Often such a spicy dish is prepared with the addition of horseradish, which gives the delicacy an unusual bitterness. In addition, this salad helps to cope with vitamin deficiencies and infections, and helps maintain a normal immune system. But if spicy dishes are contraindicated, you can do without horseradish.
Description of the dish
Almost everyone prepares Ogonyok salad for the winter. It contains not only horseradish, but also garlic, hot pepper, sugar and salt, as well as eggplant or tomatoes. The dish comes out quite spicy. Apples, onions and carrots, bell peppers and other vegetables are added to it from time to time. There are a huge number of recipes for making this salad. – 5 kg of tomatoes;

– 200 grams of garlic;

Winter tomato salad “Ogonyok” is very easy to prepare. First, all the ingredients are prepared: washed, peeled and ground through a meat grinder. – 1 kilogram of tomatoes;

This Georgian-style eggplant salad is perfect as an addition to main courses. They also prepare it for the winter. First, all vegetables are peeled and washed. The jars are sterilized in advance, along with the lids. Eggplants are cut into thin slices. They are placed in a bowl, sprinkled with salt and set aside for two hours in order to get rid of the bitterness. The resulting liquid is combined over time, and the vegetables are squeezed out. They are fried in vegetable oil for a couple of minutes on each side. Next the sauce is prepared.
Making the sauce
Ripe tomatoes and peppers are ground in a meat grinder, crushed garlic is added and simmered over low heat. After the sauce boils, salt it and add vinegar. The mass is left to cook for 5 minutes. Eggplants along with the sauce are placed in layers in jars, covered with lids and placed in a pan for sterilization for 40 minutes. Then, like all spicy salads for the winter, they are rolled up and set aside to cool. Later the jars are transferred to a cool space.
“Spark” of eggplant and tomatoes
– 3 kilograms of young eggplants;
– 3 kilograms of ripe tomatoes;
– 1 kilogram of sweet pepper;
– 2 huge heads of garlic;
– 100 grams of vinegar;

– 1 glass of vegetable oil;
– 2 cups of sweet sand;

This mixture is placed in a large bowl, grated apple, sugar and salt, and butter are added. Heat the sauce to a boil and pour vinegar into it, stir and put it on the stove again to boil. To ensure that the appetizer is not too spicy, reduce the amount of garlic and pepper; this will make the dish more soft and tender. Eggplants themselves have a certain bitterness, which gives the entire preparation a specific flavor color.
Appetizer of tomatoes, peppers and carrots
– 3.5 kilograms of tomatoes;
– 1 kilogram of carrots;
– 4 bell peppers;
– 3 pods of chili pepper;
– 2 huge heads of garlic;
- parsley and dill;
– 1 glass of sweet sand;
– 1 glass of sunflower oil;
Spicy winter salads like this one can be prepared without eggplants; its taste and spiciness will not change. Fleshy tomatoes are washed and cut into halves. Carrots are grated or ground using a meat grinder. All peppers are also passed through a meat grinder or very finely chopped. The garlic is pressed using a press, and the greens are finely chopped. All ingredients are combined and cooked for about fifty minutes over low heat, adding salt first. Some time before the end of cooking, you can add aromatic pepper or bay leaf. The finished salad is placed in jars and rolled up.
Spicy salad “Ogonyok”
Horseradish and garlic are added to this dish, it comes out quite spicy and hot.
– 1.2 kilograms of tomatoes;
– 100 grams of garlic;
– 250 grams of horseradish root;
– 3 tablespoons tea sugar;
– 1 tablespoon lemon juice.
The tomatoes are prepared and rubbed through a sieve, having previously been blanched and the skin removed. The garlic is finely chopped, the peeled horseradish root is sprinkled with lemon juice and processed using a meat grinder. Add salt and sugar to the tomato puree and heat for about 5 minutes over low heat. Next add vinegar, horseradish and garlic. The salad is placed in sterile jars and left to sterilize for 10 minutes, then rolled up. The preparations are cooled and stored in a cold space until consumed. Thanks to the presence of horseradish in the salad, the salad acquires a rich aroma. You can add any greens if you wish; they will improve the taste of the dish.

- Take coarsely ground dark pepper; it is better if you crush the peas yourself.
Traditional Ogonyok with tomatoes and horseradish
The usual recipe for making a raw light with universally selected proportions of components.
Useful:
- Tomatoes – 1 kg.
- Horseradish root – 100 gr.
- Garlic cloves - a couple.
- Salt and sugar to taste.
Manufacturing:
- Clean and prepare food for chopping. Cut the root into pieces. Remove the skin from the tomatoes, scalding them to make the procedure easier.
- Turn into a paste and place in a common container. Salt and sweeten. Transfer to sterile containers and refrigerate. Jars and lids must be sterilized - this is a condition for long-term, fermentation-free storage.

The recipe contains everything that, in principle, can be added to horseradish, right down to the nuts. It turns out to be a real adjika salad.
We take:
- Tomatoes - kilogram.
- Walnuts – 20 pcs. without shell.
- Reddish hot chili – 2 pods.
- Sweet pepper – 5 pcs.
- Horseradish – 250 gr.
- Garlic – 250 gr.
- Dill, parsley – total weight 100 g.
- Table vinegar – 1.5-2 huge spoons.
- Salt - a small spoon.
- Sugar – 2 tablespoons.
Manufacturing method:
- Pass the ingredients through a meat grinder. Pour spices into the mixture and add vinegar.
- Attention! What to create if the light turned out to be very sharp? In the old days, it was customary to dilute the seasoning with sour cream before serving. Take into account the experience of the fathers, if horseradish is too much for you, add sour cream.
Fire of tomatoes for the winter - recipe with bitter pepper without horseradish

Take:
- Tomatoes – 5 kg.
- Capsicum hot pepper – 50-100 gr. (depending on the desired spiciness).

A regular recipe for a savory snack without sterilization. The taste is quite gentle, so the preparation can be given to children. It is difficult to preserve the flame; it can only be guaranteed in the refrigerator.
Necessary:
- Sweet pepper - kilogram.
- Tomatoes - the same amount.
- Garlic cloves – 100 gr.
- Salt – 2-3 teaspoons.
How to create:
- Puree the peeled vegetables with a blender.
- Add salt and pack into jars.
Eggplant Ogonyok - a recipe for the winter with tomatoes
Cool boiled eggplant fire. If you wish, then according to this recipe you can prepare adjika without tomatoes.
Take:
- Tomatoes – 1.5 kg.
- Eggplants - kilogram.
- Bell pepper - kilogram.
- Garlic – 300 gr.
- Hot chili – 3 pods.
- Table vinegar – 100 ml.
- Sunflower oil - a glass.
- Salt.
Step-by-step production:
- Rinse and peel the vegetables, use a blender or meat grinder.
- Place on the stove. After boiling, add salt and add oil. Cook for about an hour.

- Salt - ¼ cup.
- Ground pepper - a tablespoon.
- Sweet sand - glass.
How to cook:
- Scald the tomatoes and remove the skin. Grate the carrots on a small grater. Also finely chop bell peppers, apples, and tomatoes.
- Place everything in the pan and start cooking.
- When the mixture boils, add salt, dark pepper, sugar, and butter.
- Cook the mixture for approximately 1 hour 40 minutes. Then add chopped garlic and hot pepper. Stir, pour vinegar. Continue to simmer the mixture over low heat for another 2 and a half hours.
- Place the seasoning in sterilized jars.
