Hello to all fans of simple and savory baked goods! On the big stage we have a drink again - this miracle ingredient, with the help of which muffins and cookies come out one-two-three. And the current highlight of the program will be kefir muffins.

Muffins, if suddenly everyone is not already in the know, are sweet pastries a la cupcake, which are often made with the insides of fruits, nuts, chocolate and absolutely anything that your imagination is capable of. Their main feature is their size; a muffin is usually no larger than an adult palm. But you will agree that size somehow magically affects the taste, and these mini-cupcakes not only look very appetizing, but also taste different from their harsh, huge brothers. So for lovers of muffins in all their forms, having muffin tins in the kitchen cabinet is a real must have.

Some people make do with ordinary paper molds, while others use iron or Teflon. And some are a die-hard fan of baking in silicone molds.

But, regardless of the material, if you are the happy owner of muffin tins, I am simply sure that you will head to the kitchen as soon as you read the recipe. After all, it is extremely ordinary; we don’t even need a mixer.

Basic recipe for kefir muffins:

List of goods:

  • butter - 125 gr.
  • medium-sized eggs - 3 pcs.
  • sweet sand - 150 gr.
  • drink – 250 ml
  • flour - 250 gr.
  • baking powder - 2 tsp.
  • salt - a pinch
  • sweet powder - for sprinkling

Don't forget: all the ingredients for the muffins are always brought to room temperature!

We will prepare it like this:

  1. First preheat the oven to 180º. If your molds are not made of silicone, then they must be greased with oil or lined with cardboard capsules.
  2. Melt the butter over low heat and leave to cool.
  3. In a deep bowl, whisk together the eggs and sugar. Add previously melted and now cooled butter to them and mix lightly again.
  4. Now the next step is a drink - the temperature of which must be brought to room temperature in advance - add it and mix again with a whisk.
  5. Sift flour, baking powder and salt into a separate container and mix all the dry ingredients together.
  6. Evenly, in several batches, introduce the dry mixture into the watery mixture, each time carefully mixing with a whisk or just a spoon. As a result, we get a fairly watery mass, close in mixture to sour cream.
  7. Pour the dough into silicone molds (or those that are currently on hand) and put them in an oven already preheated to 180 degrees for 30-35 minutes.
  8. When baked, “correct” muffins rise above the pan like a cap and burst appetizingly on top.
  9. All you have to do is cool the finished cupcakes, remove them from the molds and add the final touch, sprinkling them with sweet powder.

Voila! Creating them seems to be even faster than learning a recipe.

But we won’t stop there, and right now we’ll come up with something more exciting for you.

How to improve a basic muffin recipe?

And here, as you certainly thought, we will talk about cupcakes with entrails. We will look at the elegant chocolate ones, banana ones so beloved by children, and also with apples and currants.

Chocolate muffins

Here you can go in 2 ways:

  1. Firstly, you can simply add chocolate drops to the dough made according to the basic recipe described a little higher, and the finished muffins will be transformed right away.
  2. The second option is to use cocoa in the dough, then the muffins themselves will become a noble chocolate color, and the smell emanating from the oven will haunt you for all the minutes allotted for baking. To do this, in the basic recipe, instead of 50 grams of flour, add 50 grams of cocoa (you can take more of it, if desired). And don’t forget to sift it to avoid nasty lumps in the finished baked goods.

Muffins with apples or currants

For lovers of sourness in baking, there is also freedom in baking - for example, for muffin dough according to the basic recipe, dried cranberries or cherries are excellent. I suggest that you pay attention to the following options.

  1. Firstly, a win-win combination of apples and cinnamon. Everything here is down to elementary simple. We cut sour apples (or any apples that you like with the insides or just have on hand) into small cubes, add cinnamon to them, mix and add to the dough made according to the basic recipe at the very end. 1 apple will be completely enough.
  2. The second option for the inside of cupcakes, which will give them a cool smell, taste and color, is dark currant. Take whatever you have, fresh or frozen. Let's add a few currants to the finished dough and get a new, ordinary, but very special dessert.

Banana muffins

And these muffins are real satisfaction for kids, and no less satisfaction for mothers, because you can eat already overripe and completely ugly black bananas. Pay attention, we won’t need the drink here anymore.

List of goods:

  • bananas - 3 pcs. (this is about 400 gr.)
  • butter - 100 gr.
  • sweet sand – 150 gr.
  • eggs - 2 pcs.
  • flour - 250 gr.
  • baking powder - 2 tsp.

Manufacturing:

  1. Preheat the oven to 180º and line the muffin tin with cardboard capsules.
  2. Mash the bananas with a fork into “porridge”.
  3. Beat the butter softened to room temperature with sugar until fluffy, and later add banana puree and mix well. It is more convenient to use a mixer for this recipe.
  4. Add eggs one at a time into the mixture, beating until smooth.
  5. Now add the sifted flour along with baking powder and mix lightly with a spatula. When the dry ingredients have combined with the “wet” ones, pour the dough into the molds.
  6. Bake banana muffins in a preheated oven for 15-20 minutes. Keep a close eye on their readiness so as not to dry out the cupcakes.

These muffins will have a slightly wet crumb, which is typical for banana breads. And the smell will call all the banana fans in your family, young and old, to the kitchen. By the way, chocolate drops fit perfectly into this recipe.

Please note that muffins with entrails usually rise a little less in the oven than those baked without additional ingredients.

Previously, my husband wondered why I was buying a drink at the store that would expire tomorrow. Now I’m used to it, and don’t even ask if I’m ready for any of my tests in the kitchen. If I'm planning to bake something tasty, an old drink from the store shelf will certainly end up in my cart!

Baking is not as tender as kefir, neither with butter nor with milk.

Basic recipe:

All ingredients must be at room temperature.

  • Butter - 120 g
  • Testicles of group C 0 (large) - 2 pcs.
  • Sweet sand – 150 g
  • Drink – 250 ml.
  • Flour - 250 g
  • Baking powder - 2 tsp.
  • Salt - on the tip of a knife

How to make muffins with kefir:

The first thing you need to do is preheat the oven to 180 C. Let it heat for 15 minutes or more, so that by the time the cakes appear in it, it is thoroughly warmed up.

Now place the butter in a saucepan and heat over heat until watery. The butter must melt one hundred percent and then cool to room temperature. If we add hot oil to the dough, the eggs will curl.

Break the eggs (2 pcs.) into a wide bowl and start mixing with a mixer at medium speed.

When foam appears, add sweet sand in a narrow stream. You can place a glass of sugar next to the mixing bowl and add a tablespoon at a time so that the sugar is added evenly and does not spill out all at once.

At the end of whipping (the whole process takes me 5-8 minutes), the egg-sugar mass should look like thick snow-white foam. Looking into the bowl, it’s even hard to believe that there are yolks in it (in appearance, the mass looks as if we are going to bake meringues).

Now pour in the butter in a narrow stream (I remember that the butter must have cooled to room temperature by this time). Stir again.

The drink should be heated and cooled in advance. Add a cool drink to the dough! Yes, and hot food can cause harm because the testicles will curl. Therefore, we either take it out of the refrigerator in advance, or heat it in a saucepan on the stove (or microwave) and cool it. Pour the drink into the dough and mix lightly.

Combine all dry ingredients: flour (250 g), salt (pinch), baking powder (2 tsp) and stir with a whisk. Don't skimp on this step if you want fluffy, moderately risen muffins.

Now combine the dry ingredients with the watery ones using a spatula, trying not to lose the air in the beaten eggs with sugar. Using upward movements from below, we achieve a homogeneous dough without large lumps. The dough does not have to be completely smooth, otherwise, in attempts to achieve such uniformity, you will overwork the dough and it will lose its airiness. Now we place paper backings in the mold and pour the dough into portions. This can be done comfortably using an ice cream scoop.

Muffins are baked at 180 C for 20-25 minutes. Start checking readiness after 15 minutes (provided the caps are already browned). You can pierce the muffin in the center with a toothpick - it should come out dry. If the surface of the muffin is golden brown, springs when pressed, and there is an appetizing smell coming from the oven, the muffins are ready.

Cool the baked goods on a wire rack so that the bottom of the cakes does not accumulate moisture.

Chocolate muffins

How can you make the main recipe better?

There are many options here: add finely chopped nuts, candied fruits, a small amount of berries, raisins or other dried fruits to the finished dough. You can create chocolate muffins by adding heat-stable chocolate drops or a chocolate bar chopped with a knife. To make chocolate muffins, you can use cocoa powder (50 g), but at the same time reduce the amount of flour by 50 g. In other words, we follow the basic recipe, but make the amendments that I mentioned. I didn’t add step-by-step photos, because the manufacturing principle is similar.

Muffins with apples and cinnamon

To make the insides, cut the apples into pieces (it is better to use sour varieties), add cinnamon and mix. We put the filling into the dough made according to the main dough. Mix and place in molds.
