  3. Cover the bowl with a light kitchen towel and place it in a warm area. The yeast dough should rise for approximately 3-4 hours. After the designated time, place it on a surface sprinkled with flour and knead well with your hands.
  4. Roll it into an oval and cover with a towel for 15 minutes. Meanwhile, place the oil in a small bowl and place it in a water bath. Carefully mash it with a fork, heating for about 1 minute, you should get a mixture of thick sour cream.
  5. Remove the oil from the bath and leave to cool. Roll out the risen dough into a layer, the thickness of which is 1.5-2 cm. Grease about 2/3 of the surface of the layer with half the butter and sprinkle this part sparingly with 30 grams of sugar. Cover the middle with half of the greased part of the dough (1/3 of the entire layer). And cover it with the ungreased edge of the dough (also 1/3 of the layer).
  6. Lightly roll over the folded dough with a floured rolling pin and crimp the edges. Place the yeast dough in the refrigerator for half an hour, covering it with cling film beforehand.
  7. After half an hour, take out the dough and roll it out onto a floured surface. Grease the layer again two-thirds with oil, sprinkle with the remaining sugar and roll up the same way as the first time. And again send the folded layer to the refrigerator for the same time.
  8. Remove the yeast puff pastry from the refrigerator and roll it out onto a floured surface (up to 1 cm thick). Cut it into equal squares approximately 5 cm wide. Connect the two opposite ends of each square and pinch them with your fingers.
  9. Connect two more ends above the first and mold them together (pressing the puff pastry on top is very prohibited). Cover a baking sheet with parchment paper and place the dough for the yeast puffs on it. Cover with a light towel and leave for an hour and a half in a warm place.
  10. 15 minutes before the end of the indicated time, prepare the sweet topping for the buns. To do this, combine all the ingredients needed for this in a bowl and grind thoroughly. Preheat the oven to 200C.
  11. In a small container, beat the egg with a fork and brush the surface of the puff pastry with it. Decorate them with sweet sprinkles on top and place the baking sheet in a preheated oven. In 20 minutes the yeast puffs will be ready. Take out the baking sheet and leave it for a few minutes.

Continuing the theme of homemade dough, I offer you, my dear housewives, a recipe for making puff pastry. I’ll say right away that compared to homemade puff pastry without yeast, which I prepared earlier, this option is somewhat more complicated and requires some skill. It's fair!

When making yeast puff pastry according to a traditional recipe (there is also a lighter version, but not about that at the moment), it is important to follow not only the technology, but also the precise measures of the ingredients used. And the basis for such a test is yeast dough - sponged or unpaired.

What to make from yeast puff pastry? There are a lot of tasty things: of course, croissants adored by almost everyone (with or without inside), delicious puff pastries with condensed milk, chocolate, apples, cottage cheese, custard. It is difficult to list all the products made from puff yeast dough that can be prepared using it: various pies with fish, onions, offal, rolls with cheese, chicken, mushrooms, meat baked in dough. But in any case, no matter what kind of pastry made from puff pastry, it always comes out airy, soft on the inside and crispy on top.

However, in order for the result to please you, you must not forget that when working with homemade puff pastry (both yeast-free and yeast-based) dough, it is important to observe certain conditions. Namely, you should have enough free time so as not to rush anywhere. Well, what a wish!

Here are some tips for making homemade puff pastry:

• A good temperature of the room, goods and utensils for making yeast puff pastry is considered to be about 15-17°C. In this case, the butter retains the necessary plasticity and does not need to be further cooled, but at the same time, between rolling out, the dough must rest for some time, so that the layers do not break during the next rolling. But this method is not suitable for ordinary cooks in everyday conditions.

• However, at home (where the highest temperature is in the kitchen), between rolling out the dough is placed in the cold (in the refrigerator) for approximately 1 hour. The fact is that at the highest temperatures, butter becomes the most spreadable mixture and begins to be absorbed into the dough instead of layering it. At the same time, at low temperatures, butter loses its plasticity and begins to crumble, resulting in ruptures in the layers of dough.

• Baking from puff pastry is prepared at a temperature that does not have to be below 210-220°C (pros recommend baking croissants from puff pastry at 240 degrees). If this condition is violated, oil leaks out of flour products and, as a result, they turn out to be thin-layered, flat and dry.

From the indicated quantity of goods I got exactly 1130 grams of wonderful homemade puff pastry. From it I prepared 18 tender croissants (quite large) with Patissiere custard.
