Composition of mulled wine

In the traditional version, the following ingredients are used:

  • reddish wine – 750 ml;
  • water – 100 ml;
  • sugar – 1 tablespoon;
  • grated nutmeg - 1 pinch;
  • ground ginger – 1 teaspoon;
  • cloves - 5 buds;
  • cinnamon – 1 stick (or half a teaspoon ground).

The indicated amount of ingredients is enough to make 4-5 servings. You can experiment with the composition of homemade mulled wine by adding other spices and fruits that you like. But if you are making mulled wine for the first time, I advise you to stick to the usual recipe. Later it will be easier to compare the taste of your own versions with the original.

To create non-alcoholic mulled wine, it is enough to replace the wine with grape juice, otherwise the production development remains constant.

Wine for mulled wine

Reddish table, dry, sweet and semi-sweet wines of the average price range are excellent for making mulled wine. For example, Merlot, Cabernet, Cahors, Kindzmarauli, Khvanchkara, etc. It is better to avoid fortified wines, because when they are heated, a nasty smell of alcohol appears, spoiling the memory of the drink.

You can make mulled wine with snow-white wine. In this case, I recommend adding more sugar (3-4 tablespoons), since snow-white wines have the highest acidity.

Development of mulled wine brewing

1. Mix spices in a saucepan and add water.

2. Bring the mixture to a boil, remove from heat. Leave for 10 minutes.

3. Strain the broth through a sieve or cheesecloth.

4. Add wine, spice broth and sugar to the pan.

5. Heat over low heat to 65-70°C.

Mulled wine should not be brought to a boil. When steam and the first bubbles appear, the drink must be removed from the heat.

6. Cover with a lid and let sit for 5-10 minutes.

7. Serve roast in large transparent glasses or clay cups that retain heat.

Clarification: if you use store-bought fruits, add only the pulp to the mulled wine. To increase the shelf life, the surface of oranges, lemons and apples is treated with wax or a special polymer film is applied. The wax can be removed by holding the fruit in warm water for 3-5 minutes. Getting rid of film at home is unrealistic.

Before serving, mulled wine must be strained so that pieces of spices do not float in the drink.

How to create non-alcoholic mulled wine

Mulled wine does not necessarily have to be alcoholic - there are many options for those who do not like or do not drink alcoholic beverages at all. Typically, non-alcoholic mulled wine is prepared from various juices - apple, cherry and, of course, grape. The extreme option seems to me closer to the unique taste of mulled wine. To make it you will need:

  • 1 l. dark grape juice;
  • 1 cinnamon stick;
  • 3 clove buds;
  • 3 slices (circles) of fresh ginger;
  • 1 orange.

Optional: star anise, dark peppercorns, honey (add at the very end if you like it sweeter).

The manufacturing process is almost the same as in traditional mulled wine. Pour the juice into the pan, add spices and sliced ​​orange. You can mash the orange a little so that it releases the juice. Remove the pan from the heat, without bringing it to a boil, and let it brew. Before serving, do not forget to strain the drink.

How to make mulled wine with orange

Orange makes the drink the juiciest and least strong, and also looks unsurpassed! To prepare orange mulled wine: you will need:

  • 1 bottle of reddish wine;
  • 2 oranges;
  • a couple of lemon slices;
  • 2 cinnamon sticks;
  • 7-8 clove buds;
  • 3 tbsp. l. honey

How to make mulled tea

Mulled wine is not a drink for every day. For those who love its taste, there is a candidate: mulled wine-flavored tea. This drink contains neither wine nor juice, but thanks to the addition of spices, its taste is reminiscent of real mulled wine. Ingredients:

  • dark tea;
  • 1/2 orange;
  • 1/2 lemon;
  • cinnamon;
  • carnation;
  • honey.

Pour hot water over dark tea. Add a couple of slices of orange and lemon or the juice of half any fruit, as well as spices, to the teapot (or directly into the cup). Let it brew. Before use, add honey to taste.
