I've been making this chocolate cheesecake pie for years and everyone in our family absolutely loves it. Of course: the most delicate curd interior combined with crispy chocolate streusel will hardly leave anyone indifferent. And add lightness and ease of preparation to the wonderful taste of the finished dish, and you have a perfect dessert for any day, even for a holiday table.

It is better to serve this chocolate-curd pie, which is also called chocolate royal cheesecake, after it has cooled completely. This makes it easier to cut into portions. But this dessert is also great when warm – it is even more tender and fragrant.

Why is the pie called Peat? Everything is simple and transparent: the dough for it is a crumbly black-brown crumb, which on the outside resembles peat. During baking, the bottom layer of dough is saturated with the moisture of the inside and thickens, while the surface of the pie remains the same crumbly and crispy.

Making a dish step by step:

The recipe for this chocolate-curd pie includes the following ingredients: wheat flour (premium or first grade), butter, sugar, unsweetened cocoa powder, cottage cheese (I used 5%, but any fat content will do), medium-sized chicken eggs, sour cream (I used 20%, but you can use more fat), corn starch (or 40 grams of potato starch) and vanillin for flavor (if desired, replace with a teaspoon of vanilla sugar or do not add at all if you don’t like it).

You can immediately turn on the oven to heat up to 180 degrees, because the dough and interior for the chocolate-curd pie are made very quickly. You can create the filling first, and then the dough, or vice versa - this is not so important. Let's start with the curd interior, for which we use the products at room temperature. To do this, put all the ingredients (cottage cheese, eggs, sour cream, sugar, vanillin and starch) into a suitable sized container.

Blend everything with an immersion blender until smooth and homogeneous. If you don’t have such a blender, rub the cottage cheese through a sieve twice so that there are no lumps, and then thoroughly stir everything with a spoon or mixer. The curd inside is ready.

Making chocolate dough. You can do it not only in a food processor (the attachment is an iron knife), but also simply with your hands. Sift wheat flour and cocoa powder into a container. Add sugar. Mix everything thoroughly by hand or, as in my case, for about 30 seconds in a food processor.

All that remains is to add soft butter, which we previously take out of the refrigerator and cut into small pieces.

As a result of grinding with your hands or scrolling in a food processor, you will get this chocolate, slightly oily crumb. The dough is ready.

Let's start assembling the chocolate cheesecake cake. To do this, take a springform pan with a diameter of 23-26 cm (mine is 24 centimeters), cover the bottom with baking paper. Pour half of the chocolate chips into the mold and smooth it out with your hands.

Pour the insides of the curd, which comes out like low-fat sour cream in the mixture.

Sprinkle the other half of the chocolate chips on top and bake the pie at 180 degrees on medium for about an hour. The baking time for the pie depends on the diameter of the mold used and the characteristics of your oven.

The peat pie will be ready when the middle does not wobble when you tap the sides of the mold. We take it out of the oven and let it stand on the table for 30 minutes.

Then we remove the walls of the mold and cool our chocolate pie with cottage cheese one hundred percent. Although it can already be cut and eaten warm.

After cooling completely, store the peat pie in the refrigerator. By the way, it becomes even tastier the next day!

Chocolate-curd analogue of Zebra cake

To prepare a breathtakingly tasty and appetizing pie with a marble pattern, you will need cottage cheese and chocolate dough. In this dessert, the tender brown layer makes a harmonious tandem with the creamy texture of the curd part.

There are many varieties of mutual arrangement of two masses. During baking, the wet curd mass sags, and the airy sponge cake increases in volume. For example, a marble cake, a pillow cake, or a quilt cake. Curd dough behaves so unpredictably that it is impossible to get two completely similar pies.

Ingredients

For the chocolate mass:

  • butter – 100 g;
  • cane sugar (you can use ordinary snow-white sweet sand) – 100 g;
  • premium wheat flour – 90 g;
  • cocoa powder – 2 tablespoons;
  • chocolate – 80 g;
  • chicken egg (selected) – 2 pieces;
  • baking powder – 10 g;
  • vanillin – 1 packet;
  • salt - a pinch.

For the curd part:

  • cottage cheese (take a richer product) – 200 g;
  • sweet sand – 50 g;
  • chicken egg – 1 piece;
  • vanilla – small portion (the amount depends on the type of flavoring).

Manufacturing method

  1. Melt the crushed chocolate using any convenient method (for example, in a water bath). Don't overheat. Add cubes of soft butter to the melting pieces of chocolate. Achieve the combination of goods into a homogeneous mass.
  2. Break the eggs into a deep bowl and add sweet sand. Add some salt. Beat the mixture with a hand whisk or mixer at low speed.
  3. Sift flour, baking powder and cocoa powder into a separate container. Stir.
  4. Add egg foam to the butter-chocolate mixture. Stir. Make sure that the chocolate mass is not hot (otherwise the eggs may curl).
  5. Sift flour, baking powder and cocoa powder into a separate container. Stir well until the color is even. Pour in the watery ingredients mixture. Make a homogeneous mass.
  6. To prepare the curd part, mix all the ingredients for the inside until smooth (cottage cheese, sugar, egg, flavoring).
  7. Place a small portion of the chocolate batter into the prepared pan (enough to cover the bottom). Place a spoonful of curd inside in several places. Pour the dough on top and again place the curd filling in places.
  8. Pour the remaining chocolate mixture so that it ends up on top of the cottage cheese. Dip a wooden skewer into the pie and let your imagination run wild (move the skewer all over the pie, drawing a random pattern).
  9. Place the pan in a hot oven and bake the chocolate cheesecake at 180 degrees for about 40 minutes (depend on the individuality of your own oven).

Cool the perfectly risen and baked dessert on a wire rack. In cross section it is beautiful!

Tips for the recipe

Chocolate mixes perfectly with orange zest. Add a teaspoon (not heaped) of crushed orange, lemon or grapefruit zest to the dough.

To make the pie tastier, choose cottage cheese with the highest percentage of fat content. It's better to take a homemade product.

You can add 40 g of semolina (or starch, flour) to the curd filling. The mixture will become thicker and can be formed into balls.

Neutral products do not significantly affect the taste of the dish, but the design of the pie will change. Balls can be laid out not only in a random order, they can be arranged in a circle or form a symmetrical pattern.

To vary the taste of the dessert, add coconut flakes (50 g) to the curd filling.

If instead of chocolate you add more cocoa powder to the dough (3 or 4 spoons instead of 2), it will turn out very tasty. At the same time, the cost of the cake will be reduced and the manufacturing process will be simplified.

If desired, you can create a berry layer. Cherries are especially good in this dessert, but currants, raspberries, and canned peaches also work well.

Tsar's cheesecake

According to the proposed regular recipe, chocolate curd jellied pie comes out all the time! The unique taste of the dessert is worthy of a royal table. The cottage cheese interior is like the most delicate soufflé, and the chocolate coating delights with its softness and pleasant taste. This wonderful pastry can be prepared in the oven or slow cooker.

You will need the following products:

  • chicken egg - 2 pieces;
  • sweet sand - 2 cups;
  • cocoa powder – 3 tablespoons;
  • sour cream (preferably with the highest percentage of fat content) – 1 cup;
  • wheat flour (premium grade) – 1 cup;
  • butter – 2 tablespoons;
  • salt - a little bit.
  • cottage cheese (fat content at least 9%) – 500 g;
  • chicken egg – 3 pieces;
  • sugar – 130 g;
  • semolina – 3 tablespoons;
  • vanilla sugar – 1 sachet.
  1. Prepare the filling. Pour half the sugar into the cottage cheese and mash well. Break the eggs into a deep bowl, add the remaining sugar, beat the mixture with a mixer. Combine light egg foam with curd mass, add vanilla sugar and semolina. Use a mixer. A fairly watery mixture will not thicken much.
  2. Do the test. Beat the eggs with sweet sand until they become snow-white foam and the sweet crystals are completely dissolved. Mix sour cream with soda, pour it into sweet egg foam. Add butter melted in a water bath to the mixture (be sure to check that the butter is not hot).
  3. Stir. Sift the flour together with cocoa powder and baking powder (if you are not using soda). Add the dry ingredients into the watery mixture in a few additions. Stirring until the mixture is homogeneous.
  4. Pour the chocolate batter into a parchment-lined baking pan (if not using paper, grease the pan). Pour the curd filling into the center of the dough (it does not need to be further leveled or distributed, it will spread without any help and take the correct position in the middle of the pie).
  5. Place the pan in an oven preheated to 180 degrees and bake the cake for about an hour.
  6. Check the readiness of the pie with a wooden skewer. A stick inserted into the chocolate part must remain dry. If you are cooking in a slow cooker. Pour the chocolate and curd mixture alternately into the greased bowl of the machine. Set the “Baking” mode and the cooking time to 1 hour 10 minutes (depending on the model of your device).
  7. Leave the finished “cheesecake” in the mold for half an hour.
    Then remove and cool on a wire rack. The royal dessert is ready to be served! But the chocolate pie with curd insides will taste better if you keep it in the refrigerator for at least 2 hours.

Peat pie with cottage cheese and chocolate

The chocolate layer does not have to be poured. This recipe involves the introduction of butter and flour crumbs. As a result, the crumbly dough successfully contrasts with the solid interior. For the indicated amount of ingredients, you need a baking dish with a diameter of 26 cm (or a baking tray with sides of a similar area).

For the curd layer you will need the following products:

  • chicken egg (medium size) – 4 pieces;
  • cottage cheese (choose a product with the highest percentage of fat content) – 400 g;
  • sour cream – 200 g;
  • sugar – 150 g;
  • potato starch (you can use corn or wheat flour) – 2 tablespoons (with a small slide);
  • vanilla sugar – 1 teaspoon.

Manufacturing method:

  1. Make the base of the pie. Grind soft butter (250 g) with sugar (100 g). Add a mixture of flour (400 g) and cocoa powder (4 heaped tablespoons). Grind everything into crumbs - this is easy to do with your hands.
  2. Work on the curd insides. Mix the pureed cottage cheese with sweet sand. Add the other ingredients created for the inside to the mixture and puree the mixture with a blender.
  3. Pour half of the butter-flour crumbs into a pan lined with parchment and smooth out the layer. Place the curd filling on top and spread the mixture moderately with a spoon or spatula. Cover the filling with the remaining crumbs. Level it out.
  4. Place the pie in the oven, preheated to 170 degrees. Bake for 1 hour.
  5. Remove the baked goods from the oven. Leave in dessert form and cool at room temperature.

Carefully place the cake released from the mold onto a beautiful plate. Peat pie with cottage cheese and chocolate does not need additional decoration. The shaggy surface looks appetizing.

If you want to amuse your family with not only delicious, but also unusual pastries, then you should pay attention to the recipe for chocolate pie “Pillows with Cottage Cheese” or “Quilt”. The baked goods received such an unusual name for the typical pattern that appears when two types of dough are combined.

Ingredients for chocolate dough:

  • Flour – 160 g;
  • Milk – 50 ml;
  • Vegetable oil – 50 ml;

  1. In order for the chocolate dough to be as smooth as possible, the whites and yolks must be beaten separately.
  2. Add a couple of tablespoons of sugar to the yolks, beat with a mixer until fluffy snow-white foam.
  3. Pour in milk and vegetable oil, beat again.
  4. In another bowl, mix the dry ingredients: sifted flour, cocoa and baking powder.
  5. Beat the egg whites with the remaining sugar until a thick mixture forms. As a rule, they should not pour out of an inverted bowl.
  6. Add the egg-butter mixture and beaten whites to the dry ingredients, carefully mix everything with a wooden spatula, moving it up and down. The result should be a soft, not very thick chocolate dough. If the dough is runny, you can add a little more flour or starch.
  7. The second type of dough - curd - is much easier to create. Using a blender, achieve a homogeneous mixture by mixing cottage cheese, sugar and sifted flour in a clean bowl.
  8. Pour the chocolate dough into a clay or glass baking dish lined with lightly oiled paper and smooth it with a spoon.
  9. Fill a pastry bag with light curd dough (if not, an ordinary plastic bag will do) and, making a small cut in the corner, place it on the surface of the chocolate layer in the form of a grid.
  10. Bake the chocolate pie with cottage cheese in the oven for about 50 minutes at a temperature of 180 C. Under the influence of hot air, the chocolate dough rises perfectly and the surface of the pie actually becomes like a quilt or pillows.

  • Butter – 200 g;
  • Flour – 4 tbsp;
  • Sugar – 200 g;

  • Cocoa – 4 tbsp;
  • Baking powder – 1 tsp;
  • Cottage cheese – 2 packs;
  • Sugar – 150 g;
  • Testicles – 3 pcs;
  • Starch – 10 g;
  • Vanillin - sachet;

In the chocolate pie prepared according to this recipe, the curd inside is more like a soufflé. Framed with crumbly chocolate dough, it looks simply amazing. You can bake a chocolate pie with cottage cheese, as in the photo, in the oven or in a slow cooker.

  1. Cut the butter into small pieces, put it in a bowl and place it in a water bath. The oil should become watery. The product can be replaced with margarine, but it is better to stick to the recipe. With butter, the pie will turn out the most tender and creamy.
  2. In a separate bowl, whisk the eggs with a pinch of salt.
  3. Continuing to beat, add sugar little by little.
  4. Combine the beaten eggs with the melted butter and mix well.

In a pie that has not yet cooled, the curd inside may be runny. There is nothing terrible about this. It is better to first cool the finished product at room temperature, then put it in the refrigerator for 30-60 minutes.

✓ 250 g of cottage cheese of any fat content;

✓ one fresh chicken egg;

✓ three tablespoons of sweet sand;

✓ 5 grams of vanilla sugar (or vanilla on the tip of a knife);

✓ one teaspoon of potato starch.

For making biscuits

✓ one fresh chicken egg;

✓ 250 grams of sweet sand;

✓ 5 g vanilla sugar;

✓ a glass of kefir with a fat content of 2.5% or higher (250 ml);

✓ 320 grams of sun wheat flour;

✓ 1.5 teaspoons baking powder (one sachet);

✓ two tablespoons of cocoa powder (can be replaced with chocolate);

✓ 150 ml of refined and deodorized sunflower oil.

Crafting recipe

A pie with cocoa consists of two parts: a curd interior and a chocolate sponge cake. Let's start making it with the curd inside (the light part of the pie).

Mash 250 grams of cottage cheese with a fork, add a chicken egg, sweet sand and vanilla sugar (for the whole pie you will need a packet of vanilla sugar: we take half of it for the curd part of the pie).

Using a fork, grind all ingredients into a homogeneous mass.

Advice. If the cottage cheese is not paste-like, but dry, it must be mashed with a fork, rubbed through a sieve or minced: it must be homogeneous and soft.

Add a teaspoon of potato starch to the curd mass, mix thoroughly so that there are no lumps. Set the bowl with the curd aside.

To make a dark sponge cake, beat one fresh chicken egg with sweet sand and vanilla sugar (2nd half of the bag).

Pour a glass of room temperature kefir (250 g) into the egg mixture and stir with a whisk.

Add baking powder to the wheat flour, mix and sift through a sieve.

Advice. For baking, it is better to sift the flour at least 3 times: this way it is enriched with oxygen.

Pour the sifted flour into the egg-kefir mixture and whisk until smooth.

Add cocoa powder (you can use instant cocoa, but in this case you need to add less sugar), mix.

Advice. Cocoa powder can be replaced with dark chocolate: the cake will be even more fragrant and delicious.

Pour in refined and deodorized sunflower oil, mix until the dough becomes homogeneous.

Grease a springform baking pan (I use a pan with a diameter of 25 cm) with sunflower or butter. Spread the chocolate dough and smooth it out.

Place the curd mixture on top in a random manner. If desired, we apply patterns on it: with a stick we mix the light and black layers - we get beautiful stains.

Place the curd pie with cocoa in an oven preheated to 180 degrees. Bake for 40-45 minutes.

Advice. If you use a slow cooker, the manufacturing process will be even faster.

Advice. We check the readiness of the cake (as well as any other baked goods) with a toothpick or a wooden stick: if it comes out of the sponge cake dry, it means the baked goods are ready.

Remove the chocolate cake from the oven and let cool. Then remove the springform pan, place the baked goods on a flat dish and cut into portions. Pour a cup of fragrant tea and enjoy.
