Step 1. I decided to cook not just scrambled eggs from quail eggs, but supplement it with 2 ingredients that gave it more smell and taste. These are champignons and onions. It is with champignons that I will begin making scrambled eggs with quail eggs. Mushrooms must be washed under running water.

I never mix mushrooms with oil because they release a lot of water. First, I put them in a frying pan without oil and evaporate the excess liquid. And then I pour in vegetable oil or butter and fry them until browned. We cut the champignons in half, then each half lengthwise into two or three parts. Place the champignons in a frying pan without oil, put on high heat and stir.

Step 2. While the liquid from the mushrooms is evaporating, you need to peel one large onion and cut it into small cubes.

While we were doing these manipulations, the liquid from the mushrooms had completely evaporated. Pour in vegetable oil, add onions to the mushrooms and fry for about 5 minutes over medium heat, do not forget to stir.

Step 3. Set the heat to low and begin adding quail eggs to the scrambled eggs. We pierce the lower part of the egg with a knife and cut the shell along with the film in a circle. Pour the quail egg into the frying pan. We do this with all the eggs.

Salt and pepper the scrambled eggs with quail eggs and leave in a frying pan over low heat. When the whites turn snow-white and the yolks darken, the scrambled quail eggs are ready.
