- You need to create the filling. To do this, wash the mushrooms and cut them into medium pieces.

Potato zraz has another name, the least known is kartoplyaniki. In fact, these are pies made from potato dough.
To make potato zrazas, you need to prepare their base - the potato dough itself. To do this, mashed potatoes are combined with eggs, butter, salt, and flour. At the same time, if the zrazy begins to burst during frying, it means that not much flour was added to the dough and a little more should be added. If, on the contrary, a lot of flour was added, and the dough is not loose and soft enough, you can add one beaten egg to it and knead the dough well again.
When the dough for zraz is ready, roll the pieces in flour, make a flat cake from them on your hand, flattening the dough. The filling is placed inside it, the edges are sealed, like ordinary pies, and the zrazy is fried in vegetable or butter until golden brown.
The interior for potato pies can be very different - meat (from chopped fried meat, minced meat), mushroom, cabbage, vegetable, cheese, herbs.
To make new potato pans, you can recycle “yesterday’s fresh” products. For example, prepare dough for them using any type of potato, boiled the day before (in their uniforms, boiled tubers for garnish). You can also prepare a filling for them from any type of product that needs to be refreshed - pieces of boiled meat, sausages, boiled tongue, boiled eggs, and so on.

Wash the pork, dry it, grind it in a meat grinder. Add to the pan with the onions. Fry until done over low heat, stirring occasionally.

Peel the potatoes, chop them coarsely and boil them in salted water. Drain all the water and mash the potatoes. Be sure to cool the potatoes!
Add butter to cooled mashed potatoes and add salt and pepper as needed.
Add 2-3 eggs to the potatoes. Add 1 egg to any 400-600 g of mashed potatoes.
Mix everything well.
Knead the dough well. The dough should not be liquid and should not be very sticky.
Pour flour into a plate and use a spoon to place a portion of dough onto the flour.
Roll the dough in flour.
Place the dough in your palm and form a flat cake.
Place the filling on the dough.
Fold over the edges of the dough.
We connect the edges and form a pie.
Press the pie on top and give the potato pan a flat shape.
Place the potato pancakes, seam side down, in a heated frying pan with oil.
Fry until golden brown on both sides over medium heat.
