Ingredients:

  • Feta – 100 g
  • Fresh cucumber - 1 pc.
  • Cherry tomatoes - 9-10 pcs.
  • Sweet bell pepper - 0.5 pcs.
  • Greenish olives - 10 pcs.
  • Lemon juice - 1 tsp.
  • Salt - to taste
  • Pepper - to taste
  • Greens - 1 bunch (for serving and decorating the dish)

Manufacturing:

We thoroughly wash the vegetables in cool water. Peppers, olives and half of the cherry tomatoes finely. Add lemon juice, salt and pepper to taste to the chopped vegetables.

Fry our vegetable mixture in a frying pan (without oil) for 5-7 minutes and let cool slightly.

Mash the curd cheese with a fork and mix with the fried vegetables.

We cut the cucumber lengthwise with a paring knife. You get thin slices of cucumber.

We put our filling on a layer of cucumber and roll it into rolls.

Greetings to all! Now I would like to share with you a recipe for pickled cucumbers for the winter without sterilization. The cucumbers turn out crispy and very tasty. Everyone will ask you for the recipe for such unique and tasty cucumbers.

Ingredients

Ingredients for 1 liter jar:
cucumbers 500 g
garlic 2 cloves
dill umbrella 1 PC
parsley 3 branches
Bulgarian pepper 150 g
For the marinade: 0.5 liters of water
salt 0.5 tbsp
vinegar 9% 20 ml
dark pepper 2 pcs
allspice 3 pcs
sugar 1 tbsp.

So, before pickling, fill the cucumbers with cool water and leave for at least 2-3 hours. After the time has passed, cut the bell pepper into small strips, chop the garlic in a random shape, as comfortable for you.

Then, using a vegetable peeler, cut the cucumbers into thin slices, do not throw away the thick pieces, we will need them to fill the jar.

Now put an umbrella of dill, parsley sprigs at the bottom of the jar, add garlic. Next, take a slice of cucumber and wrap a strip of bell pepper in it to make a roll. We fill the jar with these rolls. We put pieces of cucumbers on top so that the jar is full and there is no empty space.

Now fill the cucumbers with bubbling water, cover with a lid and leave to stand for 10-15 minutes. After the time has passed, drain the water from the jar into a container in which we will prepare the marinade.

We put it on the fire, and as the water begins to boil, add dark and aromatic pepper, sugar, and salt. Mix everything well and boil for 3 minutes.

Fill the jars to the top with hot marinade and add vinegar. Screw the lid on tightly, check to see if the lid is leaking, wrap it in a blanket or warm towel and leave until it cools completely. Store pickled cucumbers in a cool place.
