And so as not to find it again and again, not to try and not make mistakes, I offer you an excellent recipe for dumplings dough made with kefir, which I have personally tested.

Dumplings with this kefir dough turn out tender, but quite elastic to hold the juicy berry filling inside. This dough for dumplings on kefir has a gentle neutral taste and can be used to make both dumplings with sweet insides (cottage cheese, cherries, strawberries, and so on) and savory ones (potatoes, liver, mushrooms, meat, cabbage, and so on). Working with such dough is a pleasure. It is flexible, elastic, and can be easily rolled out with a rolling pin.

In some versions of the dough recipe for dumplings with kefir, you can add soda to the dough. I don’t put it in this dough. It has been verified more than once that dumplings prepared using this dough with kefir still get “lush” during cooking, and even without soda in the dough. And if you add soda, the dumplings will completely blow away.

  • 0.3 teaspoon salt
  • 1 teaspoon sugar

We take a huge container in which we will knead the dough for dumplings with kefir, and drive one egg into it. Immediately add a third of a teaspoon of salt and one teaspoon of sugar to the egg.


Beat the egg with a whisk or just a fork. Add a glass of kefir (250 ml). If you have less kefir than required for the recipe, you can safely supplement it with ordinary water. But still adhere to the rule that kefir must be more than half the required size.


Add flour to the bowl. First, add two glasses and stir the dough with a spoon.


Then add the remaining flour in small portions (half a glass each) and continue kneading the dough for dumplings.


Finally, transfer the dough to a clean table sprinkled with flour and knead the dough with your hands. If the dough sticks to the table, add a little flour (1-2 tablespoons) and continue kneading it until smooth and elastic. According to my calculations, the dough for dumplings made with kefir has to be actively kneaded for about 3-5 minutes.


But that is not all. In order for the dough to be completely prepared for the process of making dumplings, it must rest for about 15 minutes. Place the dough for kefir-based dumplings in a bag or wrap it in cling film to prevent drying and weathering, and leave at room temperature for 15 minutes. During this period of time, you can have time to prepare the filling for the dumplings.


The dough for dumplings made with kefir is 100% ready for future use. It can be prepared in advance and stored in the refrigerator in a bag or cling film for 24 hours.

Step 1

It’s simple, let’s prepare the food, although I didn’t put the vegetable oil in the frame, I missed it. I sifted the flour and took the middle egg.

I pour the drink into a bowl, 1.5% or 2.5% is suitable, you can also take homemade. It needs to be heated, it should be warm, but not hot, do not overheat it.

I add one medium-sized chicken egg.

Step 3

Add salt and baking soda (ordinary baking soda). I stir with a fork to combine the yolk and white.

Step 4

Pour in refined vegetable oil. I show everything step by step, but it’s so simple, any child can do it.

Step 5

I pour the watery component into the flour and mix everything. I added half the flour so that I could add it in parts.

When the dough reaches its thickest consistency, I add another portion of flour. I mix with a spoon or a fork, no matter what.
