Aaaaah! It turned out to be as simple as possible. Gingerbread comes from the word spicy, in ancient Russian “pypyrian” meant “pepper”. And in other languages of the world, gingerbread means peppered cake. In Swedish, for example, it sounds like “peperkaka.” In short, what fun!

But since December is already a difficult month, we will not complicate life for ourselves with caramel and will prepare gingerbread according to the usual recipe. Moreover, they contain both spices and honey, so we have every reason to call them gingerbread.
I started making gingerbread cookies for the new year even before the gingerbread BOOM began. Although I’m not a big fan of spicy sweets myself, with New Year’s gingerbread I just love the process of fiddling around: cutting out beautiful shapes based on a specific theme from the dough, baking them to fill the house with the spicy smell of the holiday, and then painting them with colorful sweet icing.
I'm not a great expert in glaze painting, and I don't have time to learn. So everything is primitive and simple for me.
If you like and want something more complicated, I will refer you to this video, in which you will make sure that painting gingerbread cookies is completely accessible, and at the same time look at a nice example of how thick the glaze should be.
If you don’t have such a narrow nozzle for a pastry bag, you can create an envelope from ordinary baking paper (the kind in which grandmothers used to sell us seeds in a bag, remember?). Or take a disposable pastry bag and cut off a corner.
Gingerbread recipe for the new year 2019:
These ingredients make about 50 gingerbread cookies.
Compound:
- flour - 350 gr.
- sugar - 160 gr.
- ground cinnamon - 5 gr.
- nutmeg - 1 pinch
- ginger - 5 gr.
- cloves - 1 pinch
- soda – ¼ tsp.
- salt - 1 pinch
- butter, cool - 110 gr.
- honey - 50 gr.
- egg - 1 pc.
Everything is simple to make:
- Place all the ingredients in a blender, not counting the eggs, in the order in which they are listed above (cut the cool butter into cubes earlier)
- Mix all the ingredients in the pulsating mode of the blender (several small presses so that the mass does not heat up) until flour crumbs form and pour onto the work surface.
- Make a hole in the center and break the egg into it. Using a fork, mix the flour crumbs with the egg, then use your hands to form the dough into a ball and wrap it in cling film, flattening it slightly. Place in the refrigerator for 30 minutes.
If after introducing the egg the dough remains crumbly, add 1 tsp. cool water until it forms a ball.
Nowadays, you can buy glaze for gingerbread ready-made , or you can make it yourself the old fashioned way.
To make the glaze we will need:
- egg white - 1 pc.
- sweet powder – ≈150 gr. (depends on the size of the protein)
- 3 drops lemon juice
Making the glaze:
- Using a silicone spatula, carefully grind the protein with sweet powder until a homogeneous snow-white glaze is formed.
- We transfer the glaze into a bag and paint our New Year's gingerbread cookies. If desired, you can add a few drops of food coloring.
We use the finished glaze immediately, otherwise it will cool down.
This is the usual recipe for gingerbread for the New Year that you can prepare if you want to keep up with today's generation.

- flour – 360 g;

- soda – 5 g;
- confectionery fat – 180 g;
- molasses – 185 ml;
- icing – 230 ml;
