Cottage cheese dessert with gelatin is a light dish, tasty and very healthy. You can eat desserts made from cottage cheese without baking with gelatin virtually without restrictions - any day . Obviously, it is necessary to maintain a daily balance of macroelements in the diet and use natural sweeteners: honey, stevia, fructose.

Jelly curd mass is good in any form - with fruits, cocoa, nuts, candied fruits. The most dietary types are fruit and berry ones and with cocoa.

Secrets of curd desserts with gelatin

Regardless of the recipe, any cottage cheese dessert is prepared very simply.

The main thing is to properly dilute the thickener and give the dish time to harden.

There are several types of gelatin, but I advise you to take instant ones of the highest purity - they are comfortable to work with, they do not have a powerful aroma, and do not give any aftertaste.

Gelatin has a beneficial effect on the digestive system and removes toxins from the body (Ancient Greek toxin (toxikos) - poisonous - poison of biological origin) . It is obtained from the bones, veins and skin of animals, therefore it is not suitable for the diet of vegetable eaters.

Agar-agar and pectin are plant analogues. They stimulate digestion and are natural enterosorbents. If it is impossible to use a thickener of animal origin, it is permissible to use plant analogues.

We have already made pp marshmallows from cottage cheese, where we could use both gelatin and agar-agar.

The most common recipe with cocoa

Curd dessert with fruits

Cottage cheese and fruits are simply an impeccable combination of easily digestible protein and essential carbohydrates.

Apples, cherries, bananas, strawberries, apricots, cranberries, persimmons, peach, cherries, grapes, pears and plums fit perfectly into the recipe for curd and fruit dietary jelly.

Kiwis, pineapples, mangoes and some other sour fruits are not suitable for desserts made from cottage cheese based on gelatin - they contain a high content of fruit acids and enzymes that disrupt the structure of the thickener, as a result of which hardening does not occur.

In addition, kiwi in combination with cottage cheese begins to taste bitter.

But desserts with sour fruits freeze perfectly with agar-agar, which is not afraid of fruit acids.

Jelly cottage cheese is mixed not only with fruits, but also with vegetables, for example, baked pumpkin or carrots.

Advice from the most experienced pp specialists

  • For a gelatin-based dessert to be successful, it is better to place the fruit filling at the bottom of the mold to harden, rather than mix it into the curd mass. All fruits contain enzymes that “conflict” with gelatin, although not as pronounced as the enzymes of kiwi and pineapples.
  • Any curd dessert with gelatin without baking is not a fussy recipe, so you can safely change the proportions to your liking and your own taste. The only proportion that needs to be observed is the ratio of gelatin and water. It must be at least 1:10, you can reduce the amount of water, then the jelly mixture will be the most compacted.

Step-by-step recipe with photos

When my kids and my granddaughter visit me, I always prepare this curd dessert with gelatin for them. The dessert comes out tender, tasty, and hardens quite quickly. If you want it to be even more tender, add 3-4 grams less gelatin.

To make a dessert from cottage cheese with gelatin without baking, we will immediately prepare the products according to the list.

I have gelatin in plates. I broke the records into much smaller pieces. If you have powdered gelatin, simply pour it from the bag into a bowl.

Pour warm milk over gelatin and leave to swell for 20 minutes. After this, pour the gelatin in milk into a saucepan and heat it over the fire until all the gelatin is dissolved in the milk.

Mix cottage cheese with sugar and sour cream, you can add a little vanilla sugar.

IMPORTANT: If your cottage cheese is coarse-grained, it is better to rub it through a sieve. I didn’t do this; there were very large grains of cottage cheese in the finished dessert.

Beat the cottage cheese, sour cream and sugar with a mixer into a homogeneous, smooth mass.

Add the dissolved gelatin and mix everything well again.

Add cocoa to half of the purchased mass and stir well until smooth.

Let's prepare molds for curd dessert with gelatin. First, pour a layer of snow-white jelly. Place the molds in the refrigerator for 20 minutes so that the jelly layer hardens.

Then we take the molds out of the refrigerator and lay out a layer of jelly with cocoa.

IMPORTANT! Now let's create a surprise. Place a little snow-white jelly into a pastry bag or syringe. We immerse the nozzle deep into the brown layer and squeeze out a little snow-white cream, and then quickly remove the nozzle.

You can repeat layers if desired. The main thing is to put the dessert in the refrigerator after adding each layer to harden.

Place the finished curd dessert with gelatin on a serving plate, or you can serve it in the form that is more convenient for you. Decorate the dessert with chocolate chips and nut crumbs.
