Remember how delicious it was to dip grandma’s pancakes in sour cream and wash them down with sweet tea? Let's not forget this taste of youth and start choosing a recipe to start baking them.

I will share recipe variations not only for ordinary pancakes, but also for dessert ones, which can be made with fruits or berries.

The pancakes should be fluffy, otherwise it will be some kind of small pancake. The splendor and fluffiness of the dough is imparted by soda, baking powder or yeast. We will use these additives in recipes.

  1. It doesn’t matter what kind of sour cream will go into the dough, if it turns out to be not very sour, then we will quench the soda with vinegar. If it has expired, then do not rush to throw away the jar, but feel free to send its contents to the mass.
  2. You can also take any fat content. Homemade sour cream, especially in the autumn-winter period, when it is the richest and thickest, can be diluted with milk or water.
  3. Before starting production, you need to remove the sour cream and eggs from the refrigerator so that they warm up. Warm ingredients make pancakes more fluffy.
  4. The sifted flour is saturated with oxygen and therefore the dough becomes more fluffy. You need to sift it at least twice, and preferably three.
  5. When kneading, it is necessary to achieve the most viscous mixture so that the crumpets do not spread or stick together in the pan.
  6. It is also necessary to leave a small space between them, so that the mass rises before your eyes.

Tip: to prevent the pancakes from being very greasy, fry them in hot oil, but over moderate heat. Otherwise, the loose dough will absorb a lot of oil from the pan.

Recipe for fluffy pancakes with sour cream without eggs

Let's start with the usual recipe, which does not include eggs. But the dough still comes out dense and airy.

We don’t extinguish the soda, so we take a little kefir, which will serve as an acidic medium for the soda.

By interacting with it, it will give a reaction, and the mass will rise.

  • 4 tbsp sugar
  • 150 g flour
  • 120 g sour cream
  • 120 g kefir
  • 0.5 l soda

Mix the drink with sour cream and soda.

Set the timer for 10 minutes, leave the soda to react with the acidic environment.

Next add sugar and salt.

Sift the flour into the dough and mix.

The mixture comes out like thick sour cream.

We start frying in bubbling oil, so the pancakes will absorb less fat, but we try to reduce the heat to medium so that the center is perfectly baked.

Dough with sour cream and yeast

If the soda dough rises in 10 minutes, then the yeast dough needs about 45 minutes. But it literally will not fall off in the pan and will not disappoint you in any way.

We use dry yeast in this recipe. But you can also take the compressed ones in a pack and dilute them earlier in warm, sweet water until completely dissolved.

  • 400 g flour
  • 1 testicle
  • 180 g sour cream
  • 200 ml milk
  • 5 tbsp. Sahara
  • 5 g yeast
  • 0.5 tsp salt
  • 2 tsp vegetable oil

Mix the dry ingredients: add yeast and salt to the flour.

Next, drive the egg into the hole and add sour cream. To make the mass move away from the pan more easily, add a couple of tablespoons of vegetable oil.

Knead until the mass is smooth, without any lumps.

Let the mixture rise for about 40 minutes. The dough rises light and porous.

Fry in hot oil, reducing heat to moderate.

We eat with pleasure.

Fluffy pancakes with bananas

Now it’s time for dessert recipes. It’s not always possible to feed our children properly, but they won’t refuse banana crumpets, check for yourself.

You shouldn’t add a lot of sugar to the mixture, otherwise the pancakes won’t be fluffy. Therefore, we add no more than 4 tablespoons of sweet sand.

  • 7 tbsp. flour
  • 3 tbsp. Sahara
  • 1 tsp quench soda with vinegar
  • 0.5 tsp salt
  • Vanilla
  • 200 g sour cream
  • 2 testicles
  • Vegetable oil
  • 2 bananas

Mix sour cream, eggs and sugar.

Pour baking soda, quenched with vinegar, into this mixture.

Add vanilla, salt and flour.

Knead the dough until it comes out elastic and smooth.

Peel the bananas and mash them into puree.

Mix with the main mixture and go bake.

You can add vanillin for scent.

How to bake apple pancakes with semolina

Another very interesting option is to use apples and replace the flour with semolina. Their taste will be more delicate.

But remember, for our idea to be a success, the semolina must swell.

  • 600 g semolina
  • Glass of sugar
  • 3 apples
  • Glass of sour cream
  • 2 testicles
  • 0.5 tsp soda
  • Vegetable oil

Add sugar, eggs, sour cream and soda to the semolina. Mix this mass well.

Set aside the dough for 15 minutes to allow the semolina to swell. Let’s start preparing the apple sauce ourselves.

Peel and grate the apples.

Combine the grated apples with the main mixture and go fry the pancakes.

The semolina crumpets fry very quickly, so I don’t recommend leaving the stove. It is also better to cover them with a lid. Turn on the heat to moderate and lightly grease the pan with oil.

Recipe for dough with sour cream and kefir

Sour cream can be diluted with kefir or sour milk. We take them out of the refrigerator in advance to keep them warm.

It is very convenient to combine the dough with a mixer or blender. This way it comes out faster and the mass is mixed more uniformly without any lumps.

  • 0.5 l kefir
  • 2 tbsp. sour cream
  • 2 cups of flour
  • 2 testicles
  • 4 tbsp. Sahara
  • 1 tsp salt
  • 1 tsp soda

Mix the drink with sour cream, eggs, use a mixer or a whisk.

Pour in soda, salt and sugar.

Next, begin to add the sifted flour evenly. You don't need a very thick mass. It must drip off the spoon.

Start baking the dough in a hot frying pan.

Fluffy and delicious pancakes with cottage cheese

Your favorite cottage cheese pancakes are prepared very simply. They are also eaten in 5 minutes.

If you have coarse cottage cheese and do not have a blender, then rub it through a sieve. This will make the pancakes more tender.

  • 400 g cottage cheese
  • 400 g sour cream
  • 1 testicle
  • 250 ml water
  • 1 tsp soda
  • 1 tsp salt
  • 4 tbsp. Sahara
  • 2 tbsp. vegetable oil
  • Orange or lemon zest
  • 25 Art. heaped spoonful of flour

Mix the cottage cheese with sour cream and water in a blender to break up most of the grains.

Beat the eggs into the curd mass and add sugar, salt and soda. Mix.

We count out the required amount of flour and turn on the blender again.

Now you can add flavorings, for example, orange zest or cinnamon.

The mass comes out compacted and homogeneous. If you have some grains of cottage cheese left, then it’s okay, they will be soft inside and will not spoil the taste.

Bake in hot oil with a lid.
