Recipe for “Tender Chicken Chops in Batter”:
Prepare your ingredients. To make the batter fluffy, take out the eggs an hour before making it so that they are at room temperature. Wash the fillets and dry with towels. Sift the flour, so it will be saturated with oxygen and will not form unnecessary lumps.
Beat the chicken fillet through a plastic bag or cling film, so it will retain its juiciness and will not be dry.
If you are using whole chicken breasts, then prepare pieces of fillet 1 - 1.5 cm wide in advance. To do this, remove the skin from the breast by cutting the breast in the center Carefully remove the meat from the bone on both sides of the ridge.
In a bowl, beat 2 eggs, one and a half tablespoons of mayonnaise and sour cream, salt and pepper.
Add 4 tablespoons of flour, stirring constantly. Whisk until lumps dissolve.
The batter in the mixture should resemble thick sour cream.
Take the beaten fillets and dip them in the batter.

The recipe for chicken fillet chops or battered breasts has been passed down in my family from generation to generation. It combines the best taste, ease of production and availability of goods.
My mother taught me, and now I teach my own kids how to cook chicken fillet or breast chops.
The beauty of this recipe is that the meat can be cooked the day before by marinating it, and frying the chops lasts for almost a few minutes.

Preparing the meat

Thanks to the batter, the meat retains its juiciness, prevents the pieces from drying out, envelops everything and keeps the meat juices inside. When frying, a crust appears on the surface, that crispy and very appetizing crust, without which it is unimaginable to imagine homemade chops.
To prepare juicy chicken breast chops in batter, you need to cut the fillet into small portions, then fillet, dip in a watery egg-flour solution and fry in oil. The batter contains sour cream, which makes it the most tender, airy and pleasant to the taste. For spices, I used salt, pepper and garlic; if you wish, you can choose a different set, the main thing is that the seasonings do not interrupt the taste of the meat. The chops are fried very quickly, they turn out soft and juicy, they can be served with mashed potatoes or rice, complemented with stewed vegetables or a light salad.
Ingredients
- chicken fillet (breast) – 500 g
- sour cream – 2-3 tbsp. l.
- eggs – 3 pcs.
- salt and dark pepper - to taste
- flour – 4 tbsp. l. in batter + 2 tbsp. l. breaded
- garlic – 1-2 teeth.
- water – 2 tbsp. l.
- vegetable oil - for frying
Manufacturing
We wash the breast and cut it into small plates, approximately 2 cm wide.
Sprinkle any piece of fillet with salt and pepper, and then beat it with a kitchen hammer. In this way, we will “spread” the meat fibers, and the fragrant pepper will immediately penetrate into them, and due to beating, all the pieces will turn out flat and will be moderately fried. You can beat it thinly, but not to the point of holes. It is better to cover the top with cling film, then the splashes will not contaminate the kitchen surface, and the hammer will remain unstained.
Place the chopped pieces into a bowl. Squeeze a clove of garlic through a press (if you really like it, then take a couple of cloves). Pour in a couple of tablespoons of cool water. Mix carefully with your hands so as not to break it. Set aside to marinate for 10 minutes. Water is added to make the meat juicier.
Prepare the batter for chicken chops: break the eggs into a bowl, add a couple of pinches of salt, sour cream, and mix thoroughly with a whisk. Then evenly, without stopping stirring, add flour until the batter becomes thick in the mixture (like pancakes).
Heat the refined oil in a frying pan as needed. Alternately bread each chop in flour (just a little, shake off excess), and then in batter and immediately place it on a hot surface. Flour is used here to “seal” any piece, moisture will not escape, and then the batter will stick and set better.
Fry the chicken chops for about 3-5 minutes in well-heated vegetable oil. The heat should be medium so that the meat has time to fry.
Once the bottom side is browned, turn it over and cook for the same amount of time. Don't overcook, the chicken chops cook quickly because they are cut into very thin slices (you can cover them at the end if you are worried about them being soggy).
