Quiche (from the French quiche - pie) is a French cuisine dish invented in Germany. Economical and inventive German bakers did not want to throw away the leftover dough when making bread and began to use it as a base for the pie. Everything that came to hand went into the filling.
The sophisticated French changed the ingredients, made the dough more crumbly and the filling more airy.

Ingredients
For the test
- 250 g flour;
- 150 g butter;
- 1 chicken egg;
- a pinch of salt.
For the inside
- 300 g chicken fillet;
- 300 g champignons;
- 1 onion;
- a pinch of salt.
For filling
- 200 ml low-fat cream;
- 2 chicken eggs;
- 100 g cheese;
- greenery.
Manufacturing
First, prepare the dough. Mix the sifted flour with salt. Chop the frozen butter into pieces and add to the dry mixture.
Grind everything into crumbs. Add the egg and knead the dough.
Place the finished dough in the refrigerator for 30 minutes. At this time, take care of the inside.
Rinse the chicken fillet, remove excess fat and cut into small pieces.
Place in a saucepan, add water and cook.
Finely chop the onion. Fry it in vegetable oil until golden brown.
Wash the champignons, cut into small slices and add to the frying pan with the onions. After 7-10 minutes, add the chicken to the vegetables. Mix the filling and turn off the heat.
Roll out the finished dough and place in a baking dish. Use a fork to make holes all over the surface.
Place the baking sheet with the dough in an oven preheated to 200°C. Bake for 10 minutes.
At this time, start making the filling. In a deep bowl, mix the cream and egg. Beat with a whisk or fork.
Finely chop the greens. Grate the cheese.
Remove the dough from the oven. Lay out the filling and add the filling.

Recipe for French Quiche with Chicken and Mushrooms:
Chop the flour and butter until crumbs come out. Add the egg and knead the dough.
Cut the chicken fillet into small pieces and fry in vegetable oil until golden brown.
Add chopped mushrooms to the chicken, add a little water, add salt and simmer until done.
Place the dough in a baking dish, pierce the dough with a fork and bake in an oven preheated to 200°C for 10 minutes.
Lightly beat the eggs with cream and a pinch of salt.
Place the filling into the dried dough, pour in cream, sprinkle with grated cheese and chopped herbs. Bake in the oven for 30-40 minutes at 200°C.
Serve warm.

Step-by-step production
Preparing the base for quiche (short pastry)
- Sift wheat flour (170 g) into a medium bowl. Add chilled butter (150 g) and ice water (3 tablespoons) to the flour.
- Use a fork to form the dough into crumbs.
- Then knead the dough with your hand and form a ball, which you wrap in a bag or cling film and put in the refrigerator for 30 minutes.
Preparing the filling
- Cut the previously boiled chicken fillet (2 pieces) into large cubes and place them in a separate bowl.
- Peel and finely chop the onion.
- Place the frying pan on the fire and add butter (20 g) to it. Fry the onion cubes until golden brown, stirring occasionally with a spatula.
- Place the fried onion in a bowl with the chopped fillet.
- Wash and chop the freshest dill (7-10 sprigs). Add it to the bowl.
- Grate hard cheese (150 g) on a large grater and also add it to the bowl with the chicken fillet, onions and herbs.
- Beat chicken eggs (2 pieces) into the ingredients and pour in cream (200 ml). Stir well.
- Salt and add dark ground pepper to taste. Stir again. The inside is ready.
Assembling the quiche for baking
- Sprinkle the worktop with flour and roll out the dough into a circle using a rolling pin. Its size should be exactly the same as the mold with small sides.
- Line the pan with baking paper and transfer the rolled out dough into a circle using a rolling pin. Carefully spread the dough over the pan and press the sides.
- Spread all the filling sparingly over the pie base.
- Send the cake to bake in an oven preheated to 180 degrees for 25 minutes.
- Once time has passed, remove the pie from the oven.
Decoration methods and serving options
Quiche is a popular dish in French cafes and restaurants. There it is served together with a salad as an appetizer before the main course for lunch, or as a brunch dish (second breakfast or early lunch). The quiche must be warm or at room temperature until the pie is slightly crispy.
