Prepared according to a traditional recipe, the salad consists of only 4 basic ingredients: boiled chicken fillet, canned pineapple, cheese and a small amount of mayonnaise, and comes out nourishing, juicy and very tender in taste. Having boiled the chicken fillet in advance, such a salad can be prepared and served to the table in almost a couple of minutes, which is sometimes very helpful in the ceremonial bustle.
In this recipe I will also tell you about a fascinating method of cooking chicken breast, which is worth trying for everyone for whom the juiciness and delicate taste of chicken fillet plays an important role in any dish. Shall we begin?!
To make the Ladies' Caprice salad according to the traditional recipe, you will need the ingredients indicated in the list.
Boil the chicken fillet. In order for the fillet to come out fragrant, very juicy and tender in taste, I cook it according to the method proposed at the time by Julia Child.
In accordance with this method, you need to measure 0.7-1 liter of cool water into a saucepan and add a few fragrant spices and herbs. I add 2 bay leaves, 5-6 peppercorns and the bottom of the parsley stems. There doesn’t have to be a lot of water in the pan; it should only cover the chicken fillet by a few cm.
When the water boils, you need to add chicken fillet to the pan and over low heat again bring the water to an active boil.
As soon as the water boils intensely, cover the pan with a lid, turn off the heat and leave the fillet in hot water for another 20-25 minutes.
Then the fillet can be removed onto a plate, cooled and used to make a salad or at your own discretion.
This cooking method is best suited for small or medium-sized pieces of chicken fillet (up to 300 grams). To be sure, I still boil the largest pieces of fillet in boiling water for 2-3 minutes. The method is not suitable for cooking bone-in chicken breast or poultry fillet.
Cut the chilled chicken fillet into small cubes.
Fillet boiled according to Julia Child's method will be fully cooked, but will not be completely snow-white, as it usually becomes during long-term cooking, but will retain a light, barely perceptible pinkish color.
Grate the cheese on a small grater.
Cut the canned pineapple into small pieces.
Place a layer of grated cheese in a salad bowl or serving container and brush it with a small amount of mayonnaise.
Add a layer of chicken fillet, a little more mayonnaise and, if desired, a pinch of salt and/or ground dark pepper (I only add a little salt to the layers of chicken fillet, since it was boiled in unsalted water).
Add a layer of canned pineapple and repeat layers, brushing any layer with a small amount of mayonnaise.
Sprinkle the salad with grated cheese and serve.
In a lighter version of serving, you can simply mix all the ingredients, add a little mayonnaise and season the salad to your own taste. If desired, you can also add 1 finely chopped clove of garlic.

Step 1:
Prepare your food. How to boil chicken fillet? Rinse, remove films and excess fat from the breast. Pour approximately 1.5 liters of water into a saucepan. When it boils, add salt (about 0.5 tbsp. salt) and send the meat there. For taste, you can add peppercorns (3-4 pieces) and bay leaf. Cook covered (about 20 minutes after boiling). If the fillet is simply pierced with a knife, it means it’s ready. Cool without removing from the broth so that the meat does not dry out.
Step 2:
Wash dried pitted prunes in cool water. Place in a bowl and pour boiling water over it. Let it stand for about 10 minutes, then throw it in a colander and let the water drain.
Step 3:
If the skin of new cucumbers is intact and does not taste bitter, do not cut it off. Wash the vegetables, cut into small pieces or grate into large strips using a vegetable cutter.
Step 4:
Grate the tasty hard cheese on a grater, preferably a small one, so that the layer of cheese on the salad is airy.
Step 5:
Cut the cooled chicken meat into small cubes.
Step 6:
Boil the eggs. To do this, fill them with cool water, add salt (about 1 teaspoon), bring to a boil and cook for approximately 8-10 minutes. Then drain the hot water and fill with cool water. When cool, peel the boiled eggs and chop into cubes with a knife or using a mesh. You can grate it coarsely.
Step 7:
Dry the steamed prunes with cardboard towels and cut into small pieces.

Place cooking rings or detachable sides from a cake pan on a flat dish.
