We will prepare the filling for the pies from raw meat. It needs to be fried and stewed. This will make the inside juicier.

It will be great if you cook the rice ahead of time. I have just this option: it was left over from making the previous dish. It is yellowish in color. This is justified by the fact that I added turmeric: it gave this “color” to the rice.

The amount of rice in the ingredients is indicated in a ready-made, cooked form.

First prepare the yeast dough. While it is rising, you can prepare the filling.

To make pies with meat and rice in the oven, we will prepare the products according to the list.

Finely chop the onion and fry in sunflower oil until soft.

Let's add minced meat. Fry until cooked, stirring and breaking up lumps of minced meat.

To make sure, at the end of frying, I add a little water and simmer the meat for about 7 minutes.

When the minced meat becomes soft, turn off the gas. Add rice. Salt and pepper to taste.

Add vegetable or melted butter, flour, a pinch of salt to the mixture and knead into an elastic and thick dough. Leave it to proof for a couple of hours so that it increases in volume a couple of times after kneading.

Boil the Krasnodar rice until almost completely cooked in a large amount of strongly salted water, and then wash the rice in a sieve so that it finishes cooking and does not stick together.

Prepare minced meat from the beef pulp; for juiciness and softness, you need to grind it in a meat grinder several times. It’s great to salt it, season it with spices and spices to taste, add fresh chopped herbs.

Chop the sweet onions very finely, mix them with the minced meat and add almost ready-made boiled rice. Knead the purchased minced meat well so that all the ingredients are mixed and cool slightly.

  • Ready homemade minced meat – 350 gr.;
  • A quarter cup of round rice;
  • 2 onions;

First you need to slightly warm up the cow's milk, you can do this in the microwave, or take a little less of it and dilute it with bubbling water from the kettle. Add sweet sand and yeast to the milk, stir and set aside until a strong and stable foam appears on the surface.

Add flour to the milk with yeast, add a chicken egg, a pinch of salt and knead into an elastic dough. During the kneading process, it should not stick to your hands; it will need about an hour to proof.

Grind the beef or lamb pulp in a meat grinder, and in order for the minced meat to come out juicy and soft, add peeled onions to it, and pass the minced meat at least 2 times through a small mesh.
