About fifteen minutes before the end of cooking, add salt and pepper, remove the meat from the broth, and filter the broth itself again.

    Soak the gelatin in part of the broth. Once the meat has cooled, cut it into pieces. Place the meat in molds. As the gelatin swells, dissolve it in a water bath or simply put it on the fire until completely dissolved, but do not bring it to a boil, pour it into the strained broth, mix and pour the broth into molds with meat.
