Since ancient times, pancakes in Rus' have symbolized the sun. They were baked both on holidays and on weekdays. They are baked from wheat, rye and buckwheat flour, millet porridge and grated apples are added.

One of the savory and filling varieties of baked goods is cheese pancakes. Grated cheese is added to the dough and they are baked like regular pancakes in a frying pan with butter. The dish is served with sour cream and herbs. From time to time, greens are added to the dough.

Yeast cheese pancakes

Airy and lacy pancakes with cheese are best eaten while they are hot.

Products:

  • milk – 500 ml;
  • flour (wheat) – 300 gr.;
  • sugar – 1.5 tbsp;
  • cheese – 250 gr.;
  • oil – 50 ml;
  • testicle – 2 pcs.;
  • yeast – 1.5 tsp;
  • salt.

Manufacturing:

  1. Sift the flour and add dry yeast, salt and sweet sand.
  2. Heat the milk slightly in a saucepan, pouring it evenly in a narrow stream, knead the dough.
  3. Add vegetable oil and stir the dough.
  4. Cover and place in a warm space for half an hour, during which time it should rise.
  5. Grate any hard cheese on a small grater and mix it into the dough.
  6. Bake pancakes in a heated frying pan, greased with oil.
  7. Serve hot pancakes with sour cream or a sauce made from it.

Very satisfying and tasty pancakes can be prepared for breakfast on a weekend to pamper your loved ones.

Cheese pancakes with herbs

To enhance the taste, you can add any chopped herbs to taste in such baked goods.

Products:

  • milk – 250 ml;
  • flour (wheat) – 200 gr.;
  • sugar – 1.5 tsp;
  • cheese – 150 gr.;
  • oil – 50 ml;
  • testicle – 2 pcs.;
  • soda – 1 tsp;
  • greens – 1 bunch;
  • salt.

Manufacturing:

  1. Heat the milk in a saucepan and sift the flour.
  2. Using a mixer, beat the eggs with sweet sand and a pinch of salt into a stiff foam.
  3. Pour in warm milk, add flour and soda, and when the mixture becomes homogeneous, add butter.
  4. Grate the hard cheese on a small grater, rinse the greens, dry on a towel and chop with a knife.
  5. You can use parsley, spinach or arugula. Or you can add a little of everything and add leaves from a couple of thyme sprigs.
  6. Pour cheese and herbs into the finished dough, mix so that all additives are distributed moderately.
  7. Heat a frying pan, grease it with a thin layer of vegetable oil and bake pancakes as usual.

Cheese pancakes with suluguni

Smoked suluguni gives such pancakes an unusual taste, although it tastes delicious with ordinary ones.

Products:

  • milk – 700 ml;
  • flour (wheat) – 450 gr.;
  • sugar – 1 tbsp;
  • suluguni – 150 gr.;
  • oil – 50 ml;
  • testicle – 2 pcs.;
  • soda – 1 tsp;
  • salt.

Manufacturing:

  1. Grate the smoked suluguni on a small grater.
  2. Add the eggs to the bowl with the cheese and stir with a spoon.
  3. Add sweet sand, soda and a little salt, it is better to test the cheese first. If it is very salty, then you don’t need to add it at all.
  4. Pour in the milk, turn on the mixer, pour in the flour evenly, and knead into a homogeneous dough.
  5. The thickness of the pancakes will depend on the thickness of the dough; you can add a little more or less flour.
  6. When the dough becomes homogeneous, without lumps, add vegetable oil.
  7. Heat a frying pan and bake golden cheese pancakes as usual.
  8. Grease any pancake with melted butter.

Serve with sour cream or matsoni; you can add chopped herbs and garlic to the sauce.

Cheese pancakes with dill and garlic

Chopped dill can be added not only to the sauce, but also directly to the dough. This will give not only a wonderful color, but also taste.

Products:

  • milk –300 ml;
  • flour (wheat) – 200 gr.;
  • sugar – 1.5 tsp;
  • cheese – 150 gr.;
  • oil – 50 ml;
  • testicle – 2 pcs.;
  • soda – 1 tsp;
  • dill – 1 bunch;
  • garlic – 1-2 cloves;
  • salt.

Manufacturing:

  1. Wash the dill and place it on a towel to let the greens dry.
  2. Grate the cheese on a small grater.
  3. Break the eggs into a mixer bowl, add a pinch of salt, sugar and soda.
  4. Beat until stiff, add milk and flour, and knead into a homogeneous dough without lumps.
  5. Add a spoonful of vegetable oil.
  6. Add cheese and very finely chopped dill.
  7. Squeeze a couple of cloves of garlic using a special press.
  8. Stir well with a spoon and place the frying pan on gas.
  9. Grease a hot frying pan with a thin layer of oil and bake golden brown pancakes on both sides as usual.

  • Starch - 5-6 tbsp. l.;

Subsequence:

Break 5 eggs into a bowl and add sugar to them - about a tablespoon. If you like it sweeter, use your own taste. Whisk.

Without stopping the mixer, add starch little by little. The dough will become thicker and thicker. At the very end, add milk and vegetable oil, and then leave the dough for 15 minutes.
