When I first heard the expressions “cherry soup” and “watermelon gazpacho,” I smiled skeptically, considering the idea to be an invention of a bike I already owned but didn’t drive. Soup is a soup, it can be hot or cool, but not fruit and berry. And later, looking at the dacha children flying into the house to eat and flatly refusing botvinya, beetroot soup or okroshka, I thought: “Why not?”

Initially, this soup was prepared from cherries with pits. They give the dish a unique smell and slightly nutty taste. (For this same reason for us, the French prepare the clafoutis dessert only with pitted cherries.) If you are cooking for children and the older generation, then it is better to remove the pits.
Ingredients: 500 g cherries or sour cherries, 1 liter of water, 2 cinnamon sticks, 4-5 dry cloves, 3-4 tbsp. l. sugar, a pinch of salt, 1 cup of sour cream, 1 tbsp. l. flour, 100 ml of cherry juice for kids or 100 ml of red wine for adults (optional).
Way:
Peel the cherries. Fill with water, add sugar, bring to a boil. Reduce the heat, add cinnamon and cloves and cook for about 10 minutes until the cherries become completely soft.
In another bowl, combine sour cream with a pinch of salt and flour. Stir, add a little hot cherry syrup and whisk. Add the resulting homogeneous mass back into the soup and cook, without bringing to a boil, for about 5 minutes. (At this time, if desired, you can add cherry juice or wine, which will enhance the taste of the dish.)
Remove the cinnamon sticks and all the cloves. Let it cool to room temperature and put the cherry soup in the refrigerator until it cools completely.
We serve it to children playing outdoors or in the yard, and certainly to their grandparents, who have a hard time withstanding the heat, often refusing food during the day.
For those who are not very fond of the smell of cloves and are not tolerant of the gluten contained in flour, I offer the following modern recipe.

Ingredients: 5 cups of water, 700-800 g of cherries (both fresh and frozen), 3 tbsp. l. sugar, 3 cardamom seeds or 1/8 tsp. peeled ground, half a cinnamon stick, 2 tbsp. l. corn starch diluted in 2 tbsp. l. water; 1/2 cup sour cream or yogurt, juice of half a lemon, mint and whipped cream for serving (optional).
Way:
Combine cherries with water, sugar and all the dry spices. Bring to a boil and cook for 10 minutes if the cherries are fresh, and 15 minutes if frozen.
We dilute corn starch in a small amount of water and add it to the soup, then turn it off after 1 minute.
Now add sour cream or yogurt. Take out the cinnamon and cardamom grains, if you used whole ones, transfer the mass to a blender and puree until smooth, adding more sour cream or yogurt as needed.
At the end, add freshly squeezed lemon juice. Cool and then put in the refrigerator for two to three hours.
Serve in portions in glasses, sprinkled with fresh mint leaves or fresh cherries, with whipped cream. Then the cool soup will make a good summer dessert.
Strawberry soup

Ingredients: 8 cups chopped strawberries, 2 cups vanilla or strawberry yogurt, 1/2 cup orange juice, 1-2 tbsp. l. sugar, dry ginger on the tip of a knife or 5 basil leaves (optional for adults), mint leaves for decoration, whipped cream or ice cream for serving (optional).
The method is simple. Place strawberries with orange juice and sugar in a blender, puree, add yogurt, mix, beat again, cool in the refrigerator, serve with pieces of fresh strawberries and mint leaves.
For the Italian restaurant version of the soup, add 1 tsp to the blender. balsamic vinegar or sauce, ground black pepper on the tip of a knife and chopped basil leaves. All of these ingredients blend perfectly with strawberries.
Pineapple soup

Ingredients: 1.5 cups of peeled and cut into pieces the freshest pineapple (or washed in a jar with 1 tbsp of lemon juice added to it), 2 tbsp. l. Finely chopped onion, 2 tbsp. l. chopped sweet pepper, 1/2 cup coconut milk, 1 tbsp. l. vegetable or butter, 1/2 cup boiling water, 1 tsp. ground white or black pepper, a pinch of salt, cilantro for serving, starch diluted in water (optional and only for thickening the soup).
Way:
Pour boiling water over small pieces of pineapple cubes and cook for 3-4 minutes until softened completely, so that the texture can be seen later. (If you want absolute puree soup in the end, then until complete.)
Place the pineapple pieces in a colander, drain the liquid and temporarily set aside. Puree the pineapple with a mixer or in a blender.
Heat oil in a frying pan (butter is tastier, but vegetable oil can also be used). Sauté the onion until translucent, then add the sweet bell pepper. Add the pureed pineapple, salt and pepper and cook for about a minute over low heat.
Now add coconut milk and pineapple making liquid. Mix well and turn off the heat here.
If, in your opinion, the soup comes out very watery, add corn starch diluted in water as a last resort. If the pineapple you choose lacks natural sweetness, add a little sugar. If you don’t have enough fresh sourness, lemon juice.
Let the soup cool completely and put it in the refrigerator for at least an hour.
Serve in portions with cilantro leaves and chili pepper rings - for adults, with pieces of fresh or canned pineapple - for kids.
An absolute hit this summer are also soups made from blueberries, blueberries, nightshade or blackberries.

Recipe 1: Rice Fruit Soup with Carrots
Recipe for a sweet, but hearty and nutritious fruit soup. You can use any kind of rice: long, round, large or small, steamed. Dried fruits give the dish quite a bit of sweetness, but if not too much, you can also add sugar.
Ingredients
• 80 grams of dried apricots;
• 80 grams of raisins;
• 50 grams of rice;

1. Boil water. Add grated carrots and set to cook for three minutes.

3. Add banana, which also needs to be peeled and cut. Here the size of the pieces can be any size, because the banana is quite soft.
4. If the yogurt is sweet, then you don’t have to add anything. If you use unsweetened milk products, then add sugar, cinnamon, vanilla, stir well to dissolve.

Recipe 3: Fruit soup “Okroshka”

• 1 liter of lemonade;

• 200 grams of dried fruits;

1. Wash dried fruits, add water and boil. But not until fully prepared. Fruits should not boil down and become tasteless.
2. Add sugar to taste.
3. For dumplings, beat two eggs in a glass with a pinch of salt and add milk or water to the top. Combine with flour and knead into a soft dough. Using the mixture as for pancakes.

Ingredients
• 700 grams of apples;
• 100 grams of round rice;
• 30 grams of sugar;

1. Wash the apples and remove the skin. Cut into cubes, add water and boil until the pieces are soft. But make sure they don't get overcooked. This especially often happens with summer apples. Let the broth cool.

5. Place the dumplings in plates, pour in the chilled soup and add cream.
Recipe 6: Fruit and chocolate soup
Fruit soup with chocolate is simply magical! To make it, you will need any kind of juice: orange, apple, grape, you can take a mixture of several types. You can take milk or dark chocolate.
Ingredients
• 100 grams of chocolate;
• 4 tablespoons of sweet powder;
• 1 pinch of vanilla;

1. Pour water into a saucepan, add pieces of chocolate and place on the stove. The chocolate will melt, let the consistency boil.

- Cut the other pears into thin slices and place on a baking sheet, previously covering it with baking paper.
- Place in the oven for fifteen to twenty minutes at a temperature of no more than 100 sixty degrees.
- Cut the ice cream into cubes and decorate the soup with it, placed in small but deep plates.
- Raspberries are also great for decoration, so the freshest berries are ideal.

Orange-cherry soup
- Two oranges;
- half a kilo of cherries;
- a little cinnamon;
- 100 g sugar;
- three hundred ml of snow-white wine;
- one and a half teaspoons of corn or potato starch;
- two tablespoons of cherry tincture;
- mint leaves;
- confectionery flowers for decoration.
- Remove the zest (peel) from the oranges and cut it into thin strips. You can immediately use the special part of the vegetable peeler.
- Remove the snow-white skin and membranes from the peeled oranges and cut the fruits into slices.
- Remove the pits from the cherries. This can be created using a hairpin.
- Mix fruits and berries in one saucepan.
- Add 100 70 5 ml of water, cinnamon and sugar, put it on the stove and bring to a boil.
- Leave to cook until the sugar crystals are completely dissolved.
- Add wine, zest and starch, diluted with 2 tablespoons of water.
- Bring to a boil, stirring constantly.
- Remove from the stove and let cool.
Make a puree from one third of the acquired mass and combine in a saucepan for serving with the rest. Cool in the refrigerator. Before serving the soup to guests, you can add champagne and cherry liqueur to it, and also garnish with flowers and mint.
Such a dish will be a good decoration for your holiday and can simply complement or even replace alcoholic drinks, which you don’t want to drink a lot of on a warm summer day.
Rice vitamin soup
Unlike previous options, this dish differs in its nutritional value. You can take any kind of rice at your discretion - short-grain, long-grain or steamed. Because dried fruits are used as ingredients here, it may not be sweet enough for some. In this case, it is quite simple to add the required amount of sugar.
- 8 grams of dried apricots;
- 8 grams of raisins;
- 50 grams of rice;
- three apples;
- one and a half liters of water;
- a couple of medium-sized carrots;
- sugar as needed.
- Bring the water to a boil and add the carrots, crushed using a grater, to the pan with it. Leave on low heat for three minutes.
- Carefully wash the rice and add it there.
- We also wash dried fruits and fruits and remove seeds.
- Cut dried apricots and apples into cubes.
- First, place the dried fruits in the pan, and after the water boils again, add the apples.
- Cook the soup until the rice is cooked to a suitable stiffness.
