Recipe for Fish Pie with Rice:

1. Preheat the oven to 180C. Grease the bottom and sides of the one-piece mold with vegetable oil.

2. If you are using fresh fish, boil it in boiling water with bay leaf, pepper and salt for 7-9 minutes, covered. Then remove from the water, cool, remove the bones and disassemble into small pieces. If you are using canned fish, simply drain the water or oil.

3. Boil and chop the eggs for the insides. Chop the green onion quite thinly.

4. Pour 2 cups of boiling water over the rice, add salt, bring to a boil, reduce heat to low, cover and cook for 10 minutes.

Step-by-step recipe with photos

I wanted to treat myself to a pie, and even with fish. I came up with the recipe myself, so I wasn’t completely sure of the end result, after the test my husband and I took, I hasten to share. The pie was a success and even my non-fish lover found it quite tasty.

Knead the dough: dry yeast – 1 tsp; flour – 500 gr; drink – 180 ml; water – 180 ml; salt – 1 tsp; vegetable oil – 3 tbsp; bran – 1 tbsp. (not necessarily). This recipe was used as a base with minor changes.

The configurations were that instead of milk, this time I used a drink, I took 350 grams of premium flour and 150 grams of 1st grade, you can only use the highest grade, it will not affect the outcome. Plus I added a little bran to the dough. The bread maker was working on the kneading, as always)

Cover to prevent it from getting too windy and leave to ferment for 1.5 hours.

Then we take it out and divide it into parts, I left one small part for decoration and two for the bottom and top. I have a large pie pan.

I sprinkled the table with flour and rolled out one part quite thinly for the bottom, sprinkled the mold with flour and placed the dough in it. Cover the rest of the dough from airing.

Add moderately boiled rice and chopped eggs.

Next, chopped raw fish, I have pink salmon. Sprinkle with salt and fish spices as desired.

Then chopped greens and raw onions.

Roll out the second part of the dough, cover the pie with it, turn the edges down, decorate as desired. We make punctures in the dough to allow steam to escape and brush the top with yolk diluted with water.

Bake in an oven preheated to 230 degrees, after 10 minutes reduce the temperature to 180 and cook until golden brown for about 15-20 minutes.

Take the finished pie out of the mold and cool on a wire rack, grease the top with butter and cover with a towel for 5-10 minutes.

Everything was perfectly baked and soaked in the most delicious juices. Bon appetit!

Ingredients for making a pie with fish and rice from yeast dough (for a mold with a diameter of 22-24 cm):

  • milk – 250 ml
  • sour cream – 50 g
  • butter – 50 g
  • fresh compressed yeast – 12 g
  • sugar – 1 tbsp.
  • salt – 1 tsp.
  • wheat flour – 500 g
  • chicken egg – 1 pc. (for lubrication)

  • Short grain rice – ¾ cup
  • fish fillet (no matter what kind of fish you like) – 350 g
  • onion – 1 pc.
  • butter – 30 g
  • fresh herbs - a small bunch (optional)
  • salt, pepper - to taste

Pie with fish and rice made from yeast dough - recipe:

Melt the butter and set aside to cool. Heat the milk in the microwave or on the stove until it reaches body temperature or a little more (basically, the temperature does not have to be more than 40 C). Pour a tablespoon of sweet sand into warm milk and add fresh yeast. Stir with a whisk and leave for 5 minutes to activate the yeast.

After 5 minutes, add the cooled butter and sour cream (any fat content) to the bowl. Stir with a whisk.

Mix flour with salt and sift. Add flour to the watery ingredients in small portions.

Knead the yeast dough for the fish pie. First mix it with a spoon or whisk, and as the dough begins to thicken, start stirring with your hands.

Once the dough comes together, transfer it to a work surface and knead for 5 minutes or more. The dough should become elastic, homogeneous, soft and flexible. While kneading, you can lightly dust your work surface with flour, but just be careful!

Place the purchased smooth dough ball into a bowl greased with vegetable oil. Cover the bowl with film or a damp towel and place it in a warm space (if your house is quite warm, then just leave the bowl on the desktop) for 1 hour so that the yeast dough rises.

Meanwhile, prepare the fish pie filling.

First, boil the rice in broth or water until completely cooked. Place it on a sieve and leave to cool slightly.

Remove skin and bones from the fish (if any) and cut into small cubes.

Chop the onion as finely as possible. Also finely chop the greens.

In a bowl, combine the now cooled rice, fish, onions and herbs. Melt the butter and also add to the filling. Season the mixture with salt and pepper.

Stir. Now the fish inside for the pie is ready!

After an hour, take out the dough; in the intervening time it should have doubled in volume.

Place the yeast dough on the work surface, lightly knead and divide into 2 unequal parts (somewhere 2/3 and 1/3).

Set the smallest part of the dough aside, and roll out the larger part into a circle with a diameter larger than the baking dish itself, so that you can form the sides. The rolling thickness is about 5 mm.

Using a rolling pin, transfer the dough into the pan and form sides.

Place the fish filling with rice on the dough, level it and compact it.

Roll out the smallest part of the dough and cover the filling.

Pinch the edges of the dough together (it’s very convenient to do this with a fork), carefully cut off any excess dough (if you wish, you can cut out a “fish” from the scraps you purchased). Let the formed cake rest for 10 minutes.

Preheat the oven to 180 C. Brush the “rested” pie with a beaten egg. Using a skewer, make several through holes in the dough to allow steam to escape.

Place the fish and rice pie in a hot oven and bake for 35 minutes.

Allow the finished baked goods to cool slightly.
