- Milk – 110 ml
- Butter - 60 g

Making muffins is quite simple. Even easier than this same cupcake. They turn out successful, plump and tasty almost all the time. And if you add berries, most often blueberries, it becomes a hit. Quite often housewives “get hooked” on this version of baking, trying all the latest and newest combinations of additives, seasonings and even decor with variations in serving. And all because one successful basic recipe allows this .
Lemon zest and vanillin, almond essence, cocoa will allow you to amaze your guests with your skill over and over again.
None of the guests will even guess that these are the same ordinary milk beauties that were served to the table last time. And lovers of cottage cheese baking will appreciate the creamy taste and extraordinary airiness of the version with the addition of cottage cheese. Nuts, raisins - anything goes! But most often these little ones contain berries. Seasonal or frozen, they are ideally mixed with the soft structure of the dough, coloring it in rich and appetizing colors. The favorite among berries is blueberries, naturally! The best baked goods are made with the freshest seasonal berries, fresh from the forest. But this time is limited to July - the season of ripening and picking blueberries, and the rest of the time they are perfectly replaced by frozen ones, since they can be stored in huge quantities.

- sugar - 2/3 cup
- butter - 125 g
- milk - 4 tbsp.
- premium wheat flour - 1.5 tbsp.
- baking powder for dough - 1 sachet
- vanillin - 1 sachet
additives:
- frozen blueberries - 6 tbsp.
How to cook
Products for making such baked goods do not need to be warmed at room temperature in advance, so we weigh and measure the required amount of goods and proceed.
Break two eggs into a saucepan and add sugar.
Melt the butter in the oven in a small suitable container.
At maximum speed, beat the sugar-egg mass with a mixer until fluffy and creamy, for 2 minutes. Cool the melted butter slightly and, continuing to beat the sugar and eggs, pour a narrow stream into the future dough.
Add flour, vanillin and baking powder, mix and then beat until smooth. Add milk in two steps, whisking until smooth each time.
The dough should be a mixture of thick sour cream. Prepare molds for portioned baking. Insert paper cups inside.
Add berries to the dough and stir quickly!
Divide the dough into the prepared pans, filling them 2/3 full, taking into account that the products will rise during baking.
Place the molds in the oven.
Bake on the middle rack of the oven for about 20 minutes.
Inspect the blush and bring it to the desired shade level. Check readiness with a wooden skewer or toothpick. Remove the molds from the oven, place the products on a wire rack and cool until warm. The most common serving option will be the same as for cupcakes.
The easiest way is to sprinkle the muffins with sweet powder. You can mix it with coconut flakes or add layers of cocoa, it will be very special and wonderful. The indicated dough size makes 12 pieces.
Chocolate options
The only difference from the basic recipe for these muffins is the addition of 2 tbsp. cocoa mixed with flour. You can also check out our selection of chocolate muffins for all occasions.
If you don't have cocoa powder on hand, don't despair! Instead, you can add 50 grams of chocolate. But in this case, it is melted together with the oil and mixed into a homogeneous emulsion. You can grate the chocolate and add it to the dough, but then it may turn out “speckled” and the chocolate outline will be uneven.
Instead, cocoa and powders are added to make a chocolate drink. Then it is also combined with flour, but since such powders contain sugar, it is reduced in the recipe itself.
With added cottage cheese
Dedicated to lovers of cottage cheese baking! Just 100 grams of homogeneous non-acidic cottage cheese added to the dough can significantly transform the taste!
If cottage cheese is added to the basic recipe, the amount of milk must be halved. And if the cottage cheese is quite wet, then add milk at the end of making the dough, one spoon at a time.
In addition to blueberries, it’s great to add a little orange zest to cottage cheese baked goods. Both the smell and the beautiful orange specks will only decorate this pastry.
Big bite: cupcake
But what can those who don’t have molds on hand, but want to try the recipe, create?
Feel free to take out the huge mold! This dough is perfect for huge berry pies.
The whole difference is that you need to pour the dough into the mold, and arrange the berries on top, say, raspberries or strawberries. The baking time will need to be increased to 30 minutes.
Remove the finished pie from the oven and cool on a wire rack. Sprinkle the still warm pie thickly with sweet powder and serve immediately! A scoop of vanilla ice cream as a serving is absolutely not forbidden.
And finally, a few more tips:
- For making muffins, it is best to use small berries: blueberries, lingonberries, strawberries, currants. The products will look beautiful and neat. For huge pies, you can use strawberries, raspberries, frozen plum halves or cherries. They will be able to highlight just the wealth and the size of the pie.
- These pastries can be decorated with whipped cream. It is necessary to use fat cream, from 33%. It is better to beat them chilled. At the end of beating, add vanillin and a little sweet powder. Such decor will look solemn.
