She is a frequent guest on the tables of representatives of all social strata of the Russian Federation - from handyman to entrepreneur. Swap the “Doctor's sausage” for ham - the cost of the dish will increase by 20-30%. And if you crumble hammon in there, it will become an order of magnitude more expensive, i.e. 10 times!

Its “budget value” also depends on one factor: a student in a dormitory will pour water acidified with vinegar into it, but an accomplished person, after grinding the meat, egg and vegetable part of the dish with mustard, horseradish and sour cream, will generously splash in an expensive variety of kvass or ayran. But everyone will be happy.

It will satisfy you in the very heat of a July afternoon, when no other dish, so to speak, “will fit”; and will remind you of summer warmth in the winter cold.

And it has long been reincarnated, along with the matryoshka doll, the balalaika and the T-34 tank, into a famous Russian brand.

His name is okroshka.

A little about the most delicious, traditional Russian okroshka

The usual okroshka, with its recipe going back centuries, consists of two main components – kvass and grated or finely chopped radish. In the 16th and 17th centuries, they began to add diced boiled turnips or scalded green peas to it. Later turnips were replaced by potatoes.

At the same time, in the houses of the nobility, the recipe included hard-boiled eggs and homemade sausage or ham. In taverns, which were analogues of not only drinking establishments, but also canteens and restaurants, they thought of introducing finely chopped cucumber into its composition. As for the greens, they were constantly added to the okroshka.

Thus, by the 19th century, the main recipes for making this dish of state cuisine had developed.

With all this, the sausage can be replaced with boiled meat - lean pork or beef, or even chicken. As in the recipe adopted in the south of Russia, in the Belgorod and Voronezh regions. There, the drink is diluted in a 1:1 ratio with strong chicken broth, and the chicken meat is cut into cubes.

In all the recipes below, eggs are hard-boiled by default. It is better to test cucumbers, if they are from your own garden, in advance - so that they do not turn out to be bitter and spoil the dish.

By “sausage” they usually mean “Tea”, “Doctor’s”, “Amateur”. It is better to cut the onion and dill and keep them separately and add them to the okroshka just before eating - mashing them with salt beforehand so that they release juice and smell.

The fact is that if you mix onions and dill with all the ingredients in advance, they can cause them to sour even in the refrigerator

Traditional recipe for okroshka on kvass with sausage, radish and sour cream

For three liters of kvass take:

  • 4 testicles
  • 3 medium-sized new cucumbers
  • 3 potatoes
  • 10 radishes
  • 300 g boiled sausage
  • a bunch of dill and onion, horseradish, mustard to taste
  • sour cream for dressing.

Cook the eggs separately from the potatoes! This is both hygienic and allows you to salt the water for the eggs so that they don’t burst or leak. The finished eggs and potatoes are cut into chilled cubes.

Finely chop the cucumbers, thinly slice the radishes, and chop the sausage into cubes.

Finely chop the greens and mix all the ingredients in a deep bowl, adding horseradish and mustard.

If you pour kvass into the prepared mixture, the okroshka will infuse and taste better. Just before serving, add a good spoonful of sour cream.

A typical and delicious recipe for okroshka with sausage made with kefir and mineral water

  • 2 liters of kefir
  • One and a half liters of sparkling mineral water
  • 2 cucumbers
  • 8-10 radishes
  • 4 testicles
  • 4 potatoes
  • 300 grams of boiled sausage
  • Onions, dill - a bunch each
  • Citric acid and salt to taste

Crush finely chopped onion in a bowl with a pinch of salt, pour into a pan with chopped eggs and potatoes.

Send chopped dill there. Add diced cucumbers and sausage.

Cut the radishes into thin (about 1 mm) disks or grate them on a large grater.

Pour in kefir. Dilute to a suitable thickness with mineral water.

“Democratic” version of okroshka made with mineral water and vinegar

It is also called “student”. In general, it’s a matter of taste – that’s why it’s “democratic”.

  • 400 g cucumbers
  • 200 g green onions
  • 1 bunch of dill
  • 4 medium potatoes (boiled)
  • 4 testicles
  • Boiled sausage 250-300 gr
  • Mineral water 1.5 liters
  • Apple cider vinegar, salt to taste

Potatoes, eggs, cucumbers and sausage are finely chopped.

Grind onion and dill with salt separately.

Stir and put in the refrigerator for 1.5-2 hours, then arrange on plates, season with sour cream, grind with it, add apple cider vinegar and chilled mineral water.

“Exot” classic okroshka on ayran with mineral water and radishes

Ayran is a Caucasian variety of kefir. Almost everyone loves this okroshka because of its thickness, nutritional value and typical ayran taste.

  • 3 testicles
  • bunch of green onions

Classic okroshka with sausage - recipe in mineral water with mayonnaise

An unusual version of this dish is that it contains the addition of such a reddish ingredient as fresh tomatoes. They will bring juiciness to this soup. 7. First add some salt to the dill on a cutting board and then chop it later.

  • drink, ayran, tan - 1.5 l (choose one according to your own taste)

  • onion and dill to taste
  • salt to taste

Manufacturing method:

1. Boil young and fresh potatoes in a saucepan, peel and cut into cubes.

2. Next, chop the carrots, which will give a wonderful, catchy color to the soup.

3. Peel the fresh cucumber from the greenish skin and chop it into pieces with a kitchen knife.

4. Cut the meat or smoked sausage carefully so that the pieces are small.

5. Grind the eggs so that the pieces are not very large.

6. Wash the onion in water and cut it immediately. Do the same with dill.

7. Mix everything. Add any fermented milk drink. Dilute it with slightly boiled water to the thickness you like. Add some salt.

Classic okroshka was prepared quite simply - chopped vegetables were mixed with herbs and kvass. Pieces of boiled meat and fish could be added. Nowadays there are recipes with sausage. This okroshka is no less tasty, but it saves time.

The manufacturing technique includes several steps. It all starts with the vegetable mass. For it, they take only the freshest vegetables with a neutral taste - potatoes, turnips, the freshest cucumber, etc. To this add a dressing of mustard, green onions, dark pepper, egg yolks and horseradish, ground with 2-3 tablespoons of cucumber brine.

The most delicious okroshka comes from snow-white kvass. The wort for it is prepared from 3 types of flour - wheat, buckwheat and rye. There must definitely be sourdough with mint, malt from rye and barley.

Classic okroshka on kvass with sausage and radishes

Production time: 30 minutes. Number of servings 3.

  • boiled sausage - 150 g,
  • cucumber - 1 pc.,
  • radishes - 10 pcs.,
  • chicken egg - 2 pcs.,
  • potatoes - 1 pc.,
  • green onion - 1 bunch,
  • dill - 0.5 bunch,
  • parsley - 0.5 bunch,
  • kvass - 1 l,
  • salt to taste,
  • ground dark pepper to taste,
  • sour cream to taste.

Wash the radish and cucumber. Dry, cut into cubes.

Peel the sausage from the casing and cut into small pieces. Add to cucumber and radish.

Wash and dry the greens. Cut finely. Add to remaining ingredients.

Boil the jacket potatoes and eggs until tender. Cool. Clear. Cut into cubes. Add to a common bowl.

Mix. Before serving, season with salt, ground pepper and pour in cool kvass. If desired, add sour cream.

Recipe for okroshka with boiled sausage with kvass and mayonnaise

This version of the dish has been known for a long time. You can simply change its taste by adding a little more or less mustard. The smell of the main ingredients also affects how the okroshka turns out.

  • potatoes - 9 medium tubers;
  • testicle - 8 pieces;
  • boiled sausage - 600 g;
  • cucumbers - 8 medium pieces;
  • radishes - 7 small pieces;
  • greens, mayonnaise, mustard, salt - to taste;
  • kvass - 2 l.

Boil eggs, potatoes, peel. Cut these two components into similar pieces, as well as cucumbers, radishes, and sausage. Finely chop the greens. Mix everything.

You can collect okroshka using 2 methods:

  1. Distribute the prepared ingredients sparingly among plates, add mayonnaise, kvass and salt to taste.
  2. Place everything in a saucepan and leave in the refrigerator for several hours to steep.

Classic okroshka with sausage, kvass and sour cream

Cool soup perfectly relieves hunger, but at the same time does not leave a feeling of heaviness. Try adding not only boiled doctor’s sausage to the okroshka, but also smoked sausage. This will give the dish a special flavor.

  • kvass - 1.5 l;
  • cucumber - 4 medium pieces;
  • sausage - 300 g;
  • testicle - 4 pcs.;
  • potatoes - 4 medium tubers;
  • dill, parsley, green onions - as needed;
  • sour cream - 0.4 l;
  • sugar - ¼ tsp;
  • salt - ½ tsp;
  • mustard - 0.5 tsp.

Cut boiled potatoes, eggs, sausage, and cucumber into cubes. Chop the dill and parsley. Finely chop the green onion, place in a mortar and grind with salt. Combine all ingredients in a large bowl or, better yet, in a saucepan. Add sour cream, kvass, mustard, salt, sugar. Stir thoroughly.

Leave it in the refrigerator for several hours to infuse. When serving, place quail egg halves on each plate. You can also freeze a little kvass in an ice tray and offer additional cooling later.

Okroshka with sausage and chicken (meat) according to a traditional recipe using kvass

Men will like this okroshka. It is very satisfying due to two meat ingredients. Garnish with a slice of lemon or a cube of frozen juice and you have a dish in front of you that can be placed on a formal table.

  • sausage - 0.2 kg;
  • chicken breast (boiled) - 300 g;
  • testicle - 3 pcs.;
  • cucumber - 1 large;
  • radishes - 5 pcs.;
  • green onions, dill - as needed;
  • kvass - 1.5 l;
  • sour cream, mustard, salt - to taste.

Boil the egg and potatoes. Then, together with the rest of the hard ingredients, cut into small cubes. Stir the resulting mixture and cover the container with film or a lid. Leave in the refrigerator until serving.

Then place the vegetable base on plates. Pour in the kvass, add salt, sour cream and mustard to your taste. Be sure to sprinkle with herbs - they are very refreshing.

Okroshka is a good choice for hot first courses. In the summer heat, it saturates and cools unsurpassedly. It can be seasoned not only with kvass. For example, okroshka made with kefir and mineral water turns out very tasty. Be sure to try too.
