Soups are an indispensable dish for the everyday diet. It saturates the body with a mass of necessary substances, restores digestion, and promotes the production of energy, which is so necessary for an active lifestyle.
According to culinary traditions, any meal should begin with the first course.
Now we will tell you about making a thick, rich pea soup that will warm your household in cloudy weather.
To make it you will need:
- Meat 400 gr.
- Potatoes 3 pcs.
- Peas 100 gr.
- Onion 1 pc.
- Half bell pepper
- Carrot 1 pc.
- Tomato 1 pc.
- Salt, herbs, spices to taste.
- Half a loaf
- A pinch of salt
- Garlic 3 cloves
- Ground dark pepper
- Vegetable oil 3 tbsp.
Manufacturing:
For soup, I usually use bones because they give a good broth, namely ribs.
Pour water into a saucepan and put on fire. When the water boils, add the washed ribs and cook over low heat for 1 hour. Then we remove it from the broth, cool it, separate the meat from the bones, cut it into small pieces, and put it back into the broth. Add carefully washed peas and cook for 20 minutes.
Wash the potatoes well, peel and cut into strips. Add to the broth.
While the potatoes are boiling, prepare the frying. Wash, peel, and cut peppers, carrots, and tomatoes into cubes. Peel the onion, rinse in cool water, chop. Then fry the vegetables with a small amount of vegetable oil: onion until golden brown, then add other vegetables.
Add our roast and salt to the broth and cook over low heat until the peas are cooked. Then remove from heat, let it brew for 5 minutes, and the soup is ready. It is important to add salt specifically at the end of production, when the peas have softened slightly. In salt water, beans do not cook well and may remain tough.
Let's start making croutons. It’s better to take a loaf “yesterday’s”, or use the freshest one, but dry it beforehand. Cut half the loaf into cubes.
Squeeze the garlic using a garlic press.
Place the loaf in a plastic bag, add garlic, butter, and salt.
Inflate the bag and mix thoroughly.
It is important not to overdo it with salt, because the soup may be too salty. Place the mixture on parchment paper and send it to dry in the oven for 10 minutes at 200 degrees.
You can add a little cheese to the prepared hot croutons.
We ended up with a very appetizing, hearty, fragrant soup. Pour the hot dish into plates, decorate with herbs and add crackers. Bon appetit!

Cut the potatoes into pieces.

Let's deal with peas for soup. This product is cheap and affordable. You need yellowish, ripe peas. At the moment, varieties are available that cook quickly; they are usually sold in stores. They have less taste, but it’s frankly more convenient - than soaking them, cooking them for hours and making sure they don’t burn.
When it comes to smoked meats, everything is simple: the more natural the product we use, the better the result. Advice - take only smoked ribs and prime rib, not marinated in watery smoke, but the real thing. These can be purchased from small farmers; they usually come from villages on weekends and trade in markets. This is a real product, it does not sting your nose with a powerful smell and does not hurt your eyes with a reddish color.
How will we cook the soup? We need a saucepan for soup and a separate, much smaller saucepan for boiling peas (a three-liter one is perfect), and also a frying pan for sautéing.
Step 1
Let's start with peas. We rinse. Fill with water to cover the palm of your hand and set to simmer over low heat. Over time, foam will rise - this is protein, collect it. Then add a teaspoon of soda and continue cooking. Soda helps the beans cook faster. And make sure the peas don't burn. Stir, reduce heat if boiling requires. The goal is to get 100% boiled peas. To do this, you need to cook it for at least an hour. In the meantime, let's move on to the remaining ingredients of the soup.
Step 2
Cook the ribs and potatoes. Together.
Everything is very simple - cut the potatoes into 2-3 cm cubes or pieces of any random shape, put them in a pan along with the ribs and fill with cool water.
There doesn’t have to be a lot of water - just enough to cover the potatoes with ribs, almost enough to cover them by a couple of fingers. Cook over medium heat for 15 minutes until the potatoes are ready. Salt after boiling.
While the potatoes are cooking, there is time to start sautéing.
Step 3
On low heat you need to fry the onions and carrots with the least amount of vegetable oil. And here is the boss's advice. The carrots must be grated on the smallest grater and on a medium grater - approximately in half. Why on the smallest one? For color.
First, fry the onion with the undercut, cut into a 5 mm cube. Later add carrots. Sprinkle it with sugar. And fry over medium heat for about 10 minutes.
Step 4
As a result, we have pea puree ready, potatoes with ribs are boiled and waiting, and the onion and carrot sauté is fried and also ready.
The next step is to combine everything and bring it to taste. Let it boil, add a few bay leaves and 5-6 dark peppercorns. If required, add salt. And as soon as the soup boils, it’s ready. Now let it brew for half an hour, and you can start your meal.
And while the soup is steeping, you can have time to prepare crackers, croutons, croutons - whatever you like.

Pea soup without meat is just a good dish for those who are on a diet or fasting. If you prefer rich meat soups, then at any time you can correct this by adding, for example, a couple of tablespoons of stew to the lean pea soup during cooking, or by cooking the pea soup in meat broth from the very beginning.
Of course, pea soup, whether it is with or without meat, must be served with croutons. It tastes better this way.
Ingredients:
- peas - 2 cups,
- onion - one large,
- one carrot,
- potatoes - 5 medium tubers,
- salt, ground dark pepper - to taste,
- dill greens,
- two slices of bread
- rast. oil – 4 tbsp. spoons,
- garlic – 1 clove,
- bay leaf – 3 pcs.
How to cook:
To make delicious pea soup, the most important thing is to properly cook the peas. After all, everyone understands that it takes a long time to cook. Therefore, in order to reduce production time, it is necessary to soak it in water beforehand.
1. In order to soak peas, you need to wash them properly. Later, add plenty of cool water. And leave it for at least 4-5 hours. And it’s best to soak it in the evening (like me). After the peas have swollen, they need to be washed under running cool water a couple of times.
Fill the peas with clean water and place the pan over high heat. Leave the lid slightly open. Therefore, after boiling, a lot of foam will appear. It needs to be removed and the fire reduced. Cook peas for 40 minutes. I love it when the peas are completely boiled in the soup. So, I'll cook it a little longer.
2. While the peas are cooking, prepare the vegetables. We peel all vegetables from the outer skin and thoroughly wash them. We cut the potatoes into small cubes, the carrots can be grated or cut into strips.
And the onion needs to be finely chopped
Chop the peeled garlic and pour 1 tbsp. spoon rast. oils This little bit of garlic is a preparation for our future croutons. Not long ago I made Caesar salad with croutons like these.
3. Let's move on. Pour 3 tbsp into the pan. spoons of vegetable oil. We wait until it starts to bubble and first add the chopped onion and fry it until slightly golden brown.

5. Meanwhile, let's prepare garlic croutons for our pea soup. Cut the bread slices into small cubes and dry them in a frying pan or in the oven over very low heat. Shake the pan occasionally to turn the crackers. When the crackers are browned, you need to pour in the garlic oil prepared in advance, but without garlic. Place the croutons in the pan for a minute and remove from heat. Indescribable smell in the kitchen.
6. Now add the sautéed vegetables to the pan with the pea soup.
Stir and season with dill. In my case, dry dill. Cover the pan with pea soup tightly with a lid and let it brew. In terms of taste, it is better to add dill specifically pea dishes
Pour the pea soup into bowls and use spoons. Well, of course, put garlic croutons on top of the pea soup. A good combination and very tasty!
