- sugar – 125 g;
- salt – 40 g;
- vegetable oil – 0.25 l.
- Wash the cucumbers thoroughly and cut them into thin elliptical slices.
- Wash the tomatoes and peppers. Cut out the stem of the tomatoes with the seal around it. Remove seeds from peppers. If you want the appetizer to be spicier, you don’t have to remove them from the bitter capsicum.
- Cut the tomatoes and peppers into pieces and grind them through a meat grinder.
- Using the same method, chop the garlic cloves.
- Place the cucumbers in a thick-walled saucepan, and pour the tomato, pepper and garlic puree into it.

- 1 pod of hot pepper;
- 7-8 tablespoons of vegetable oil;
- 3-4 tablespoons of vinegar with a concentration of 9%;
- 2 huge spoons of sugar;
- 1 tablespoon salt.
We will act like this:
Step 1. Prepare all the ingredients, wash the cucumbers, peppers and tomatoes. Tomatoes can be scalded with boiling water (blanched) and their skins removed.
Cut the tomatoes into pieces and put them in a meat grinder or blender. By the way, it is not necessary to grind tomatoes in a meat grinder - you can simply chop them finely with a knife.
Step 2. At the same moment, you can grind the bell peppers in a blender. On the other hand, you can cut them into small pieces. Then you get something like lecho, but only spicy.

That is why, to make such a dish, you can use any cucumbers (only, of course, not bitter ones). The size, shape and color of the fruit are not particularly important.
Let's take the following ingredients (you'll get 4 liter jars of the finished dish):
- 2 kg - cucumbers;
- water - 1 liter;
- sugar - half a glass;
- salt – 1 large heaped spoon;
- citric acid – half a dessert spoon, i.e. 5 g;
- peppercorns - a few pieces to taste;
- dried cloves - 5 buds.
As you can see, now we are consciously moving away from both tomatoes and tomato paste. It turns out to be a purely cucumber story, but not as sharp as in the previous case.
To make the “Mother-in-Law’s Tongue” snack from overgrown cucumbers, you can optionally return all the traditional ingredients - for this amount it is 1 pod of bitter pepper, 3 bell peppers and 1 kg of tomatoes.

Step 1. Prepare all the ingredients - you need to carefully sort and wash the cucumbers. If necessary, cut off all cracks and other damage.

The question is often asked: is it possible to prepare “Mother-in-Law’s Tongue” without sterilization?
Still, there is no need to ignore the processing of cans. In addition, the sterilization procedure itself is easy - there are at least 3 options:
- Holding the jars over boiling water for 15 minutes is the traditional option.
- You can also put the containers in the oven for the same 15 minutes (temperature 180 o C).
- After all, in every kitchen there is a microwave, where you can also put jars for 3-4 minutes (turn it on at full power).
But due to the presence of pungent ingredients, as well as vinegar, sterilization of mother-in-law’s tongue cucumber salad jars for the winter is not required. But in this case, the following rules must be observed:
- thoroughly wash the vegetables and pour boiling water over them before adding the mixture;
- put stewed vegetables in jars only when they are hot, and immediately roll up the jars;

- Process the peppers, both bitter and sweet, removing the seeds.
- Grind the tomatoes, bitter and bell peppers, and garlic through a meat grinder. Place the garlic mass in a separate container, and stir the tomato and pepper pastes.

- Pour boiling water over the tomatoes and remove their skins. Use a knife to remove the seal around the stalk. Cut into small cubes and place on the bottom of the pan. Please note that you do not need to puree the tomatoes for this recipe. The pieces of tomatoes found in the appetizer give it a special taste.
- Peel the hot and sweet peppers. Cut, scroll through a meat grinder.
