To prepare cheese flatbreads with filling we will take:
- Cheese - 200 g (you can use any kind: “Russian”, “Kostromskoy”, “Suluguni”)
- Drink - 200 ml (1 glass, fat content 2.5%)
- Sugar - 1 teaspoon
- Salt - 0.5 teaspoon
- Baking powder - 0.5 teaspoon (can be replaced with soda, no need to extinguish, the amount is the same)
- Flour - 2 cups
- Ham or boiled sausage - 300 g (for the inside)
- Vegetable oil - for frying
The given amount of ingredients yields 15-17 cakes.
How to make stuffed cheese flatbreads
- First, let's prepare the dough. To do this, in a deep cup, whisk the drink with sugar, salt and baking powder. When the sugar and salt dissolve, add the cheese, grated on a fine grater and mix until smooth, so that the cheese is well dispersed in the total mass. And at the end of the process, add flour in parts and mix thoroughly. After adding flour, knead the dough with your hands. It must be soft and elastic. After this, we leave it to lie for 5-7 minutes under cling film or a towel so that it does not dry out, and at this time we will prepare the filling of our future flatbreads.
- I used boiled “Milk” sausage for the inside. Ham, grated cheese and herbs are also excellent. Can be combined. For example, cheese with fresh herbs or sausage with cheese. Try it and you will understand what you like best. Grate the sausage on a large grater. You can also use slices of sausage or cheese if you do not plan to roll out the flatbread in the future, but simply put the filling inside the flatbread, pinch the edges and fry.
- Now roll out the dough into a sausage shape 3-4 cm in diameter, divide it into small equal parts and roll each part into balls. Using a rolling pin, turn any bun into a round cake, in the center of which we place approximately 1 tbsp. spoon of entrails. We pinch the edges of the flatbread, roll it into a bun again and roll out the flatbread with the filling again with a rolling pin. Let's do this with all the koloboks. If you do not plan to make flatbreads with filling, then you can fry the flatbreads immediately after rolling them out. The heat should be medium so that the cakes brown and not burn.
- Heat a little vegetable oil in a frying pan (so that it covers the entire bottom of the frying pan) and fry our cheese cakes with (or without) filling for 2-3 minutes on each side until browned. Place the finished cakes on paper towels to absorb excess oil.
