As for the sauce, I advise you to choose good-quality tomato paste that does not sour - the final taste of the sauce will directly depend on this. Instead of paste, you can use tomatoes canned in their juice and pureed.

- minced gov. or pork and beef – 500 g
- small onion – 1 pc. (20 g)
- snow-white loaf crumb – 40 g
- water – 3 tbsp. l. (for loaf)
- egg – 1 pc.
- salt - approximately 0.5 tsp.
- pepper - to taste
- chopped parsley – 1 tbsp. l.
- dried basil – 1-2 chips.
- vegetable oil – 2-3 tbsp. l.
- large onion – 1 pc. (90 g)
- garlic - 3 teeth.
- tomato paste – 75 g
- hot pepper (flakes) – 0.5 tsp.
- dry oregano – 1 chip.
- dry basil – 1 chip.
- salt - to taste
- sugar – 0.5 tsp.
- water – 400 ml
- vegetable oil – 1 tbsp. l.
Manufacturing
Peel the onion and garlic and chop finely with a knife. Heat 1 tablespoon of vegetable oil in a saucepan, add the tenderloin into it and lightly salt it (this will allow the onion to juice faster and soften, and you will use less oil). Cook over low heat, stirring frequently, until softened, about 3-4 minutes.
Add tomato paste. Stir quickly until slightly fried.
Pour in water. Add hot Turkish pepper flakes, sugar, dried herbs. Cover the saucepan with a lid, place on low heat and simmer the sauce for 15 minutes.
Meanwhile, soak the loaf in a small amount of water (without the crusts, grate the crumb on a large grater, and then add water). Mix it with minced meat, eggs and onion fried until soft. Add chopped parsley and a pinch of dried basil, salt and pepper to taste.
Mix the minced meat with your hands, beat it into a lump a couple of times and forcefully throw it back into the bowl. Due to this beating, it will become denser, and the meatballs will keep their shape better and will not fall apart. Form meatballs from the minced meat, ideally large ones - approximately 4-5 cm in diameter, 50 g each. This way they will be juicier and easier to fry.
Fry the meatballs in a frying pan with vegetable oil over high heat. There is no need to bring them to readiness. Fry very quickly so that a crust forms on all sides.
Drain excess oil and rendered fat from the frying pan (so that the dish is not very greasy, especially if you cook it from ground beef and pork). Pour sauce over meat balls.
Simmer covered over low heat for another 20-30 minutes until fully cooked.
Serve hot. Meatballs turn out juicy and soft, soaked in a fragrant sauce.
