Ingredients of the dish.

  • Onions - 200 g (1 piece).
  • Potatoes - 0.5 kg (3 pcs).
  • Vegetable oil - 50 ml (3 tbsp).
  • Bacon - 150 g.
  • Salt - 4 g (1/2 tsp).
  • Ground pepper - to taste.

Dough for dumplings.

  • Premium wheat flour - 400 g (2.5 tbsp).
  • Selected egg - 2 pcs.
  • Water - 150 ml (3/4 tbsp).
  • Vegetable oil - 30 ml.
  • Salt - 4 g (1/2 tsp).

Recipe of dish.

Let's prepare the ingredients. Peel the vegetables. Sift the flour.

Cut the potatoes into cubes.

Place the cooked root vegetable in a pan of salted water and cook for about 10 minutes over medium heat.

Without wasting time, let's prepare the dough for the dumplings. Pour 300 g of flour into a deep bowl, then add the eggs.

Season the contents of the dish with salt.

Add water to the remaining ingredients.

Lastly, add vegetable oil to the bowl.

Mix all the ingredients in the bowl until you get a stiff, elastic dough. If during the kneading process the flour base sticks to your hands, you should add more flour until the mass becomes quite dense.

Divide the dough into two parts, roll each into a sausage about 4 cm wide, then slightly squeeze each of them on top.

Cut both strips crosswise into dumplings 1 cm wide.

We send the semi-finished flour product to cook with the potatoes. Continue heating at medium burner power for 20 minutes, stirring occasionally so that the pieces of dough do not stick together.

Now let's move on to frying. Cut the onion into thin half rings.

Fry the cooked vegetable in a hot frying pan with oil until golden brown.

Add finely chopped bacon to the fried onions and continue heating for another 5-7 minutes, avoiding burning.

The traditional recipe for Ukrainian dumplings does not contain bacon, but I wanted to give the dish an appropriate smoky flavor.

We catch the finished dumplings and potatoes with a slotted spoon or tip them into a colander, allowing excess water to drain.

Combine the fried and boiled ingredients, mix, salt and pepper to taste.

The dumplings are independent on their own, but you can serve them as a side dish or, as in our case, with bacon and sour cream as a sauce.

Dumplings in Ukrainian

From ordinary goods you can prepare an unusually tasty dish - dumplings in Ukrainian. Minimum costs and time and the whole family will be fed. This hearty, mouth-watering dish will please everyone in the household.

First, let's prepare the dumpling dough, because it will need to rest for about 30 minutes. Sift the wheat flour through a sieve. It is better that the flour for dumplings in Ukrainian is of the highest grade.

Now let's create a depression in the center of the flour and pour half a glass of filtered water at room temperature into it.

Following the water, add two eggs to the flour. Lightly salt the ingredients.

Melt the butter over low heat. It’s convenient to melt butter in the microwave - quickly and without much hassle. Add the oil to the rest of the ingredients and start kneading the dough.

First, mix all the ingredients in a deep bowl. When the mass becomes more or less homogeneous, transfer the dough to a work surface sprinkled with a pinch of flour and continue kneading the dumpling dough. You can add a little flour as needed. The dough does not have to be steep, like dumplings. It should turn out soft and not stick to your hands. Place the finished dough on a floured plate, cover with a dry towel or cling film and leave for half an hour.

While the dough is resting, let's make the potatoes. Let's wash and peel the root vegetables. Cut the potatoes into large pieces so that they are approximately the same size as the dumplings or a little smaller.

When half an hour has passed and you can form the dumplings, pour cool water over the potatoes and put them on the fire. We will use a huge saucepan so that both potatoes and dumplings can fit in it.

Cut a small piece from the dough. Roll it into a sausage with your hands. Now let's cut the sausage into small pieces. Try to keep the dumplings the same size so that they cook right away.

When the potatoes boil, add salt and remove the foam if necessary. Pour the dumplings into the water and cook them until tender. Because the potatoes are young, they will have time to cook right away with the dumplings. If you are using regular potatoes, you need to boil them for 5-7 minutes in advance, and only add the dumplings later.

While the potatoes and dumplings are cooking, fry the onion. Peel and cut it into medium-sized cubes.

Melt a piece of butter in a dry frying pan. Add vegetable oil to it. When the mixture is perfectly heated, add chopped onion and fry until beautifully golden.

Let's taste the potato dumplings. When they are ready, add water to them. Pour the fried onions into the pan. Add finely chopped fresh dill and dark ground pepper. Mix everything with a spoon and set the table.

Let's arrange dumplings in Ukrainian on plates. You can add another piece of butter or a spoonful of homemade sour cream to the dumplings. Serve with fresh or pickled vegetables or mushrooms.

On the outside, they are similar to Belarusian dumplings, the difference is that they are prepared from the toughest and densest dough. Dumplings with cottage cheese, by the way, are their distant relatives. All varieties of such a dish as Ukrainian dumplings are united by the presence of the following goods in their composition: butter, eggs, milk and flour. From time to time, for contrast, a specific aroma or taste, herbs, spices, and other ingredients are added to the dough. And by and large, to make dumplings they use those products that are constantly available in the refrigerator of any housewife - milk, finely ground flour, chicken eggs and butter.

How to cook dumplings in Ukrainian, recipe from Poltava

In principle, our dish is prepared relatively simply and quickly. What needs to be created? Knead the dough, then roll it out into separate ropes and finally cut it into small squares. Almost all housewives do what our grandmothers did - they pinch off small pieces of dough, shape them into different twisted shapes and put them in boiling water. For dumplings: eggs - two, milk - three tablespoons and flour. First, cook the broth from the chicken legs. Chop the potatoes, throw them in and cook until almost done. Necessary ingredients: 100 grams of Dutch cheese, the same amount of flour and feta cheese, two tablespoons of butter, egg, semolina, nutmeg, salt.
