Baking for pleasure: 5 recipes for quick summer pies
Our beloved summer fruits and berries are one of the best creations of nature, in which the tasty and the healthy meet so successfully. This is not only a healthy treat for the whole family, but also a beautiful ingredient for home baking. If you have absolutely no desire to knead the dough for a long time, you can always resort to a proven remedy. Thanks to ready-made dough from the Siberian Gourmet and Eat at Home brands, you can bake amazing pies without much effort. The brightest juicy flavors will be added to them by quick-frozen fruits and berries from “Planet of Vitamins”. For even more branded products from Yulia Vysotskaya, see the link.
Under crimson clouds
Homemade pies with raspberries are magical and not bad. Baking them will be especially easy with the yeast puff pastry “Eat at Home” from the Siberian Gourmet. It is prepared on the basis of yeast dough with the addition of baking. The main subtlety is that in addition to margarine, butter is added to the recipe. It makes the taste of baked goods more multifaceted, saturating with pleasant creamy notes.
We slightly roll out the thawed plate of yeast dough and place it in a greased round pan, making beautiful, careful sides. Place it in the oven at 180°C for 10–15 minutes until the base is browned and crusty.
Separately beat 5 egg whites with a mixer into a stable foam. Continuing to beat, add in small portions 100 g of sweet powder, 1 tbsp. l. starch and 1 tsp. vanilla sugar. Then pour in 50 ml of olive oil in a narrow stream.
Spread the resulting thick mass in an even layer into a mold with a baked dough base.
For the inside we will take raspberries “Planet of Vitamins”. Proper freezing allowed the berries to retain their delicate texture, sweet juice and subtle aroma for which raspberries are so famous. You just need to carefully defrost them at room temperature and dry them on a cardboard towel. We drown 300 g of the freshest raspberries in the protein filling, placing the berries quite close to each other. Grind 100 g of butter, grind with 100 g of sugar, mix in 200 g of flour and grated lemon zest. Use the purchased loose crumbs to sprinkle the filling sparingly. In this form, place the pie in the oven at 180°C for half an hour.
Inventive Cherry
The desire to amuse your family with something special arises spontaneously. True, the energy and time for this are not always available. The solution is simple - prepare a clever cherry pie. For this we will need unleavened puff pastry “Siberian Gourmet”. It is prepared according to a classic recipe from natural ingredients and without any preservatives. And its main highlight is Altai butter, which imparts rich creamy notes to baked goods.
Defrost the finished dough plate at room temperature. After dusting the work surface and rolling pin with flour, roll out a rectangular layer 3–4 mm wide. Using a sharp knife, carefully cut it into strips 2–3 cm wide.
For the inside, take 300 g of Vitamin Planet cherries. Thanks to rapid freezing, the freshest natural berries retain their original taste and beneficial properties. In addition, their bones have already been carefully removed, so you don’t have to do this for a long time and painfully. Defrost the berries in advance, dry them and place them on the dough base as close to each other as possible. Lightly sprinkle the berries with sweet powder and starch. Place strips of dough on top. Cover with beaten yolk and place the pan in the oven at 200°C for 20 minutes. Before serving, sprinkle the pie with sweet powder.
Strudel in a new way
I want to amaze my visiting friends with something unusual. For example, strudel with peaches and blackberries. Here you can completely do without the capricious stretch test. It will be organically replaced by unleavened puff pastry “Siberian Gourmand”. The texture of the pie will be tender and layered, and the taste will be rich and rich.
Cut a large peach into slices and mix with 300 g of blackberries. If you can’t find the freshest berries, take frozen Vitamin Planet blackberries. Each bag contains large, juicy berries that retain not only their unique taste with rich sourness, but also their beautiful, appetizing shape. Sprinkle the peach and blackberry mix with lemon zest and pour 2 tbsp. l. lemon juice. Add 5-6 tbsp to the filling. l. sugar, 1 tbsp. l. starch, 1 tsp. cinnamon and a pinch of vanilla.
Having defrosted the plate of puff pastry, roll it out into a rectangle measuring 35 × 40 cm. We retreat approximately a third from the long edge and cut this area into strips 1 cm wide so that the fringe comes out. Place the filling on the remaining part of the dough, stepping back 1-2 cm from the edge. Roll up the roll, cover with a fringe of dough, brush with yolk and bake for 20 minutes at 200°C. Then reduce the temperature to 180 °C, pour the light jam syrup over the roll and bake for another 20 minutes. You can serve warm strudel with creamy ice cream.
Pie with vitamin treasure
Quickly baking a pie from yeast dough is easier than usual. The main secret is the yeast puff pastry “Eat at Home” from the Siberian Gourmand. Yeast has already been added to it, so you don’t have to waste time making dough and kneading the dough a couple of times. When baked in the oven, the finished dough rises rapidly, holds its shape perfectly, and comes out fluffy and soft.
All that remains is to prepare the unusual filling. For it, we will need an assortment of various fruits and berries. The “Planet of Vitamins” fruit assortment is exactly what we need. Here is a royal combination of our favorite summer gifts: strawberries, blackberries, dark currants, plums. Juicy, tasty, tender berries and fruits seem to have just been brought from the garden. Lightly knead 400 g of assorted mixture, sprinkle with lemon juice, sprinkle with 80–100 g of sugar and 1 tbsp. l. starch. Let the filling soak in the juices.
Defrost 2 sheets of yeast puff pastry. Roll one into a very narrow square layer and place it on a greased baking sheet. Distribute the berry filling moderately and fold the edges of the dough around the entire perimeter. The end result should be a square cake with sides and an open middle. Lightly roll out the second piece of dough and cut it into small decorations (stars, diamonds, hearts). Place on top, brush with yolk and bake the pie for 20–25 minutes in the oven at 180°C.
Strawberry surprise
Our culinary review would be incomplete without strawberry pie. We invite you to try a completely ordinary version. Unleavened puff pastry “Siberian Gourmet” will help to significantly speed up the manufacturing process. It will saturate the finished baked goods with creamy accents, which are in such harmony with juicy, fragrant strawberries. Thanks to the delicate flaky texture of the dough, the pie will have an appetizing crunch.
Let's get creative with classic strawberry insides. Finding truly tasty berries on the market is not so easy, even in the summer. Choose “Planet of Vitamins” strawberries and you literally won’t be disappointed. Large juicy fragrant berries will delight you with a wonderful taste and a generous bouquet of vitamins. Add juicy rhubarb stems to defrosted berries for a fascinating and organic combination. We cut 400 g of strawberries into slices, and 200 g of rhubarb into slices of the same size. Sprinkle them with 100 g of sugar, 1 tsp. cinnamon and 1 tbsp. l. starch, mix well and leave the juices to flow.
Roll out a sheet of puff pastry thinly and press into a greased rectangular pan. Line up the sides of the dough and spread the strawberry and rhubarb filling in one layer. Grind 100 g of butter, grind with 100 g of sugar, mix in 200 g of flour and grated lemon zest. Use the purchased loose crumbs to sprinkle the filling sparingly. Place the pie pan in an oven preheated to 180°C and remove after 30–40 minutes.
Everything about homemade pies with summer innards is great. Even the manufacturing process itself can bring pleasure. The main thing is to have ready-made dough from “Siberian Gourmet” and “Eat at Home” on hand. In terms of its taste, it is in no way inferior to homemade dough, and baked goods from it come out just as ruddy, airy and unique. Quick-frozen berries and fruits “Planet of Vitamins” will saturate her with a fireworks display of her favorite summer flavors. Come up with your own unexpected combinations and surprise your loved ones with brand new culinary creations.
