Pie with saury – 5 delicious recipes

Rybnik is an old Russian dish that was prepared for any day and for feasts in families of various classes. You can make any kind of dough for fish pie - puff pastry, yeast, sour cream or kefir. Now one of the most favorite fishmonger recipes is homemade saury pie. The dish is easy to prepare, very tasty and filling.

The history of fish pie is long-standing; it is believed that pies arose when it was common to use bread instead of utensils. The pie was convenient because it did not require cutlery or dishes. The fish was baked completely in dough. Pies are associated with a holiday, a feast, and are mentioned more than once in the classics of Russian literature as an obligatory attribute of a feast.

Traditional pie with saury

This is a quick recipe for a pie with fried or boiled saury. The dish can be prepared for tea or as a main course for lunch. A closed pie with potatoes and saury is convenient to take with you for a snack to work or outdoors.

It takes 1 hour and 20 minutes to prepare the dish.

Ingredients:

  • fried saury – 400 gr;
  • testicle – 2 pcs;
  • boiled potatoes – 4 pcs;
  • flour;
  • onion – 1 piece;
  • mayonnaise – 100 gr;
  • butter;
  • greenery;
  • salt to taste;
  • soda – 0.5 tsp.

Manufacturing:

  1. Beat the eggs with mayonnaise with a mixer or blender. Add salt, soda and stir.
  2. Gently introduce the flour to the testicles. The mixture should turn out to be thick sour cream.
  3. Grate the boiled potatoes on a large grater.
  4. Grease a baking dish with butter and place half of the dough. Spread the dough evenly over the pan.
  5. Place a layer of boiled potatoes on top.
  6. Remove the bones from the saury and mash with a fork.
  7. Place a layer of fried saury on the potatoes.
  8. Chop the greens with a knife.
  9. Chop the onion into half rings.
  10. Place a layer of onions and herbs on the saury.

A delicious real lunch for the whole family with the main course of jellied pie with rice and saury. The watery pie cooks quickly and does not require the abilities and skills of an experienced chef. Any housewife can prepare a regular kefir dough recipe. The dish can be prepared for tea, for lunch or a festive table.

It will take 1 hour to make the pie.

Ingredients:

  • canned saury without oil – 500 g;
  • onion – 150 gr;
  • flour – 250 gr;
  • sour cream – 100 gr;
  • boiled rice – 150 g;
  • drink – 250 ml;
  • testicle – 3 pcs;
  • vegetable oil;
  • soda – 0.5 tsp;
  • salt.

Manufacturing:

  1. Drain the juice from the canned food and mash the saury with a fork.
  2. Chop the onion and fry in oil until golden brown.
  3. Add onion and rice to the fish, stir thoroughly.
  4. Whisk the eggs with kefir, sour cream, salt and soda.
  5. Sift the flour through a sieve and add to the beaten eggs. Add flour evenly, stirring and whisking until the mixture is watery sour cream.
  6. Line a baking pan with parchment. Place half of the dough. Place the filling on top and fill with the 2nd half of the dough.
  7. Bake the cake in the oven for 40 minutes at 180 degrees. Check for doneness with a wooden skewer - pierce the pie and if the skewer is dry, then the dish is ready.

Yeast pie with saury

Yeast pie with saury turns out juicy and satisfying. The dish can be prepared for tea, for lunch, for a holiday, or taken with you outdoors.

It takes 1.5 hours to make the pie.

Ingredients:

  • flour – 3.5 cups;
  • milk – 1 glass;
  • saury – 1 kg;
  • butter – 100 g;
  • yeast – 30 g;
  • testicle – 3 pcs;
  • dill;
  • salt – 1.5 tsp;
  • sugar – 1.5 tbsp. l.;
  • vegetable oil;
  • ground dark pepper.

Manufacturing:

  1. Clean the fish from bones, entrails, fins and head. Carefully remove the skin.
  2. Cut the fish into small pieces and fry in vegetable oil, salt and pepper.
  3. Dissolve yeast in heated milk.
  4. Add 0.5 tsp to milk. salt and sugar. Add a glass of flour and stir until the lumps disappear.
  5. Place the dough in a warm space for 1 hour.
  6. Melt the butter and add to the dough. Beat two eggs and add to the dough.
  7. Add a glass of flour and thoroughly stir the dough. Grease your hands with vegetable oil and knead the dough.
  8. Chop the onion into rings and simmer until soft in the same oil as the saury was fried in.
  9. Finely chop the dill with a knife.
  10. Leave the fish and onions to cool. Divide the dough into two equal parts.
  11. Place one part of the dough on a baking sheet or in a baking dish greased with vegetable oil.

  • green onions – 1 bunch;

  • hard cheese – 100 g;
  • processed cheese – 100 gr;
  • flour - 4 cups;
  • salt – 1 tsp;
  • soda – 1 tsp;
  • mayonnaise – 150 gr.

Manufacturing:

  1. Mix 2 eggs, sour cream, butter, salt, soda and flour in a bowl. Knead the dough. Roll into a ball and cover with cling film.
  2. Hard boil 4 eggs.
  3. Separate the juice from the canned saury. Crush the fish with a fork.
  4. Grate the processed cheese or crush it with a fork.
  5. Finely chop the onion.
  6. Grate hard cheese.
  7. Grate the boiled eggs.
  8. Mix cheeses, green onions, eggs, mayonnaise and saury. Stir until smooth.
  9. Grease a baking sheet with butter.
  10. Roll out the dough and place on a baking sheet, leaving sides 2-2.5 cm high.

The remaining dough is poured into the filling. Prepare a pie with canned fish and potatoes in the oven at a temperature of 180 degrees for forty-five minutes.

Yeast dough: a hearty dish

Yeast dough obviously requires a lot of time. But the resulting baked goods are fluffy and appetizing. For this pie with saury made from yeast dough, you need to take the following ingredients:

  • two cans of saury;
  • kilogram of potatoes;
  • 5 onions;
  • 70 g butter;
  • 250 ml of milk of any fat content;

  • two cans of fish;
  • 6 eggs;
  • a bunch of green onions;
  • two hundred grams of butter and sour cream;
  • 100 grams of hard cheese;
  • the same amount of processed food, preferably without any additives;
  • four glasses of flour;
  • a teaspoon of salt and soda;
  • 150 grams of mayonnaise.

Break two eggs into a bowl, add soft butter, salt, soda and sour cream. Connect. Then add sifted flour. Knead the dough. It must be covered with cling film to prevent it from airing, and then removed for a while. Four hard-boiled eggs. The fish is removed from the jars and mashed with a fork until it becomes a paste. The processed cheese is put in the freezer in advance, then grated on a small grater. The onion is washed, dried, and then finely chopped. The eggs are cleaned and also crushed using a grater. Do the same with hard cheese.

Everything is connected. Season with mayonnaise and knead again. The baking tray should be greased with a piece of butter. The dough is rolled out and placed on a baking sheet, forming sides.
