Grandma’s recipe “Cupcake-200” 1. Sour cream – 200g 2. Flour – 200g 3. Sugar – 200g 4. Egg – 2 pcs. 5. Soda – 1/2 tsp. 6. Drain oil - 50g IMPORTANT! 1) All ingredients are at room temperature. 2) There is no need to specially extinguish the soda - mix it vigorously with sour cream beforehand and immediately add it to the dough prepared with a mixer (from eggs, sugar and melted butter, for 10 minutes at highest speed or until the sugar is completely dissolved). 3) It is better to stir the dough when adding sour cream with soda and then sifted(!) flour with a spoon/spatula - the dough comes out the most airy. Success!
I baked it in quarantine, instead of sour cream I used thick yogurt, only 50 g of butter. And I replaced the apples (after reading the reviews) with raisins. It turned out delicious. Thanks for the recipe!

My cupcake didn't come out. Very wet inside, almost didn't rise. And then, I didn’t extinguish the soda, because... When slaked, all bubbles come out of the dough before baking. And quicklime soda reacts with acids in the dough. I added 1/3 teaspoon of soda here and there (that’s a lot), taking into account the acidity of sour cream. Maybe the apples were very huge and gave a lot of juice.
Lots of butter, I added 50g, the cake came out luxurious :)

Sour cream cupcake - easy homemade baking. Naturally, any confectionery product can be purchased in a store. But you can literally be sure of the quality of production only if you bake cupcakes at home.
Basic recipe for savory baked goods
The cake batter must be quite thick, quite homogeneous, and have a viscous pourable consistency. You can add any sweet additives to it. The more popular ones are nuts or raisins.
Sour cream makes the dough especially tender and soft. These muffins have a melt-in-your-mouth crumb inside and a hard baked crust on top. They do not lose their freshness and taste for a number of days. But most often they are eaten much faster, so it is better to immediately multiply the portions.
- flour, sugar and sour cream - 1 tbsp each;
- eggs – 2 pcs.;
- nuts – 2 handfuls;
- soda – 0.5 tsp.
- Combine bulk ingredients.
- Add sour cream with eggs. Beat until smooth.
- Grind the nuts with a rolling pin and add to the total mass.
Pour the dough into the mold and bake for no more than half an hour.
Sour cream cupcake in a slow cooker
Even a schoolchild can prepare a sour cream cake in a slow cooker. Simply combine the indicated ingredients in a saucepan, mix, pour the mixture into the bowl of the device and run the appropriate program.
- flour – 1 tbsp.;
- sour cream with sugar - 0.5 tbsp.;
- testicle – 1 pc.;
- butter – 50 gram piece;
- cherry – 100 g;
- baking powder - sachet.
- Remove the butter from the refrigerator until it becomes soft.
- Prepare the cherries.
- Beat the egg with sugar, sour cream and butter.
- Add sifted flour with baking powder. Lastly, add the cherries and mix carefully so as not to destroy the berries.
- Grease the bowl of the device with oil.
- Pour out the dough and smooth it out.
- Launch the “Baking” program.
If the top remains light, then the cake must be carefully removed using a steamer and turned over, leaving for another 10 minutes.
Cooking in silicone molds
Cupcakes in silicone molds are not bad because they are very easy to take out. Iron containers need to be lubricated with oil and spend a lot of time on this, and silicone is a material to which the dough simply does not stick. Lemon gives cupcakes a very interesting flavor.
Required set of components:
- sugar and sour cream - 1 tbsp each;
- flour – 250 g;
- eggs – 2 pcs.;
- butter - 100 gram piece;
- baking powder - sachet;
- lemon – 1 fruit;
- salt, vanillin - to taste.
- Remove the zest from the citrus and squeeze out the juice.
- Beat eggs with sugar, add salt, vanillin, butter, sour cream. Add lemon zest and juice and beat again.
- Add flour with baking powder.
- Pour the thick mixture into the molds, trying to fill no more than a third of them, because the products will rise.
Bake for no more than 20 minutes.
Unique Zebra cake with sour cream
The “Zebra” cupcake with sour cream is very easy to prepare and looks very beautiful.
- flour - at least 1.5 tbsp;
- eggs – 3 pcs.;
- sugar and sour cream - 1 tbsp each;
- cocoa – 1-2 tbsp. l.;
- slaked soda – 1 tsp;
- salt - a pinch.
- Beat the sugar-egg mixture. Pour in sour cream, stir.
- Add soda slaked with vinegar and sifted flour.
- Divide the mass into two parts: throw one as is, add cocoa to the second and mix well.
- Grease the pan with butter and lightly dust with flour.
- Using a small ladle, pour both types of dough into circles.
- If desired, use a skewer to draw patterns from snow-white and chocolate dough.
Bake for approximately 35 minutes. A toothpick inserted into the cake should remain dry if it is completely ready. The finished product looks very beautiful both from above and in section.
Chocolate flavored
Cupcakes with the addition of cocoa or chocolate pieces are a true treat for both kids and adults.
To make such baked goods you will need a minimum of goods:
- sugar, flour and sour cream - 1 tbsp each;
- eggs – 2 pcs.;
- cocoa – 2 tbsp. l.;
- small chocolate bar – 1 pc.;
- soda – 0.5 tsp.
- Combine eggs with sugar and cocoa. Beat.
- Add the other ingredients and the chocolate broken into small pieces. Mix well.

- soda - a pinch;
- cinnamon – 1 tsp.
- Beat the egg with sour cream.
- Combine flour with dry ingredients and add to mixture.
- Mix. Pour into a cup.
- Place it inside and turn on the device at full power.
The specific production time depends on the power of the oven.
How to create with raisins
Raisins in a cupcake are a classic of the genre. Baking such a delicious pie is not at all a problem.
- sour cream and sugar - a glass each;
- flour - about 1.5 tbsp;
- eggs – 3 pcs.;
- raisins – 2-3 handfuls;
- vanilla sugar - to taste;
- baking powder - sachet.
- Steam the raisins with boiling water. This way it will become soft and very juicy.
- Beat eggs with sugar.
- Add sour cream, vanillin and baking powder into the mixture. Mix.
- Add sifted flour. The quantity must be adjusted independently, depending on the mixture. The dough should resemble sour cream.
- Add steamed raisins and stir.
- Pour into mold.
Bake for at least half an hour. If desired, sprinkle the finished product with sweet powder. To make your baked goods look more beautiful, you can use a paper stencil. Then on the surface you will get intricate patterns of snow-white powder.
The good thing about this kind of baking is that you can experiment with it endlessly. You can add candied fruits, fresh berries, fruit slices, almond flakes, and cottage cheese to the dough.
