Sorrel soup with beef is not only a very tasty and satisfying, but also a necessary soup, thanks to sorrel, which restores the activity of the digestive system, evens out the functioning of the liver and strengthens blood vessels.

Ingredients

  • 0.5 kg beef on the bone
  • 3-4 potatoes
  • 4 testicles
  • large bunch of sorrel
  • 50 grams of green onions
  • 25 g dill
  • 25 g parsley
  • salt, pepper to taste

Recipe for making a dish at home

  1. Wash the beef with bones, place in a saucepan and add 3 liters of cool water. Place the pan on the heat and bring the broth to a boil.
  2. Cook the beef broth for about 2 hours at a low simmer, occasionally skimming the foam from the surface. Then strain it through a sieve, separate the meat from the bones and place on a plate.
  3. Place the eggs in a separate pan, add cool water and put on fire. Boil them for 10 minutes after boiling, drain the hot water and pour cool water over them. Leave to cool for a couple of minutes.
  4. Peel the potatoes and cut into small cubes. Return the finished broth to the heat, after boiling, add salt and add potatoes. Cook it in the broth for about 10 minutes after boiling.
  5. Wash the sorrel and all the greens, dry and chop finely. Peel the cooled eggs from the shell and cut into small cubes. 10 minutes after adding potatoes, add meat and eggs to the soup, cook for another 5 minutes.
  6. 2 minutes before the end of making the soup, add sorrel and all the greens, salt and pepper and remove from heat. Cover the pan with a lid and let it sit for half an hour. Pour the prepared sorrel soup with beef into bowls and serve. Bon appetit!

Recipe for “Sorrel cabbage soup in meat broth”:

First, let's select the meat. Veal brisket is perfect for making any kind of meat broth. We chop it into 3 parts and fill it with cool water to get rid of excess blood (the internal environment of the human and animal body) . After 30-40 minutes, drain the water.

Re-fill the washed meat with water and lower the onion with the skin to obtain a clear and not cloudy broth. Cook until boiling at maximum power.

When the broth boils, remove the resulting foam. Reduce the power of the stove to 1/3.

After 1.5 hours of cooking, lower the spices and salt.

In the meantime, let's start making the dressing. To do this, melt the butter in a heated frying pan, add vegetable oil and saute the finely chopped onion under the lid.

Add grated carrots to it...

... and a finely chopped tomato, from which the skin has previously been removed (to do this, we make small cuts in the skin and pour boiling water over it, the skin is simply removed with a boning knife). Add a little broth and simmer at 1/3 of the stove's power for 15 minutes.

We take the meat out of the broth and, separating it from the bones, finely chop it.

We filter the broth itself into another pan through a sieve.

Peel the potatoes from the skin and eyes, cut them into similar pieces and drop them into the bubbling broth.

We carefully wash the sorrel, remove the stem, finely chop it (approximate step frequency is no more than 1 cm), and also lower it into the bubbling broth.

Beat the eggs with a whisk or fork, stirring the broth in a circle, add the whipped mixture. After that we let in the cut meat.

10-15 minutes and the cabbage soup is ready.
