The first is used to bake pancakes to arrange the insides in layers, and the second is used to cover the surface, making various decorations out of it.

Now I will introduce you to a very ordinary chicken recipe, which you can bake any day for your own household. It is prepared simply and relatively quickly, so no matter what kind of housewife will be able to cope with its recipe.

Step-by-step recipe for traditional kurnik with pancakes

Ingredients

Pancakes 10 pieces.
Boiled rice 200 g
Chicken 450 g
Mushrooms 250 g
Carrot 1 PC.
Onion 3 pcs.
Salt 1 tsp.
Pepper 0.5 tsp.
Olive oil 2-3 tbsp. l.
Sour cream 300 g
Mustard 0.5 tbsp. l.
Testicles 3 pcs.

Choosing the right ingredients

  • For this pie you can use any kind of dough: puff pastry, unleavened pastry, shortbread, etc. This time I took 10 ready-made pancakes as a base.
  • All products must be fresh and high quality. You can put any kind of meat in the pie. But because we now have a traditional recipe for it, we will cook it with chicken. Legs, fillets or drumsticks are suitable for this.
  • In this recipe we will create a filling with rice . It is better to take round rice. Instead of rice, you can eat buckwheat or mashed potatoes.
  • Our sauce will be based on sour cream. You can also use mayonnaise, but with it the product will be the most caloric.
  • In addition, you can add herbs, bell peppers or pickles.

Step by step recipe

First you need to prepare the ingredients

  1. In advance you need to boil 450 g of chicken meat. This could be brisket or ham. Grind the meat in a blender or meat grinder.
  2. Boil the rice and wash. We need 200 g of it in finished form. It is better to use round rice. Boil 3 chicken eggs and let all the ingredients cool. Grind the eggs on a large grater.
  3. Place all ingredients separately from each other.
  4. Peel and wash two onions and one large carrot. Grate the carrots, cut the onion into cubes and fry them in vegetable oil until golden brown. Allow to cool slightly and mix with boiled rice. Add salt and pepper to your taste. Chop another onion randomly and fry together with 250 g of mushrooms, cut into pieces. Grind the resulting mass in a blender.

Now let's prepare the sauce

  1. Place 300 g of sour cream and 0.5 tbsp in a comfortable bowl. l mustard. Add salt and pepper to taste and mix everything well.

It's time to shape and bake the chicken

  1. Grease a deep baking dish with olive oil. Place the first pancake on the bottom and coat it with a little sauce.
  2. Line the sides of the pan with five pancakes so that they hang down. At the end we will be able to cover the finished pie with them. Grease the pancakes with sauce and add a mixture of rice, onions and carrots.
  3. Place the pancake on top, brush with sauce and layer the chicken. Place mushrooms on it, cover with pancake, brush with sauce. Then add the grated eggs. If desired, you can add bell peppers and herbs.
  4. Cover the surface with pancakes that hang from the pan, coat with sauce and cover with the outermost pancake.
  5. Place the pie in the oven for 15 minutes at 200 degrees.

Recipe for Chicken Pancakes:

1. Prepare the dough for pancakes.
Mix milk with one egg, add 5 grams of salt and sugar, mix. Add flour and mix well until smooth, pour in 50 ml vegetable oil. 2. Set the dough aside and prepare the ingredients for the inside.
Finely chop 6 boiled eggs.
Also finely chop the boiled chicken. Chop the greens. 3. Prepare pancakes.
We should have 9 of them. 4. Prepare the insides.
Pour 100 ml into the pan. cream and add chopped chicken, herbs, salt, mix, let simmer for one minute and move to the side. We also prepare the other two insides.
5. Place 4 pancakes on a baking sheet and one in the center.
We lay out the first filling, add a pancake, the second filling, a pancake, the third filling. We cover the edges of the chicken with pancakes, lifting them up, coat them with beaten egg and cover with the pancake.
6. Decorate and place in an oven preheated to 180 degrees Celsius for 10 minutes.

Kurnik dough – 1 portion

Pancake batter:

Chicken egg – 1 pc.

Vegetable oil – 2 tbsp.

Milk – 1 glass

Wheat flour – 2/3 cup

To grease the inside of the pancake - 4 tbsp sour cream.

Rice and mushroom inside:

Water – 2 glasses

Dried mushrooms – 50 gr

Potato and meat inside:

Potatoes – 2 pcs.

Minced pork – 250 gr

Onions – 1 pc.

Vegetable oil – 50 ml

Salt and seasoning - to taste

Kurnik is the lord of all pies and pies in Russian cuisine and it's not mind-blowing. Therefore, how to prepare this closed, domed pie with quite a lot of entrails. Real kurnik is usually prepared with buckwheat and chicken meat. I decided to replace the buckwheat with rice, and the chicken meat with minced meat. Choose the filling for chicken pancakes according to your own taste: mushrooms, potatoes, onions, rice, cabbage, eggs, etc. I wish you delicious tests!

To make puff pastry from pancakes with chicken and mushrooms, we will also need the dough:

flour, milk, egg and vegetable oil - for pancakes

dried mushrooms, rice, vegetable oil, salt, potatoes, sour cream, minced meat, seasoning for meat and onions - for the inside

extra egg - for brushing the pie before baking

To measure goods, I used a 200 ml glass.

I will cook the rice for the inside in a slow cooker, but you can also cook it on the stove. Grind the mushrooms in a blender.

Place washed rice in the multicooker bowl, add water, salt and mushrooms. Mix. Cook on the “Rice” mode.

While the multicooker is preparing rice and mushrooms, let's bake pancakes. Mix the pancake dough. Fundamentally! There shouldn't be any flour lumps. We bake pancakes using the usual method in a frying pan.

This amount of ingredients makes 7 pancakes; we will need 4 for the filling.

Fry the minced meat with onions in vegetable oil.

Our rice with mushrooms is ready, the dried mushrooms have turned it brown.

Divide the dough into 2 equal parts. Roll out one part into a circle 7-8 mm wide. I roll it out straight away on baking paper, dusting the dough with a little flour.

We transfer our preparation to a baking sheet.

Finely shred potatoes into the meat filling using a special grater. Salt and add spices to taste, mix.

We spread the first layer of the inside - rice with mushrooms.

Place the pancake and grease with sour cream. You can grease it without regret, it will only taste better.

Then we lay out the potatoes with meat.

Again, pancake with sour cream.

Roll out the second part of the dough into a circle, cut out a circle in the center and transfer to the pie.

Trim off excess dough along the edge of the pie.

Fold the dough over the pie, pressing lightly. Use a fork to go along the seam again, pressing down so that the dough does not open during baking.

We use the leftover dough to make decorations for the pie. Using a brush, brush the pie with egg yolk mixed with water.

Bake in a preheated oven at 180 degrees for 40-45 minutes.
