Recipe: Gooseberry Pie – Made from shortcrust pastry

Hello everyone.
Over the weekend at the dacha we picked a lot of gooseberries and I naturally had an idea: “what should I create with them?” I decided to look on the Internet for a recipe for some baked goods with gooseberries and came across this recipe for a wonderful gooseberry pie. The recipe for making it is completely simple, so anyone can handle it!

So we prepare the dough: pour 250 g of flour into a bowl, you can sift it if someone does this, but I honestly don’t see the point in this, the flour is of good quality and without lumps.

Add a pinch of salt to the flour.

Add 100 g of sugar here.

Mix everything well.

Now add 120 g of melted butter.

Mix butter with flour, sugar and salt. Knead the resulting mass with a spoon or with your hands until it forms a homogeneous lump.

This is the dough we got.

Now break 1 egg here and mix. Thanks to the egg, the dough acquires elasticity and becomes more viscous.

Our dough is ready.

Roll it into a ball, wrap it in cling film, or you can simply put it in a bag and put it in the refrigerator for 40 minutes.

While our dough is chilling, we will prepare the filling for our pie. The gooseberries must be washed and placed on a towel so that all excess moisture is removed from it.

Later we cut off the tails of the gooseberries.

In a separate cup, beat 2 eggs until thick foam with a mixer.

Add 20% sour cream here, you can add more fat if you wish. Mix carefully.

Add 2 tablespoons of flour and 150g of sugar here.

Beat again with a mixer. The inside comes out a little liquid, but this is normal; it will thicken during baking.

Take a baking dish and grease it with the remaining butter.

Take the dough out of the refrigerator. Roll it out to a huge circle, approximately 5-7mm wide. Carefully place it in the mold, forming sides. I have a frying pan with a diameter of 26 cm.

Place the gooseberries in the middle and carefully distribute them over the surface of the dough.

After this, pour the filling on top of the gooseberries, trying not to let it go over the sides.

Place the pie in an oven preheated to 180 degrees.
Bake for 40 minutes. This is the beauty that comes out in the end!!

You can serve it to the table!!

The taste of this pie is tender, shortbread dough with a sweet and sour interior, and the gooseberries “explode” right in your mouth, revealing their inimitable taste!

In the summer, due to the richness of the berries, the turn for the gooseberry pie never came. I decided to freeze a small portion and bake it in the winter. It looks like that time has come. I decided to dilute the winter baked goods a little and add summer colors. The pie comes out very tasty, and you can use more berries.

To make a pie, prepare the necessary products from the list.

Remove the butter from the refrigerator in advance so that it becomes soft. Add sugar to it and beat with a whisk or mixer.

Add eggs one at a time and beat thoroughly until combined.

Add a large pinch of salt and soda to the dough. Next, sift 300 g of flour and mix the dough well again. Next, flour should be added in parts. When it becomes difficult to mix with a whisk, switch to manual kneading.

The dough should be soft and not sticky to your hands.

Cut the dough into 2 parts: a large one and a small one. Wrap the smallest part in cling film and put it in the freezer, and put the larger part in the refrigerator for 1 hour, also wrapping it in film.

Remove the dough from the refrigerator, roll it out to the size of the mold, then spread it out moderately with your hands and prick the bottom and sides with a fork. My shape is 25*25 cm.

Sprinkle gooseberries with starch without defrosting. Place it on the dough.

Remove the smallest part of the dough from the freezer and grate it on a large grater directly on top of the berries.

Preheat the oven to 180 degrees and bake the shortbread pie with gooseberries for 45-55 minutes until it is golden brown.

You can sprinkle the pie with sweet powder, but I didn’t, it’s already delicious to me. Cut the pie when it has cooled and serve with any drink.

It was necessary to quickly bake something before friends arrived. It turned out that it turned out not only quickly, but also very tasty. A minimum of time and goods, and a lot of room for imagination in terms of the interior.

Ingredients for Gooseberry Shortcake:

  • Chicken egg - 2 pcs
  • Sugar (0.5 cup dough + 1 cup inside) - 1.5 cups.
  • Butter - 100 g
  • Sour cream – 100 g
  • Baking powder - 1 tsp.
  • Wheat flour / Flour - 2.5 cups.
  • Gooseberries – 300 g
  • Starch - 2 tbsp. l.

Production time: 25 minutes

Yummy!)
I needed a simple and quick recipe - I had some jam leftovers.
This one was the first one I came across and liked.
The only thing is that I used mayonnaise instead of sour cream and butter to speed up the process.

Shortbread pie with gooseberries

What could be better than a summer evening with your family, with fragrant tea and gooseberry shortcake? Even those who don’t like gooseberries at all will enjoy eating this delicious pie.

Ingredients

Shortcrust pastry for gooseberry pie:

  • 250 g flour
  • 100 g sour cream
  • 70 g sugar
  • 2 testicles
  • 100 g butter
  • 1 tsp baking powder

Pie Inner:

  • 300 g gooseberries
  • 150 g sugar
  • 2 tbsp. starch

Recipe for making a dish at home

  1. Beat the eggs into a bowl, add about 100 grams of sugar, pour in sour cream and whisk with a whisk or fork until smooth. Sift the flour through a sieve along with baking powder into one bowl, grate the butter on a large grater and rub into crumbs with your hands.
  2. Add the egg-sour cream mixture to the butter crumbs and knead into a soft and pliable dough that does not stick to your hands. Wrap the dough in cling film and place in the refrigerator for half an hour.
  3. Sort the gooseberries, remove stems and debris, place in a colander and thoroughly wash under running cold water. Allow the water to drain completely and let the berries dry.
  4. Pass the gooseberries through a meat grinder and place the berry puree in a bowl. Add the remaining sugar (200 g), starch (sifting it through a sieve), and mix everything with a spoon.
  5. Grease a baking sheet with vegetable oil, roll out the previously prepared and chilled dough over the entire surface. Form low sides of about 1-2 cm from the dough, put the filling on it, smooth it out and send it to the oven preheated to 180/200C.
  6. Bake the shortbread pie with gooseberries until done, about half an hour. Remove the pan and let sit for at least 10-15 minutes. Cut the finished pie into portions and serve warm or cooled. Enjoy your tea!
