Curd cake with raisins in a bread machine

I really like to cook with curd dough (see cookies: curd roses, crow's feet, curd dessert, curd hearts), I also like to bake cupcakes, and accordingly, I love to bake curd cupcakes. It's very simple, but it always comes out delicious and wonderful. Now I decided to try the usual recipe for cottage cheese cake in a bread maker. To be honest, my goal is to see if it makes sense to use a bread machine for simple yeast-free baking. Recipes for homemade bread machines are collected at the link given to us. Compound:

  • Low-fat cottage cheese – 150 g
  • Sugar - 200 gr
  • Butter - 80 g
  • Premium baking flour – 180 gr
  • Eggs - 3 pieces
  • Baking powder - 1 teaspoon
  • Vanillin – 1 sachet (1 g)
  • Dried citrus zest - 2 teaspoons (optional)
  • Raisins – 50 gr

How to make cottage cheese cake with raisins and zest in a Mulinex homemade bread maker

I have a Moulinex OW240E Pain and Delices bread maker, I am very pleased with it. If anyone is still hesitating whether they need a bread machine at home, buy a similar model, you won’t regret it! This model for us has program 13, a cake with baking powder, but the cake takes a terribly long time to bake - 1 hour 45 minutes. It seemed to me that it would be quicker to divide the functions, knead the dough first, and bake later. Melt the butter, cool to room temperature and pour into the bread maker bowl.

In a separate bowl, beat the eggs with a fork and pour into the bowl.

Measure out the required amount of flour, set aside a tablespoon for sprinkling the raisins. Sift the rest of the flour together with baking powder and vanilla and add to the bowl.

Set the dough kneading program, in this model for us - 11. The bread maker started working, in the meantime, wash and dry the raisins with a cardboard towel, sprinkle with the reserved spoon of flour and mix with the zest. The dough takes a very long time to knead; if I had used a blender, the cake would have been in the oven a long time ago. The curd dough became more or less homogeneous only after 35 minutes!

Once everything is mixed, after a minute or two, stop kneading and proceed to baking. In my bread machine it is program 14. I chose medium color for the crust. The time is set manually; in the oven, such a small cake would be baked in 35-40 minutes, but I set the longest time for any option - 1 hour 10 minutes. As the smell of zest and vanilla floated through the kitchen, I looked in and the top was still completely snow-white. In general, the curd cake was ready in an hour. Check the readiness of the cake by piercing it to the bottom with a wooden skewer; it should come out dry.

So I wasn’t able to rush the bread machine - baking a 700 gram curd cake took more than an hour and a half, almost the same as according to the cake baking program. Shake the cake out of the bowl.

Well what can I say? The taste of the curd cake is the same as from the oven, even more time is spent, and besides, the hole from the paddle remains... It differs from my ordinary cupcakes only in shape. My summary - this recipe has a right to exist, especially for those who have a bad oven or no oven at all. But it makes sense to use a bread machine mainly for yeast-based baking, in which it is truly an irreplaceable assistant. Well, as for the curd cake, it naturally came out good, as always. Beautiful, rosy, with a creamy taste and a vanilla-citrus aroma.

Hello. Thanks for the recipe. I couldn’t find the right program in the bread machine, and after kneading (and several attempts to turn on different programs), I baked it in the oven. The inside turned out to be a little dense (as if it had not been baked, apparently it had been mixed), but with all this, the taste and mixture were very excellent. At this point I mixed a double batch by hand with the addition of frozen blueberries and put it in the oven.

Butter – 200 g

Wheat flour – 500 ml (approximately 320-350 g)

Homemade muffins are a popular baked product in almost all countries. I suggest preparing a tender, fragrant, savory curd cake in a bread maker. You can add dried fruits, nuts, chocolate to this baking, or prepare it without additives. The bread maker will help you save time, because all you have to do is load the ingredients into it and turn on the desired program.

Sift the flour with baking powder and set 1 tablespoon aside.

I pour flour with baking powder, sweet sand, salt, vanilla sugar into a bucket.

I place the bucket in the bread maker. Some models of bread makers have a “Cupcake” mode; it lasts about 1 hour 50 minutes (kneading dough and baking). In this case, the raisins will need to be placed in a special dispenser, from which dried fruits will be added to the dough at the appropriate moment. If your model does not have such a mode (as in my case), no failure! First, you need to turn on at least some mode, which begins with kneading the dough.

Wash the raisins, dry them with a towel, add the reserved flour, mix.

After 5-6 minutes of kneading, I add raisins and let them mix with the dough (about 1 minute).

I disable the first program. With the lid of the bread machine closed, turn on the “Baking” mode for 70 minutes. After about 50 minutes of baking, you need to check the readiness of the cake using a toothpick. If the cake is ready, then remove the bucket of cottage cheese cake from the bread machine; if not, then bake the cake some more.

I carefully remove the cake from the bucket (because the dough contains quite a lot of butter, the cake can be easily removed from the bucket) and let it cool. I sprinkle it with sweet powder through a strainer.

Pour in melted butter. Add sugar. Sift the flour, mix with baking powder and salt, pour into the bowl with the rest of the products. Turn on dough kneading mode. All that remains is to turn on the “Cupcake” mode and wait until the curd cake in the bread maker is ready.

After finishing the program, we recommend leaving the baked goods in the bread maker for 15 minutes on the “Heating” mode. Thanks to this, the cake will retain its fluffiness longer after we remove it from the mold.
