Step-by-step production
Step 1:
You can choose the amount of fruit according to your own taste. You can take more plums, or you can add plums and apples in equal proportions. A glass of sugar is needed for two liter jars. The compote will turn out to be slightly concentrated and in winter, when consumed, it will need to be slightly diluted with boiled water.
Step 2:
First, let's start sterilizing the jars and lids. Place the lids into the pan and fill them with water.
Step 3:
We install a ring on top for sterilizing jars and place the jar on it. Place on fire and sterilize each jar for 5-7 minutes. The lids of the jars are also sterilized immediately.
Step 4:
Great for washing plums and apples. Let the water drain, and in the meantime put a pot of water on the stove so that the water boils.
Step 5:
Cut the plums in half and remove the pits.
Step 6:
Cut the apples in half, take out the middle, and then cut them into slices.
Step 7:
Place plums and apples in prepared jars in layers.
Step 8:
Fill the jars with bubbling water up to the neck, cover with lids and leave to cool.
Step 9:
When the future compote has cooled down so that you can hold the jar with your hands without getting burned, pour the compote water into a saucepan and bring it to a boil again. Pour in the fruit again. In this way, the fruits themselves are sterilized and the finished compote will last for a long time.
Step 10:
Fill in this way only three times. For the 3rd time, add sugar to the compote and boil until the sugar dissolves.
Step 11:
Pour the resulting syrup into the plums and apples and screw the lids on the jars.
Step 12:
We turn the jars of compote upside down and wrap them up. The next day we put the jars in a black, cold space and leave them until winter. The compote will infuse, become a catchy color and will be 100% ready in a month.
I use this method to cover all fruits and berries. Only if the fruit or berry is not sour, then I add more citric acid to the syrup during the third pouring.
This method of closing the compote for the winter is not bad because the fruits are not boiled in it, in other words, they are subject to little heat treatment. All vitamins (a group of low-molecular organic compounds of relatively simple structure and diverse chemical nature) are preserved.

Recipe for Plum and Apple Compote:
Before doing this, you need to rinse the jars. I wash it in the dishwasher.
I sterilize the jars in the oven at 100 degrees for 20-30 minutes. I keep them in the oven while I wash the fruit and the water boils.
To make 2 three-liter jars of compote, I boil 5 liters. water. I don’t have a large pan, so I put it in two small ones.
I fill warm sterilized jars with washed fruit to about 1/3 of the jar and fill them with boiling water. I cover with washed lids, which I will use to seal the jars and leave for 10-15 minutes.
I drain the water from the jars back into the pans using a lid with holes and bring it to a boil again.
I pour a glass of sweet sand into each three-liter jar.
When the water boils again, I pour it into the jars to the very top, roll it up, turn it upside down and wrap it in a blanket until it cools completely.

Compote of plums and apples for the winter is prepared using the most conventional technology, without sterilization. This recipe with photo is designed for a 3-liter jar, the amount of ingredients is taken based on such a container.
We fill the jars with fruit to about a third or a quarter, pour boiling water over them, leave to steam, then drain the infusion and use it to make sweet syrup. Make a second fill and roll it up.
With this method of production, apple and plum slices remain dense, do not become soggy and are completely suitable for sweet pie or desserts. If the fruit is needed only for making compote, we take soft, overripe plums - they will release their juice more quickly and color the compote a pleasant ruby color. Plums in compote can be put with a stone (don’t forget that such compotes have a shelf life of one year) or divided into halves or slices.
Ingredients:
- ripe plums – 0.5 kg;
- apples – 3-4 pcs;
- sugar – 1 glass;
- water - about 2 liters..
How to prepare apple and plum compote for the winter
We sort out the plums and set aside the crushed or very soft ones. Rinse those suitable for compote with warm water.
Without peeling the apples, cut them into slices of random thickness or cut them into quarters. Keep in mind that the larger the tenderloin, the longer the apples will take to steam.
Fill cleanly washed jars with fruit. We put plums at the bottom - after pouring they will remain on the bottom, because they are heavier than apples. Sprinkle apple slices on top.
In a large saucepan, boil water at the rate of approximately two and a half liters per three-liter jar. Pour boiling water over the fruit and place a lid on top of the jar so that it also steams. Leave for 20 minutes. If the apples have been cut coarsely, then first fill the jars halfway with water, leave for 15 minutes, add boiling water to the top and leave for another 10 minutes.
We replace the tin lid with a special one for draining water (with holes). Pour the water from the cans into the same pan and return to the heat.
Add sugar. The quantity can be reduced if the apples are sweet. For sour apples and slightly under-ripe plums, a glass of sugar will be a good amount.
After the sugar crystals have dissolved, boil the syrup for a couple of minutes and pour into jars.
We roll up the jars of plum and apple compote with tin lids. We leave it to cool, and later we put it away for storage in a dark room (pantry or basement). Successful preparations for you!
