Puff pastry with kefir and margarine

To prepare the most delicious, tender dough, you will need few products. From this dough you can make pies and pies, puff pastries and khachapuri, and if you add more sugar, then snail buns.

  • 200 g margarine;
  • two glasses of premium flour;
  • a third of a glass of kefir;
  • tablespoon 9% vinegar;
  • half a teaspoon of salt;

Making homemade puff pastry

The manufacturing itself also differs from the previous method. It is reminiscent of creating puff pastry according to a traditional recipe, but the whole process is simpler and much faster.

  1. Place the drink in a bowl, add salt and a chicken egg, beat well with a whisk.
  2. Sift the flour so that it is saturated with air, this will make the dough softer and more elastic, and you can easily sculpt various products from it.
  3. Add flour to the drink with the egg, add vinegar, and knead the dough. Then cover it with film and put it in the refrigerator for half an hour to “rest.” This procedure is inevitable. The gluten will ripen during aging, and the quality of the dough will be higher.
  4. Cut the frozen butter into slices and divide into three equal parts.
  5. Dust the work surface with flour, lay out the dough, and roll it out into a thin layer.
  6. Place one part of the butter, rolled in flour, on a layer, wrap the envelope, pinch the edges, dust with flour and roll out.
  7. Add the second portion of butter, dipping any piece in flour. Form the envelope again, sprinkle with flour and roll out.

The advantage of such production is the most common ingredients, which, even if they are not found in any kitchen, are literally sold in a store near your home.

  • 350 g margarine;
  • a glass of kefir;
  • a teaspoon of salt;
  • a tablespoon of cognac;
  • half a kilo of flour;
  • chicken egg.

Quickly made puff pastry made with kefir - this is not about the Napoleon cake. This recipe is very different from those presented above, but still the dough is prepared faster than ordinary puff pastry.

  1. From the total amount of margarine, you need to break off 50 grams, this is for the dough. The other 300 grams must be placed on baking paper, covered with it, and rolled out until a layer of approximately a centimeter is obtained.
  2. Place the margarine directly in the paper on the refrigerator shelf. It should rest for about an hour, and during this period of time you can still prepare the dough.
  3. Beat an egg into a bowl, add cognac and salt. Melt margarine - 50 g, cool it, pour it into the egg with cognac. Stir until the salt is completely dissolved, and then add a glass of kefir and mix with a whisk.
  4. Sift the flour, pour the kefir mixture into it, knead the dough for 10 minutes. You need to knead vigorously to make the dough more elastic. The final product should not stick to your hands or to the table. Place the dough in the refrigerator for half an hour.
  5. Rolling: Place the dough on a work surface and roll out into a narrow layer. Place a layer of margarine on top, close the envelope, seal the edges, and roll it out. Fold in 4 layers and put in the refrigerator for half an hour. The function must be repeated 3 times.

All that remains is to bake the shortcakes and cover them with custard!

Prepare the streusel. To do this, grind the butter with sugar and flour until crumbly.

quick-cooking puff pastry - Napoleon. For 14 - 16 servings/600 kcal each.

You need:
900 g flour · 1 liter milk · 300 g sugar · 15 g vanilla sugar · 2 tbsp. spoons of sweet powder · 6 eggs · 2 teaspoons of 5 percent vinegar · 950 g of butter · 0.5 teaspoons of salt.

Cooking:
1. Make quick-made puff pastry. Mix 2 eggs, salt, vinegar. Shake, pour in 200 - 230 ml of ice water. Stir until smooth and put in the refrigerator.

2. Take 600 g of butter and 750 g of flour.
Grind it. We form a slide and pour the egg-vinegar mixture into the middle. Quickly knead the dough, cover with film and place in the refrigerator for at least 3 hours. 3. While the dough is resting, prepare the cream. In a saucepan, mix milk and white sugar. Heat until sugar dissolves. Mix 4 eggs with the remaining flour. Pour a third of the milk and sugar into the egg-flour mixture, stir until smooth and return the mixture to the pan with the milk (so the cream will be homogeneous). Cook until thickened. Remove from the stove and let cool. In a mixer, beat the remaining butter until white. Add custard evenly, then vanilla sugar and beat until smooth.

4. Divide the finished dough into three parts: two huge and one much smaller. Roll out into thin layers. Cover the baking sheet with paper. We prick any layer of dough with a fork or make frequent small cuts with a knife. Bake all the shortcakes one by one for 20 - 25 minutes at 200 °C.

5. Cut two larger cakes in half. Assembling the cake: grease any shortcake with cream, then place the next shortcake on it. Grease the almost finished cake with cream on all sides. Grind the smallest shortbread into crumbs, mix with sweet powder and sprinkle over the dessert.
