Everyone will like them without exception. Frisky buns made with kefir turn out to be very fluffy, soft and fragrant. They can be given different shapes according to your wishes: sprinkled with sugar, poppy seeds or greased with fondant. It’s a pleasure to work with kefir dough for buns in the oven. How to choose the right products

  • For the test, you can use the drink, both fatty and low-fat. I usually buy 2.5%. A drink with an expiration date, and even a slightly expired one (but not spoiled) is perfect - the more acid in kefir, the better the dough rises with the help of baking powder.
  • Baking powder can be replaced with soda. You need to take a teaspoon without the top. There is no need to extinguish the soda - the acidity of kefir will be enough.

Step-by-step production

  1. Because these buns are the fastest to make of all that I understand, first we need to preheat the oven to 190-200 degrees. After this, sift 3 cups of flour into a bowl.
  2. Add 2 teaspoons of baking powder. For unsweetened baking, add 1.5 teaspoons of salt and a tablespoon of sugar, for sweet – a level teaspoon of salt and 3-5 tablespoons of sugar, to your taste.
  3. Stir the mixture with a spatula.
  4. In another bowl, mix 300 ml of kefir and 1 tablespoon of vegetable oil.
  5. Pour in the dry mixture and knead the dough, evenly adding another glass of flour.
  6. The dough should be soft, but not sticky.
  7. We form a sausage out of it and divide it into 8-10 approximately similar parts.
  8. Roll each part into a ball. It can be flattened a little.

They are prepared very quickly and simply and turn out no less fluffy and rich than those made with yeast dough. Another advantage of kefir buns is that they don’t require many ingredients. In addition to flour and kefir, sugar and butter are also useful; in some recipes, eggs are also added to the dough. It is imperative to add a little soda and salt to the kefir dough, as well as baking powder. It will make the dough tastier and fluffier. Kefir buns can be prepared with any kind of filling: poppy seeds, chocolate, cottage cheese, raisins, cinnamon, candied fruits, fruits, etc. Kefir buns are baked at a temperature of 180 to 205 degrees until ready.

  • Butter – 50 g;

  • 1 egg + butter - for greasing.

  • 1/4 kg cottage cheese;
  • Raisin;
  • 15 g sugar;
  • Vanillin – 2 g;
  • Ground cardamom – 1 tsp.

  • Potato starch - 1/2 tbsp. l.;
  • Spoon of sugar.

Beat the egg with a mixer, add sugar, stirring constantly. Pour in the drink and continue whisking the mixture. Add salt and soda and add soft butter. Add flour and knead into a non-sticky elastic dough. Form into a ball and leave for 10 minutes. Grind the cottage cheese with sugar, add raisins, vanillin and cardamom. Mix the filling properly. Peel and grate the banana and pear, mix with starch and sugar. Roll out half of the dough into a narrow layer. Place the curd filling, spacing out slightly along the length.
