What berries to use
Viburnum berries ripen after the first frost, which is when they need to be collected. An unripe berry is quite sour and may be slightly bitter, but after slight frosts the bitterness disappears, and the berry itself becomes sweeter.
If you are lucky enough to purchase or collect unripe viburnum, then you can put it in the freezer for 1 hour, so you can recreate the effect of the first frost
Before purchasing or collecting viburnum, it is best to taste it, so you can immediately find whether it suits you or not.
Some tips
I would like to share with you simple tips that help you prepare tasty and healthy ground viburnum.
- Viburnum should be weighed only after you have washed it, sorted it and separated it from the branches.
- When working with berries, we use non-oxidizing equipment: a mortar and container should be wood, glass, clay, or consist of other suitable materials. It is better to choose a higher container for grinding, so the juice will be less likely to scatter around the kitchen.
- The ratio of berries and sugar is 1:1, but if desired, the amount of sugar can be increased slightly.
- You can prepare seedless viburnum. To do this, you need to mash it and strain through cheesecloth. Add sugar in a ratio of 1:2 - 1 part juice and 2 parts sugar, and then follow the recipe.
- If the sugar is completely dissolved, then we get jam more similar to jelly, albeit with seeds; it’s nice to eat such a preparation just with a spoon. In order to speed up the dissolution of sugar, you can leave the ground berries at room temperature for some time, 30-60 minutes is usually enough. Or you can speed up the process and stir the mixture until the sugar is completely dissolved.
- We sterilize the containers in which the jam will be stored (jars and lids) using any method that is convenient for you: in the microwave, steamed, or oven.
Even if you are not a fan of viburnum, this preparation is worth having on the shelf in your refrigerator. Let it be a very small portion of half a liter, the production of which will take a total of 30 minutes of your time. In winter, you will certainly remember about it.
4 options for preparing viburnum with sugar for the winter
Most people dream of the imminent arrival of winter in anticipation of miracles, magic, and snowflakes. But despite all the positive aspects, this time of year is quite tricky, due to the development of epidemics. The immune system during this period is very weak and requires additional protection from natural ingredients.
Not many people understand about the necessary properties of viburnum. It will have a beneficial effect on the body in case of any disease, but in winter it is very difficult to get it. It is for this reason that we propose to figure out how to prepare viburnum with sugar for the winter.
The manufacturing process is quite easy, the main thing is to collect the viburnum in time to prepare it for the winter.
Useful characteristics and some personality
When canning ripe viburnum berries, you need to try to maintain as many of the necessary parameters as possible so that it becomes tasty. The fruits ripen in September, but few people like them because of their bitter and astringent taste. Therefore, it is recommended to postpone collection until the first frost.
Our grandmothers say that the viburnum berry can replace a huge number of types of pills. And these are not unfounded expressions, this is how it is:
- Relieves inflammatory processes in the body.
- Reduces intense heat.
- Has a calming and relaxing effect on the central nervous system. Restores sleep, prevents the development of depressive and stressful situations.
- It contains much more vitamin C (vitamins are a group of organic substances combined by chemical nature, united on the basis of their absolute necessity for a heterotrophic organism as an integral part of food) C than citrus fruits.
- Lowers high blood pressure. Therefore, people with low levels are strictly prohibited from using this ingredient.
During the development of epidemics of colds, tea with viburnum is considered the most reliable remedy. So, let’s look at step-by-step recipes on how to actually prepare viburnum for the winter with sugar.
Option #1
To preserve the greatest amount of vitamins and parts, the berries need to be cooked without heat treatment.
- fresh berries - 500 g;
- sweet sand - 500 g.
- The main component is to sort out: remove twigs, debris and rotten fruits. Place in a saucepan, fill with water and mix gently with your hands. Drain and repeat the function until the liquid becomes clear.
- Place the main ingredient in a blender bowl and grind together with the skin and seeds.
- Pour the pureed substance into a small saucepan and add the sweet sand. Mix thoroughly. Cover and leave on the kitchen table for half an hour so that the sugar grains dissolve.
- Pack into clean jars and close with nylon lids. Place in a cool place. Viburnum with sugar is ready for the winter without cooking.
This manufacturing method has several positive aspects:
- there is much more raw jam;
- Most of the necessary vitamins, micro and macroelements are contained in the skin and seeds. This means that jam contains much more nutrition than when boiled;
- It is impossible to consume the finished dish right away, because it has little bitterness.
Option No. 2
A step-by-step recipe for making viburnum with sweet sand is intended for the laziest.

- With such filling, you may not calculate your strength as you should; there may not be enough sweet sand. No need to worry, just add the required amount.
- Place the container with its contents in a cool space, covering it with a plastic reusable lid.
On a winter evening, jam is perfect as a treat for tea. If granulated sugar crystallizes over time, there is no need to worry; this will not affect the taste and properties of the product.

Viburnum with sugar
This is not even a recipe, but a quicker method to preserve the vitamin berry for future use. Recently, I have developed the habit of using Povarenok as a kind of culinary roulette, I open it and look for inspiration. The other day they handed me a small basin of viburnum, but they didn’t really say what to do with it so that it wouldn’t disappear) I went to the website and there was no usual advice. Due to laziness, I did not want to grind it through a sieve, much less cook it. I had to call my mom. I won’t write anything new or complicated, but maybe someone, like me now, will benefit from tips on processing such a healthy and tasty berry

How to properly grind viburnum with sugar
How to prepare pureed viburnum with sugar for the winter without cooking
I would like to present to you not 1, but 3 options on how to prepare mashed viburnum with sugar. The composition of the ingredients remains the same, the only difference is the preparation method.
For all recipes the proportion is the same:
- Viburnum berries – 1 kg;
- Sweet sand – 1 kg.
First of all, the collected branches of mature viburnum must be brought home.
Place in a saucepan and rinse thoroughly under running water.
Carefully, so as not to stain the area around the wall, we separate the viburnum berries from the branches with our hands. When picked, the berry is very sprinkled.
Using a sieve, rub the viburnum using a mortar or a large spoon. The seeds and skins should remain in the sieve. Don’t rush to throw away the pulp; you can infuse it with alcohol, cognac or vodka, and later take it as a tincture, adding or without sugar to taste beforehand.
From a 3.5 liter basin of viburnum on branches comes out about 1 liter of pureed thick juice. It in itself is healing and very tasty, a useful remedy for healing or for use in cooking.
Add sugar to the pureed viburnum to taste.
Mix thoroughly until the sugar dissolves.
Then we put it in prepared sterile jars of a suitable size.
Close with lids and store in a cold space. It is convenient to store viburnum with sugar in the refrigerator, as needed, simply removing the jar of sweetness, adding it to tea or making tasty fruit drinks.
Manufacturing option No. 2:
Pour boiling water over the washed and sorted berries and leave for 2-3 minutes. Then you need to drain the water and rub the berries themselves through a sieve.
Combine the ground mass with sweet sand, mix thoroughly, package in dry, sterile jars and leave for a couple of days at room temperature (this is necessary so that the sugar dissolves properly). Then move the seams into the refrigerator door. Take out and use as needed.
Production option No. 3:
Sprinkle the dried berries with sugar and then grind with a blender.
Place into small sterile jars, then cover the top of the necks with a small piece of cellophane and cover with nylon lids.
Cough recipes from viburnum bark
One of the obvious signs of a cold (disruption of normal functioning, performance) is a cough. With general physical ailment, it indicates the presence of infection (The term means various types of interaction of foreign microorganisms with the human body) in the upper respiratory tract - in the nose and throat.
In order not to wait for the condition to worsen and not to stimulate the development of diseases such as pneumonia, bronchitis, ARVI, tonsillitis, etc., you need to begin immediate treatment. Most doctors recommend fighting colds using traditional methods. And first on the list of tips for healing coughs with berries is viburnum.
Viburnum is one of the most necessary plants, possessing healing qualities of a wide range of actions. Healing coughs with viburnum promotes quick healing and strengthens the immune system. At the same time, no matter what part of the bush has a beneficial effect on the body: from roots to foliage and berries. Viburnum contains vitamins (a group of low molecular weight organic compounds of relatively simple structure and varied chemical nature) C, E and P, carotene, pectin, magnesium, iron, iodine, organic acids, calcium. The plant is a delightful expectorant.
The methods for making viburnum are very diverse. After all, whether it’s bark, berries, flowers or leaves of a plant, the main thing is to know several recipes and be able to use them just right. Viburnum is used for coughs in the form of infusions, fruit drinks, decoctions, jelly, jam, and brewed in tea.
To use viburnum bark for healing purposes, it is collected in early May. During this period, beneficial substances predominate in its composition. A decoction of viburnum bark is recommended for severe colds and a hoarse voice, because has expectorant and restorative properties.
- The easiest method for making a healing drink is to grind the bark and cook over medium heat for 10 minutes. Leave for 2-3 hours and drink 3 times a day before meals.
- 2 tbsp. Pour a tablespoon of bark into a glass of water and cook for 10 minutes. Then add 10 drops of sea buckthorn oil and a tablespoon (not a slide) of honey. Stir and drink 100 g before meals 3 times a day.
A decoction of viburnum flowers is a good expectorant and diaphoretic drink. When you have a sore throat, it is great for rinsing the larynx.
- 1 tbsp. Pour a glass of boiling water over a spoonful of plants, leave in a warm place for about an hour and pass through a sieve. Drink 2-3 sips 30 minutes before meals 3 times a day.
- An infusion of dried leaves and plants has a beneficial effect at the first sign of cough. Boil a glass of the consistency for several minutes in 2 liters of drinking water. Let it brew. Drink tea instead of tea in the morning and evening.
1. Crush a handful of berries in a bowl and add hot water. Heat in a water bath for about 20 minutes. Add a glass of boiling water to the purchased broth. Take half a glass orally 3 times a day.
2. Cope with a powerful and frequent cough and alleviate the symptoms (Symptom from Greek - case, coincidence, sign - one separate sign, frequent manifestation of any disease, pathological condition or disruption of any vital process) of sore throat, bronchitis and other diseases A decoction of viburnum berries with honey will help the upper respiratory tract.
- Pour the grated fruits with hot honey in a ratio of 1:2, leave for at least 20 minutes. Drink a couple of times a day. In this recipe, viburnum with honey is effective for coughs and for the prevention of flu and sore throat.
- Pour a glass of berries into a liter of water and boil for about 15 minutes. Add 3 tbsp. spoons of honey and drink the prepared decoction. If you have a sore throat, you can rinse your larynx with the purchased product for any 2 hours.
- Scald the berries with boiling water and rub through a sieve. Mix with honey in a 1:1 ratio, cover and let sit in the refrigerator for a week.
3. For people who are allergic to honey, there is an alternative - sugar.
• If you crush the berries, pour hot boiled water over them, add sugar, infuse and consume once a day, you will get a good remedy for treating sore throat and bronchitis.
• Viburnum jam is suitable for healing and preventing cough. The recipe is simple: sprinkle washed berries with sugar and wait for the juice to appear. Afterwards, bring the pan with the resulting consistency to a boil. Pour the jam into the jars and tighten.
Viburnum infused with Cahors helps against coughs, the recipe for which is very simple.
Mix 100 g of the following products: viburnum juice, honey and Cahors. Grind and add 50 g of reddish pepper. Place the resulting mixture in a closed clay container in the oven at 180 degrees for 3 hours. Use the tincture 4 times a day, 50 g before meals. Store in a cool place in a closed container.
Viburnum is no less useful for children than for adults. Healing coughs and viral diseases, strengthening the immune system - all this can be provided by viburnum if you give your child 3 tablespoons of sweet jam or berry syrup 2 times a day. The recipe is simple: mix the collected berries with sugar in a 1:1 ratio. When used, it can be diluted in warm drinking water.
You can prepare viburnum according to another recipe, which is good in its beneficial properties. Mix half a glass of berries with a glass of honey and cook for 3 minutes over medium heat. Give 4 times a day a tablespoon to children over 7 years old and a dessert spoon to children, washed down with water. If the child is allergic, you need to slightly change the proportions - add a little less than half a glass of honey to half a glass of berries and a little more than half a glass of sugar (40:60).
There is one BUT. It is better to give children prepared cough remedies from viburnum after 2 years of age. The berries of the plant have a nasty bitter taste, which can discourage the baby from continuing the healing. Although it’s unlikely that anyone will be able to give up jam with viburnum.
In any case, before using traditional recipes, consult your pediatrician.
