No-bake cake Domik (made from cookies and cottage cheese)

Another step-by-step recipe for a homemade cake without baking. Now I propose to prepare a fascinating and very tasty Domik cake. Shortbread cookies, a warm and smooth curd interior and lots and lots of chocolate icing. A real paradise for those with a sweet tooth and no baking required!
Cookies for such a cake can be taken not only square in shape, but also rectangular (then select the quantity without the help of others). I use cottage cheese with 5% fat content (it’s important that it be a bit dry), sour cream – 20%, butter – 72.5%. The fat content of milk does not matter. The amount of sugar depends only on your taste, and you can use one type of chocolate for the glaze or create a mix, as in my case.
Naturally, if you wish, you can always come up with a new version of a sweet dessert, having a basic recipe at hand. You can simply add crunchy nuts, chopped chocolate, dried fruits, or even the freshest berries or fruit slices to the filling for the Domik cake.

Chocolate glaze:
Making a dish step by step:
To make a homemade House cake without baking, we will need the following ingredients: square shortbread cookies, cottage cheese, sour cream, butter, sweet sand and vanilla sugar, milk, and chocolate.
First, let's create the curd filling for the upcoming cake. In a deep bowl put 600 grams of cottage cheese, 100 grams of sour cream and soft butter, 50 grams of sweet sand and 1 tablespoon of vanilla sugar.
We beat all the ingredients using an immersion blender so that the mass becomes one hundred percent homogeneous and smooth without lumps. Naturally, you can mix everything with a spoon or a mixer, but in this case it is important to rub the cottage cheese through a sieve in advance. Moreover, with this method, the curd inside will still not be as tender as in the first option.
Now let's prepare the cookies. Pour 50 ml of cool milk into a bowl and quickly dip one cookie into it. We don’t bathe for a long time, because the cookies will get soggy in a moment, and later turn into porridge.
We cover the table with food foil and place softened cookies on it. According to this recipe, I need 24 square cookies (total weight 240 grams), which I arrange in the same way as in the photo (4 pieces in height and 6 pieces in length).
Apply the curd filling onto the cookies in an even layer. It doesn’t have to be watery: you see in the photo the curd mass holds its shape unsurpassed.
All that remains is to form the future sweet house. I don't make a spicy roof: I end up with two layers of cookies, which sit on top and are separated by a small amount of curd inside.
Wrap the dough in foil and put it in the refrigerator for 1 hour or in the freezer for 30 minutes. In the cold, the butter in the curd inside will harden and the dessert will be perfectly cut into portions.
When the dough is actually ready to serve, prepare the chocolate glaze. To do this, break 120 grams of chocolate into a bowl (I took half dark and milk), add 30 grams of butter. These two ingredients must be heated well, but not brought to a boil. The most convenient way to do this is in a microwave oven on the Warm up mode, checking the contents of the dishes for any 7-10 seconds. When the chocolate pieces come into contact with hot oil, they instantly melt. But remember that the temperature is quite high, so it is necessary to stir constantly so that the chocolate does not curl.
In almost a minute you will get a one hundred percent homogeneous, smooth and shiny chocolate glaze. The thickness of the glaze can be simply adjusted by adding additional hot milk or cream - just keep it on hand.
Unwrap the cooled cake and apply chocolate icing on it, distributing it sparingly with a spoon or spatula. Due to the cold, the glaze will almost harden before your eyes.
We transfer our sweet treat to a beautiful dish or tray and you can serve. When finished, the no-bake cake House made from cookies and cottage cheese weighs about 1.3 kg.
If you wish, you can decorate the top of the House cake, as your imagination dictates. I served with cranberries and rosemary sprigs.
If you wish, sprinkle the cake with sweet powder. Elenochka, thank you very much for this ordinary and very tasty order. Cook for your health, friends, and bon appetit!

Step-by-step production
Step 1:
How to create a cake house? Mash the softened butter with a fork together with the cottage cheese. Then add sugar, or preferably sweet powder, so that it dissolves faster. Add vanilla sugar. Cut candied fruits from a wide variety of fruits into small pieces: pineapples, mangoes, bananas, papaya and so on. And add pieces of candied fruits to the curd mass. Stir.
Step 2:
Take the cookies (it is better that they are crumbly and tender) and place them on cling film spread on the table. Lay out 5 pieces in three rows. Place half of the curd mixture mixed with candied fruits on top of the cookies.
Step 3:
Smooth the surface of the curd inside. Place 15 more cookies on top.
Step 4:
You can put any filling in the central row of cookies, for example, chocolate cream, boiled condensed milk, banana pieces. Place the rows of cookies in a triangle shape to form a house.
Step 5:
In this way. The result will be something similar to an oblong house.
Step 6:
Carefully wrap the resulting “sausage” in cling film on which it lies and put it in the refrigerator to harden. Prepare chocolate fudge or frosting. Mix sugar with cocoa. Pour milk into the resulting dry mixture and stir. Place the mixture on the fire and, stirring constantly, bring to a boil. Add butter and stir.
Step 7:
Remove the frozen cake from the refrigerator and pour chocolate fudge on top, spreading it moderately over the surface. Place the cake in the refrigerator again for two to three hours. When the House has hardened, it can be cut into pieces and served like an ordinary cake.
Step 8:
I was preparing for his wife on February 23, so I made this inscription. But this is absolutely a New Year's delicacy.
The taste of this cake can be easily changed by simply changing the type of cookie. Also, instead of candied fruits, you can put any other dried fruits, fresh fruits and berries, chocolate chips, coconut flakes, and so on into the curd filling. The cake can be topped with sweet fondant. And instead of cottage cheese for cream, use, for example, cream cheese like mascarpone, whipped cream, sour cream with sugar.
Instead of sugar, you can use a sweetener.

Video recipe: Cake “Curd House” made from cookies and cottage cheese
Step-by-step recipe with photos and videos
The “Curd House” cake made from cookies and cottage cheese is a simple and very tasty dessert that even a novice cook can make. Despite the fact that its composition is quite simple, the dessert comes out juicy and tastes very tender. The combination of creamy curd mass and juicy milk-soaked cookies, already appetizing {in itself}, reveals a new side when you add the usual ingredients with a drop of chocolate, vanilla and sweet banana. Try it!
Prepare the ingredients according to the list.
Combine cottage cheese, melted butter and sugar. Add vanilla or other favorite spices.
Add 1-2 tbsp. sour cream and beat the ingredients for 4-5 minutes until a homogeneous paste-like mass is obtained.
Line a flexible mat or kitchen towel with cling film. Dip the cookies into warm milk on both sides and place them in a row on cling film.
To form a dessert in the shape of a “house,” you should have three rows of cookies horizontally and 3-4 rows of cookies vertically.
Divide the prepared curd mass into two parts. Spread half of the curd mixture onto the cookies and spread evenly.
Add cocoa powder or 50-60 grams of melted chocolate to the second half of the curd mass. Stir everything thoroughly.
The curd mass prepared with the addition of chocolate will be the densest and will harden more strongly than the mass with the addition of cocoa. Therefore, when using chocolate, it is worth swapping the layers of the curd inside. First lay out the chocolate layer, and then the most flexible vanilla layer.
Place a layer of chocolate curd mixture over the cookies and spread evenly.
If desired, add a banana, previously peeled and cut into 2 parts (horizontally). When laying out the banana, focus on the placement of the central row of cookies.
Lift and connect the edges of the mat or kitchen towel - the cookies will fold, and you will get a “house” of cookies with curd inside.
At this step, the dessert is quite flexible and, as necessary, you can adjust its shape by lightly pressing the cookies together.
Wrap the dessert in cling film and place it in the refrigerator to cool. I leave the dessert overnight (that is, in the dark) so that it can brew, but in order for the dessert to harden and confidently retain its shape, several hours are enough.
When the dessert has hardened, decorate it with melted chocolate or chocolate glaze and place it in the refrigerator for another 10-15 minutes so that the glaze/chocolate hardens.
Sprinkle the finished dessert with coconut flakes if desired and serve.
The “Curd House” cake made from cookies and cottage cheese is ready! Bon appetit!
