Making meatballs with rice is not tricky and quite common. They are usually prepared from homemade minced meat (beef + pork), but now on our website we have a dietary and low-calorie version of this delicious dish, which is loved by everyone, young and old. The main ingredient of our hedgehogs will be turkey breast fillet; this meat has good gastronomic properties and does not contain fat or veins. So let's get started quickly.

Cut the turkey breast into pieces and pass through a meat grinder. Place it in a deep dish. I always take only a whole piece and cook the minced meat without the help of others, to see if they put enough in it.

Add to the minced meat 1 chicken egg, finely chopped onion (half) and garlic, 1 teaspoon of salt, khmeli-suneli seasoning and round rice boiled until half cooked.

Mix all ingredients thoroughly and set aside. While the minced meat is soaking, let's start frying.

Cut the tomato into cubes, peel the carrots and grate on a large grater. Also, finely chopped half of an onion left over from making minced meat for meatballs will be fried.

Heat 2 tablespoons of olive oil (vegetable oil) in a frying pan and add vegetables in the order of onions, carrots, tomatoes. Fry them stirring for 5-7 minutes over medium heat.

Add 2 tablespoons of tomato paste to the frying. Continue cooking, stirring, for another 3-5 minutes.

Using your hands, form the minced meat into large round meatballs and place them on top of the fry. Add bay leaf, dark aromatic pepper and optional herbs, such as basil. Pour hot water (approximately 200 ml) over the meatballs so that it covers them halfway, cover with a lid and simmer for approximately 20 minutes. Then turn each meatball over and simmer covered for another 10 minutes.

Serve ready-made meatballs with turkey rice with ordinary side dishes (pasta, potatoes, buckwheat) and vegetable salads.
