

    Cut the sausage into small lumps. Press them down lightly with your hands so that the cakes come out 0.5 - 1 cm wide.

    Now you need to create a hole in any donut. The bottle cap is comfortable to use. For example, it could be a cap from an ordinary plastic bottle (1.5 liter), I found an even smaller cap (from my bottle with vanilla essence). You can create a hole with a knife or not create one at all (you will end up with donuts without a hole).

    We squeeze out the circle using the lid, do not throw away the squeezed out piece, crumple it into a ball again and can be used to make subsequent donuts.

    Place the resulting pieces on a surface dusted with flour. The dough for kefir donuts is delicate, you need to work with it very carefully.

    For frying, pour vegetable oil (1.5-2 cups) into a saucepan (or a very deep frying pan). Donuts should be completely covered with oil, floating in it.

    Perfectly browned donuts on one side, turn them over with a slotted spoon or a fork to the other side. When the baked goods look golden brown on all sides, remove them from the frying pan onto a paper napkin so that the excess oil is absorbed into the napkin and the donuts have the least amount of calories.

    In 15 minutes, tender, tasty, fluffy donuts are ready. Without wasting time on rising yeast dough, you can prepare delicious pastries for tea. Bon appetit!

    Donuts can be sprinkled with sweet powder or glazed - to your taste!

    I would be glad to receive comments on this recipe and to look at the photo to see what kind of donuts you came out with.
